EASY ICE CREAM SANDWICH CAKE RECIPE
My son’s birthday is at the end of July and every year on his birthday it seems like we’re on vacation in a location where a birthday cake is hard to make.
On his first birthday, we were literally camping in the middle of nowhere so we made him a pyramid cake out of Twinkies.
This year I told him I would bake him any cake for his birthday party he wanted and I pulled up Pinterest so that he could pick one out. He picked this one made from store-bought ingredients. I’m pretty sure it was the M&Ms on top of the cake that got him.
One of the easiest cakes with simple ingredients. You basically layer ice cream sandwiches with tub of Cool Whip layered in between then top with your favorite toppings.
I know it’s not rocket science…and not actually baking, but it sure makes the kids ooh and ahh. It’s a huge hit. They don’t care if it takes minutes or hours to make. And since it’s the last day of National Ice Cream Month, here is the perfect summer dessert.
Layer your ice cream sandwiches in a single layer with a thick layer of whipped topping. From here you can sprinkle on any candy bars, Oreo cookies, or chocolate you like. My son wanted M&Ms but if it were my choice I would sprinkle some chopped Reese’s peanut butter cups.
I like to drizzle some hot fudge sauce / chocolate syrup in between layers too but you could also use caramel sauce.
Any flavor of ice cream sandwiches work here. You could use Neapolitan ice cream sandwiches or chocolate ice cream sandwiches.

Ice Cream Sandwich Cake
Ingredients
- 15 ice cream sandwiches
- 1 (12 ounce) container frozen Cool Whip, thawed
- 1 (10 ounce) bag M&M's (or chocolate candy of your choice)
- fudge topping
Instructions
- Place 5 ice cream sandwiches, long sides touching on a flat serving plate or a baking dish. Spread an even layer of whipped topping over the top, making sure the whipped topping extends to outside edges for the best appearance.
- Sprinkle 1/3 cup candy pieces on whipped cream and drizzle with some fudge topping.
- Repeat layers twice with remaining sandwiches.
- Freeze 3 hours or until firm. Cut with serrated knife.
I haven’t tried this one yet. But for decades I have done something similiar to this. I layer 4 and remove 3 tops in the center and replace with strawberries and/or cherries and/or raspberries and/or blueberries and/or bananas. The 3 tops I put in my toaster oven, once cooled down I crush them then add them back in those layers. Put back in freezer for an hour. Then when I take it out I add whipcream drizzle chocolate and add crushed almonds.
Ooh I like that version!

Delicious! If you’d like to dress it up a bit, just line a large loaf pan with wax or parchment paper — leave ample overhang. Make your cake layers by assembling it backwards (upside down) and freeze. This method prevents the whipped cream from oozing beyond the sandwiches and keeps it level. When ready to eat, pull the cake out of the pan by the paper overhang and place on a serving plate. Drizzle and sprinkle any final condiments and VOILA! 🙂

I really want to try these but I live in south africa…so have never heard of ice cream sandwhiches or frozen cool whip? Is that by any chance just normal frozen whipped cream?

It’s a version of frozen whipped cream. You could use regular whipped cream here too!
Wow, what a great idea…………only thing I would do different is slice each ice cream sandwich into 1/3’s before adding goodies.. Seems it would be hard to cut thru all the cookies with out messing the cake up!

you can make ice cream sandwiches. Look for a recipe . I have one in one of my taste at home cook books. Im sure you could find one on line. good luck. also use resses pieces, as my grandson loves peanut butter
I made this cake for my nephew’s birthday and it was a hit. The only complaint I received was why I only made one 🙂
I also added cream cheese to the cool whip so the icing was thicker. I live on an island so you can relate how humidity can kill your dessert.

I saw this and wanted to try it. Made it last week but only a few changes. It was the biggest hit. I added a box of Jello Oreo instent pudding to the cool whip to make oreo cool whip and used Heath instead of the M&M’s. And I covered the whole cake with the oreo cream. It was SOOO Delisios. Amazing how simple and fast it takes to make and turns out so great.
For being so easy this sure is a fun cake!
I made this for my husband’s birthday and left it in the freezer over night. It was amazing! Hit of the night! And so GOOD!

Great minds think alike, it just so happens that I just made this “cake”! Your picture is so much prettier than the one I may post some day! I love the M & M’s (I used Crunch bars) and I added caramel simply because I’m a caramel lover! I love this dessert, it’s easy, it’s delicious and I don’t know anyone who doesn’t love it!

I had to laugh because I make this too, although bigger 😉 I use caramel sauce instead of chocolate and Skor or Crispy Crunch…oh, but the m&m’s look yummy! This is always a hit!
