BACON EGG CUPS
Bacon, eggs, and toast all rolled up in one convenient and cute cup. If you are watching your waistline you could even use multi-grain or wheat bread and turkey bacon.
HOW TO MAKE BACON AND EGG TOAST CUPS

Preheat the oven to 400° F. Spray large muffin pan with cooking spray.

In a frying pan, cook bacon about 3-5 minutes, until partially cooked but not completely crispy (if using precooked bacon skip this step). Transfer to a paper towel-lined plate. Cut out circles (about 3 1/2 inches) in each piece of bread using a cookie cutter or a drinking glass turned upside down.

Press the bread rounds into the greased muffin wells. Curl a piece of bacon around the periphery of each piece of bread, positioning it between the bread and the muffin tin to help keep it in position. This can be a little tricky until you get the hang of it. Sprinkle a small amount of shredded cheese in the center of each piece of bread. Crack one egg over each piece of bread being careful not to break the yolks. You may not want to use all of the egg white. If you do you may need to adjust the cooking time to a little longer.

Once all the bread pieces have been topped with eggs, bake until eggs are cooked through to your liking (about 15 minutes for me) and bacon is crispy. Run a knife around the edge of each muffin well and pop the egg cups out. Season with salt and pepper to taste and serve immediately.

- Healthier Option: Use multigrain bread and turkey bacon for a healthier twist.
Outstanding! I love another comment about using ramekins, especially for a single person. I may try some guacamole between the bread and cheese next time. Also, I used the bread edges to make croutons.

These were great and everyone raved about them. Even my oldest son who doesn’t like eggs tried one and liked it! I serve Sunday breakfast for 7 people every Sunday and wanted to try something different so made these this morning and they were easy and delicious. I lightly toasted and buttered the bread before cutting into circles with a cookie cutter (I got 2 rounds out of each slice of bread) and put in the muffin tin, sprinkled with cheese, then wrapped the bacon around the perimeter of the muffin cups with partially cooked bacon (10 pieces of bacon on a cookie sheet, DONT preheat the oven, bake400º for 10 mins (19-20 mins for fully cooked)) Cracked a large on top and baked 15 mins at 400º. They were a bit over cooked though so next time I’ll bake 12 mins and check them. Sprinkled with salt, pepper and paprika and served them. They look really fancy and anything single serve sized is always well received! Thank you for a delicious recipe!

These are mostly for looks and ease of serving…taste like you would expect from bacon and eggs. I used medium eggs which fit exactly. Couldn’t taste the cheese, perhaps I needed more. Novel idea to serve for guests.

I’ve been looking through your blog and you have a ton of great recipes on here! I don’t mean to state the obvious, but a good word is still good and compliments don’t hurt right? I tried these earlier today, and I messed up a bit at first, but I figured I would so I had double the amount of ingredients to be safe, lol. These bacon and egg toast cups were really yummy and cute once I got it right, thanks for posting them. I had never heard of them before.
I made these for the first time the other day, and I enjoyed them. They’re simple, and tasty. Today, I made them for my husband for breakfast, added more cheese, and baked them with salt and pepper – definitely made a difference, and I liked it more, when he insisted to give me a taste. (: Net time, though, I will pre-toast the upper side of the bread, to try to prevent the sogginess – my only complaint.

The bread obviously is a little wet but not soggy. Just make sure you cook them long enough.

I was gonna make them yesterday but realized I didn’t have bacon. My husband saw the picture of them, and begged me to make them this morning.
So I did, and I liked them also, although I would have like more of a creamy texture inside, maybe gravy or bechamel sauce instead of the cheese? But my husband loved them!

How adorable! I love bite-sized breakfast items. As much as I love a gigantic stack of pancakes, I love being able to try a little bit of lots of different things, and this would be great for a family holiday breakfast with some french toast sticks, and hash browns!
