Fried Ice Cream without frying with only 5 ingredients! Cornflakes, butter, cinnamon, sugar, and ice cream are all you need to make this classic Mexican dessert without all the oil! This easy dessert has the taste of fried ice cream balls by using crunchy cereal.

FRIED ICE CREAM RECIPE
HOW TO MAKE FRIED ICE CREAM
First, you want to place your scoops of ice cream in a muffin tin and freeze it so that it’s easy to roll. If you line a cupcake/muffin tin with plastic wrap it makes for easy freezing and even easier removal.
Next, crush your cornflakes with a food processor or in a Ziploc bag with a rolling pin until you have fine crumbs. Melt butter in a pan and add the crushed cornflakes.
Top with your favorite toppings like chocolate syrup, whipped cream, sprinkles, honey, or maraschino cherries! You can use caramel sauce if you like.

No-Fry Fried Ice Cream
Ingredients
- vanilla ice cream
- 5 cups Cornflakes cereal
- 1/2 cup butter
- 2 teaspoons cinnamon
- 2 tablespoons sugar
- (optional) chocolate sauce
Instructions
- Scoop ice cream into 2 1/2 inch scoops and freeze until hard. An easy way to do this is to line a cupcake pan with plastic wrap and place the scoops in the tin.
- Crush the cornflakes with a food processor or in a Ziploc bag.
- In a medium skillet, melt the butter. Add the cornflakes and cinnamon and cook for a couple of minutes. This blooms the cinnamon and makes the flavor come out.
- Remove from heat and stir in the sugar. Let mixture cool completely.
- When ice cream is hard, roll in the cornflake mixture. Top with chocolate sauce, whipped cream, and a cherry if desired.
Overall, a good concept of Fried IC, however, I had a difficult time getting the crushed corn flakes to stick to the IC Ball. Maybe allow the IC to set a few minutes to avoid it from being so hard from the freezing process. I did use Choc. syrup, a shot of Whipped Cream and a Cherry. Was good in the end.

Delish! This time tho the cereal coating is very chewy (like wet cardboard) and tough. Any ideas of what I did wrong?

I did things a bit differently. I formed the balls the day before, working with 4 balls at a time. I scooped with a large cookie scoop, placing each ball on a piece of plastic wrap which I used to refine the shape of the balls and encase them fully before popping into muffin tins that were already in the freezer. Once frozen solid, I dumped all into the empty cereal bag for storage. Just before dessert we cooked the crumb topping (using Cinnamon Toast Crunch cereal and butter) and moved the crumbs to a deep bowl. One person unwrapped the balls (and reshaped a bit as needed) and another immediately coated them so the crust was warm, handing the bowl off so each person could then add their choice of toppings. It took only a few minutes to have 8 people all at the table. There were leftover crumbs so will cut down to 5 cups/6Tbs butter in the future.
Everyone loved them and commented on the crispness of the crumbs and the temperature contrast. We’ve already decided to do chocolate ice cream with a peanut butter cereal coating (and mini Reese’s as one of the toppings) next time!

I used a blueberry almond crunch cereal with about half the amount of butter and low fat frozen yogurt.
Drizzled with a homemade fat free hot fudge, a sprinkle of cinnamon, and powdered sugar. It was so divine. 😀

Wow! What an easy way to make fried ice cream!!! I can’t wait to try this. A local Mexican restaurant used cinnamon ice cream and then drizzled honey over the finished dessert (before adding lots of fresh whipped cream, of course) and it was incredible. That could be a way to switch up the flavors. Thanks for sharing this recipe!

This is a great idea… no mess and definitely less fat without the need for oil! It’s weird, and I don’t know if this is an Australian thing only, but I’m used to fried ice cream being sold at Chinese restaurants rather than Mexican. I just googled some images of ‘Mexican fried ice cream’ and it looks exactly the same as the ones I’ve been eating at my local Chinese since I was a little girl! Now I’m curious as to who had the idea first! 🙂

I combine the cereals and sugar with your hands, breaking up the cereal into small crumbs. Place the scoops of ice cream into the crumb mixture and coat thoroughly, squeezing the crumbs down into the surface of the ice cream firmly. Place on dessert plate, garnish with caramel sauce and berries, and serve.
