Liberty Square Cookies
These are called Liberty Square Cookies but really they are just really good chocolate chip cookies.
My roommate Stephanie and I made these every Sunday in our Liberty Square apartment #38 in Provo. WARNING, this recipe makes the best dough ever so you may not get actual chocolate chip cookies.

CHOCOLATE CHIP COOKIES
We should have called these “Date Me” cookies because we would give them to any group of guys we thought were cute. The recipe makes 6 dozen so you can cover your man bases and give a dozen to 6 of your dating prospects. If you are married you can guarantee that your husband will have mad love for you…love handles that is.
There are cookies you make because you want a chewy chocolate chip cookie. There are some when you want a soft chocolate chip cookie. Then there are some cookies, like these, that you like because they are a little of everything. Great texture, taste, and makes enough to share.

Liberty Square Cookies
Ingredients
- 1 lb unsalted butter, (4 sticks , softened)
- 2 cups brown sugar
- 1 1/2 cups sugar
- 2 Tablespoon vanilla
- 3 eggs
- 1 1/2 teaspoon salt
- 1 1/2 teaspoon baking soda
- 6 cups flour
- 12 oz semi-sweet chocolate chips, (or you can do both bags chocolate chip and don't add the butterscotch chips)
- 12 oz butterscotch chips
Instructions
- Preheat oven to 350 degrees and line cookie sheets with parchment paper.
- Cream butter, brown sugar, sugar, vanilla, and eggs until creamy. Next add in salt, baking soda, and flour; mix well. Fold in the chips.
- Bake at 350 degrees for 10-12 minutes. Do not overcook.
- I use parchment paper to make sure they don't stick. This recipe is very touchy. Follow it exactly. This is hard work for your mixer. I even had a hard time using a KitchedAid getting it all to fit. Probably would stick with a huge bowl and hand mixer. Makes 6 dozen.
I think I’ve been making these cookies every December 6 or 7 years now. They’re always a hit with kids family and friends. It has become a favorite tradition and favorite cookie for some of my kids. Thank you for sharing this gem of a recipe.

I’ve been eyeing the photo of these cookies in your header for months now and finally made them last week. They were GREAT and my kids loved them. They’re the first cookie they asked me to make more of once they were gone. (Honestly, they were gone pretty quickly.) Thanks for sharing it!

What a fun blog! These cookies look absolutely amazing! Sadly, I just got myself off the couch (to the computer) as I was eating a handful of buterscotch chips and choc. chips! I should’ve read this post FIRST!

This is such a good idea! I have a friend and she does one of these with like 5 or so of her friends. I think it is such a good way to share food ideas. I too love everything food. When we go on a vacation it is probably what I look forward to the most!!! How sad! You are cute to do this!!

CHRISTY! I love that I made it on the first post! It’s only right since I still make these cookies WAY TOO much! Plus I freeze a bag everytime I make them so I can always have a cookie when I need one! It’s a dangerous habit! But I’m so excited about your blog!

I know this sounds all psycho, but people have told me I should never use salted butter in cookies. Do I really have to buy unsalted butter just for baking? Have you ever found a difference?
The whole thing about unsalted butter is so that you can control the salt level. If you use salted butter you should cut back the amount of salt in the recipe. The only thing I really notice the difference is when making frosting. Definitely want unsalted there.
This is so sad but I actually remember those cookies and they really are yummy! Great, look what you have started. Now I am craving them and am going to have to go make them, eat 20 of them until I am so stuffed and then ask myself why I did that. These cookies are worth it though!
