Lemon Drop Cookies
Marco Island – March 2011 |
I’ve had these bookmarked forever. I saw them over at See Jane Cook and something about the texture of the cookies had me hooked. They are a chewy lemon cookie with crushed lemon drops in the cookie! Don’t try to substitute butter in this recipe. Trust me. I tried. They still tasted great but were flat as could be. I’ve made these three times in the last week so I guess that tells you how much I liked them.
Lemon Drop Cookies
Ingredients
- 2 cups sugar
- 1 1/2 cups butter flavored shortening
- 3 eggs
- 2 teaspoons vanilla
- 1 teaspoon lemon extract
- 4 cups flour
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- Finely chopped zest of one lemon
- 1 6-oz package lemon drops
Glaze:
- 2 cups powdered sugar
- juice of two lemons, about 4-5 Tablespoons (I use less because I like my glaze a little thicker)
Instructions
- Preheat oven to 350 degrees. In mixing bowl, cream sugar, shortening, and eggs; add vanilla and lemon extract. Stir in flour, baking soda, baking powder, and salt. Crush lemon drops in blender or food processor. Add lemon zest and crushed lemon drops. Roll into balls, flatten slightly with your hand, and bake on a parchment lined cookie sheet (You must use parchment here to avoid sticking).
- Bake for 10 to 12 minutes. Let cool slightly on pan for a couple of minutes. Make the glaze by mixing powdered sugar with lemon juice to desired consistency. Brush glaze over cookie tops after cookies have cooled slightly. If the cookies are too hot the glaze will just melt off. Let cookies cool completely.
Why does recipe say it takes 21 hours to prep? Does dough need to chill or something? Very excited to make these, my dad LOVES lemon cookies👍😍
No sorry. THere’s a bug in the recipe card. I’ll fix it.
Coming back for the third Christmas for your lemon drop cookie recipe. I follow your instructions exactly. They are loved by many, and I have had many requests for the recipe. Thank You!
Yay!
Just made these and used butter. It works just fine, you just need to bake at a lower temperature
Nice for good sound.
Sugar Free Lemon Drops Candy
I made these for a family vacation- I am a die hard chocolate lover and my husband a snicker doodle lover- we now have a new favorite- stayed soft for days! Thanks for sharing!
I made these last week and they were great! They remind me of the lemon chip cookies from King Soopers when I was a kid. You’ll have to try one the next time you are in CO.
I looked all over town for lemon drops. Then my brother told me to go to a drug store because they are “old people candy”. He was right!
I must admit that lemons and chocolate usually run neck and neck with me.
These. Are. To. Die. For!!!!
I’m so gald I found you, chicken gyros are next.
thanks for responding. I didn’t use butter, I heeded your counsel on the shortening. 🙂 my soda was new, but I am wondering how old my baking powder is? Oh well I am trying them again easter sunday. Yum yum
Argh! I haven’t popped in for a little bit… and there are so many goodies, I just hardly know where to start! These sound like they’d be great to bake and share with co-workers and a friend who lost her husband a few months ago. Thanks, Christy!
Ohhh my! These sound heavenly!
Bookmarked to try! xo
Hey Christy~
LOVE, LOVE, LOVE your blog! You have such yummy looking and tasting recipes on here! And I love the picture of little Mr. W, he is so stinkin’ cute. Now I’m officially a follower of your awesome blog! Take care lady!
@Heather,
Not sure why they were so flat. The first two times I tried them using all butter, then partial butter and they were really flat. Is your baking powder old maybe?
Did you use partial butter?
Christy
any suggestions as to why my cookies weren’t as fluffy as yours? Mine were flat and a little crispy…They also really spread out during baking. I couldn’t put a full dozen on my pan. They were however still a crowd pleaser and super yummy. Thanks again for yet another amazing recipe!!
What a fun cookie!
I love everything lemon and these look delicious. And cute. That’s important too 😉

OK going to find lemon drop candies tomorrow…if kids weren’t on their way to bed I’d be going out tonight! YUM!!
I love your blog, I use your recipes probably every week but have never posted. I made these yesterday and they were wonderful! (they did turn out a little flat, but that’s okay 🙂 As for finding lemon drops, I couldn’t find mine at the grocery store, but did find them at the gas station 🙂
These look and sound super tasty. I love lemon drops!
I love lemon. Seriously, it’s one of the only things I crave when I’m pregnant. I’ll have to remember these cookies.
These sound great, I love lemon! Will add them to my make list.
These just sound amazing!! unfortunately i am the only lemon person in the house!! maybe i will make a few just for myself :D. Loads of love for spring !!
@tease-spoon of sugar,
Oh no! My Publix grocery store always has them and so does my SuperTarget. Shoot.
I went to 2 stores today looking for lemon drop candies…no luck! Total bummer cause after looking at your picture, I’m craving these cookies.
These look fabulous! I adore anything lemon. I made lemon sugar cookies about a year ago, but I love the idea of a version with lemon drops in them!

I would love to make those! Lemon drops used to be my favorites candies (aside from chocolate that is)but I can never find them any more. All I ever see are those Lemon Head things. =(
oooooh so tasty, fresh and PERFECT for spring. Why is it that lemon is simply BETTER in the springtime!?!?
I also found this recipe from See Jane Cook and my 12 year old daughter made them for a baking competition! She won first place, with over 30 entries to compete against!
They are so delicious and such a crowd pleaser!!!
My family vacations in Marco Island every year — my parents and brother were there in March as well! Love it there…
Awesome pictures! When I was pregnant I craved lemons and lemon drop candies all the time, these would have hit the spot.
