Strawberry Stuffed French Toast

STUFFED FRENCH TOAST
John and I were home one Saturday night and nothing was on T.V. so we happened to be watching Throwdown with Bobby Flay about the best French toast. John said you gotta try that recipe! I tried to replicate La Isla’s famous French toast but the recipe called for a bunch of hard to find ingredients.
So I ended up changing the recipe into something entirely different starting with my classic French toast recipe but still keeping the idea but with simple ingredients. This easy recipe sooo good and with Mother’s Day coming up I think it would be for special occasions like that. Cream cheese and fresh berries. You can’t go wrong.
HOW TO MAKE THIS STUFFED FRENCH TOAST RECIPE

For the filling: In a small bowl, combine the softened cream cheese, sugar, and chopped strawberries.

Gently spoon 1/6 of the creamy strawberry filling on one slice of bread and top with another slice. Repeat with remaining bread. Refrigerate the prepared bread slices while you prepare the batter. This helps the filling stay firm.

For the egg batter, add the eggs, milk, vanilla, ground cinnamon and a pinch of salt to a large shallow bowl and mix well. Set aside.

In a large nonstick skillet, melt butter over medium heat. While butter is melting, dip a few pieces of bread (how ever many slices of bread you can fit in your skillet) in the egg mixture for 3 seconds per side. Place in the skillet and cook for 2-3 minutes per side in the melted butter until golden brown. Wipe out skillet in between batches if necessary.

Keep warm in the oven on a cookie sheet at 200 degrees F. until ready to serve. Serve warm with your favorite toppings like butter, maple syrup, fruit, whipped cream, or powdered sugar.
MAKING BIG BATCHES
If you’re making in batches, keep the toast warm on a pan in the oven at 200 degrees.

Ingredients
- 12 slices thick slices Brioche challah, French bread, or Italian bread
Filling:
- 8 ounces cream cheese, softened
- 1/2 cup diced strawberries, (plus more for serving)
- 2 tablespoons white sugar
Egg Batter:
- 4 large eggs
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- pinch salt
Optional Toppings:
- butter, maple syrup, powdered sugar, whipped cream, and sliced strawberries
- butter for cooking
Instructions

- Gently spoon 1/6 of the cream cheese mixture on one slice of bread and top with another slice. Repeat with remaining bread. Refrigerate the prepared bread slices while you prepare the batter. This helps the filling stay firm.

Thanks for sharing this recipe. I used your French toast recipe and Paula Deen’s strawberry syrup recipe and they went well together. I did find that the egg batter portion was a big excessive though. I only made half of it and still had leftover.

I made this after watching the show and we also had to improvise due to the lack of access to his ingredients. Strawberries worked just fine! I went to our favorite bread store, Great Harvest Bread Co, and purchased their cinnamon chip bread and a box of super crispy cereal from Trader Joes, without nuts due to my daughter having a nut allergy. And it was fabulous! And I am not a big fan of a sweet breakfast!
I tried to make a version of this once, but my bread didn’t hold up=( It was wayyy messy. Yours looks so put together and beautiful. I love the almonds on the outside!

Curse you skin issues!!!! Because of my 5 month old’s skin issues I’m not able to eat ANYTHING (I’m nursing). These french toasties look so good and I’m kind of getting cranky because I can’t eat them….Maybe spending $300.00 on formula isn’t such a bad idea.

Have you ever tried Body Glide when running? I have problems with my clothes rubbing as well and it is a great solution.
