Chicken, Mushroom, Broccoli, and Rice Casserole
They say your taste buds change every 7 years. I don’t know how true that is but John and I used to hate mushrooms but now we love them. Every once in a while a good casserole on Sundays is just what you need. My family loved this Chicken, Mushroom, Broccoli, and Rice Casserole – a home cooked meal that is a little of everything.

Chicken, Mushroom, Broccoli, and Rice Casserole
Ingredients
- 1 (6 ounce box) long grain & wild rice, prepared per instructions
- 1 cup of broccoli florets, (see note)
- 1 Tablespoon olive oil
- 1/2 onion, diced
- 12 ounces sliced mushrooms
- 1-2 stalks of celery, diced (about 1/3 cup)
- 2 cooked chicken breasts, cubed
- 1 (10 3/4 oz can) cream of chicken soup
- 1 (10 3/4 oz can) cream of celery soup
- 1/4 cup light mayonnaise
- Salt and pepper to taste
Instructions
- Preheat oven to 350 degrees. Prepare rice per instructions.
- Steam broccoli until fork tender.
- In a heated pan add 1/2 tablespoon oil and cook mushrooms until golden brown. Season with salt and pepper and remove from pan. Add the other 1/2 tbsp of oil to the pan and cook onions and celery until soft.
- In a large bowl, combine all ingredients and mix well.
- Put into a baking dish and heat uncovered for 30 minutes. Let cool for a few minutes prior to serving.

Great recipe as written. Used left over rotisserie chicken this time, and white pepper. Also topped it before going into the oven with 1/2 C grated sharp cheddar and a dusting of paprika. Looked and tasted delicious.
Can I use something other then the mayo? Not a huge fan.

Just made this. The only thing I did different was add a cup of lightly salted cashew pieces. It was AMAZING!!!! Better then expected!

Thank you for sharing this recipe! I prepared it today for a hearty Sunday dinner and it was a hit. I used yellow rice instead of the wild rice and decided to forego the celery and cream of celery (only used cream of chicken). Very flavorful. Thank you

Try using Cream of Mushroom and Cream of Celery instead next time, I’ve made a chicken a rice casserole with those two soups for years and its a huge family favorite.
do you cook the soup before you add it ? or just pour it straight from the can ?

I was so tired of making the same dish over and over, so I looked online for recipes, and stumbled upon this..I was leary of the amount of rice,it didnt look like enough for all of the ingredients, but eventually it evened out! I LOVED this casserole. I love the crunch of the celery and water chestnuts along with the rice, chicken and broccoli. They only thing we did differently is we topped with shredded cheddar cheese before baking. It was delish!

It looks delicious, I wonder if instead of broccoli I can add another ingredient, Im allergic to broccoli, or maybe the recipe can be made without the broccoli without adding any other ingredient.

1 cup of uncooked wild rice equals about 4 cups cooked rice. 4(ounces) of dry rice is about 1 cup so I think around 4 cups of cooked rice.
