Peanut Butter Oatmeal Chocolate Chip Cookies
These Peanut Butter Oatmeal Chocolate Chip Cookies have oatmeal, peanut butter, and chocolate chips which makes for some yummy dough. Soft centers with crispy edges.

PEANUT BUTTER COOKIES
People always ask how I find time to bake with five kids. I think we all find time for the things we love whether it be reading, running, or Pinterest :). Baking is therapeutic to me. It relaxes me and it’s something my kids and I can do together.
Sunday nights always draw me into the kitchen begging me to make some cookies. Usually it’s these cookies but last night I needed peanut butter and chocolate. Peanut butter and chocolate are like my own personal Xanax.
HOW TO MAKE THESE
INSTRUCTIONS
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside.
- Whisk together the flour, baking soda and salt; set aside.
- On medium speed, cream together the butter, peanut butter, granulated sugar, brown sugar and vanilla extract, about 3 minutes. Add the egg and beat to combine. On low speed, gradually add the flour until just combined. Stir in the oats, and then the chocolate chips.
- Use a large cookie scoop (3 tablespoons) and drop dough onto prepared baking sheets about 2 inches apart. Bake for 9-10 minutes, or until the cookies are lightly golden. Cool completely on the baking sheet and then store in an airtight container at room temperature. Makes 16 cookies.

Oh my goodness…I just made a double batch of thes cookies and they are phenomenal! We like our cookiesslightly under baked and super soft, and these came out great. Thank you for a wonderful recipe that will definitely be a repeat for my hubs.❤️

I have made these 5 times in the last few months since finding this recipe. They are D to the Lish!!!! My husband and I fight over them. I’ve doubled the batch and frozen some and they have been amazing every time. They are my new go-to cookie recipe and since they are so simple I am sure they will be popping up in our house all too often! Thank you for this amazing cookie recipe. I really like that it makes a relatively small batch so I’m not sitting there cooking cookies all day and also not eating 5 million of them. I am not exaggerating when i say that my husband ate 6 this evening. I won’t share how many I ate… 😉

My 9 year old son had some friends spend the night last night and I made these cookies for their dessert. I had some mini M&Ms leftover so used half a cup M&Ms and half a cup choc chips just for some color and fun. The boys loved them and one asked me to teach his mom how to make them 🙂 These are definitely a new family favorite! I made these cookies yesterday and wanted to let you know that they are awesome. With a regular, small cookie scoop, I stretched the dough to 27 cookies. They were crispy on the outside and soft in the middle. This one went on a recipe card — a keeper.
I have 3 kiddos all super close in age and your words remind me SO much of myself 🙂 Now that they’re all in school I’m finding that life is becoming a “different” kind of busy! I’ll always find time to do the things I love: baking, running, pinterest :)…that’s what keeps us mommies going, right??

Here’s a tip to make them even more soft and moist…
Add 3/4 package of a vanilla pudding mix, to the flour mixture.

i have 5 kids so i completely understand.. i love it when people ask that dumb question of do u have help at home.. r u kidding me..cookies and brownies are my antidepressant along with my treadmill and a dr. pepper.. u can make it.. like u said sometimes it is taking it day at a time or sometimes even a min or hour at a time.. sometimes all u can do is just breath..
