MONSTER MAGIC COOKIE BARS

Every hurricane season in Florida we wait with baited breath, hoping and praying that this isn’t the year that a big one hits us. When I first moved here I thought, “Why do people live here?” Coming from the West, I always felt safe.

Seven years ago we were hit by Hurricane Katrina and Hurricane Rita and were without power for a week. My husband and I spent our nights in the dark playing cards via candlelight, each with one headphone in our ear listening to the updates of recovery progress. But the pros of living here outweighed the cons.

Last weekend tropical storm Isaac hit us and as with the first storm of every year, the shelves of the stores were bare with water and gas at an ultimate demand. We stocked up years ago so the only things I was short on were baby food and ketchup. A shortage of ketchup would be a MAJOR emergency in my house. Major.

We spent the weekend moving everything inside and school was cancelled for my kids. Luckily the storm fizzled and unimpressively danced its way across us, pouring down rain and flooding the streets. But we’re seasoned enough to know that it definitely won’t be the last storm this year.

 

These Monster Magic Cookie bars were a dose of much needed sanity after 3 days of being confined indoors.

Traditional Magic Cookie Bars are one of my favorites. How can you go wrong with a buttery graham cracker crust? I assume it’s a recipe everyone has but if for some reason you don’t, I’ll be happy to send it to you. This is a Monster Cookie twist on those bars filled with oats, peanut butter, and M&Ms.

Monster cookies are a "kitchen sink" of the cookie world. Take all your mix-ins and make the yummiest cookies - but I've made it even easier by pressing them into cookie bars.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup salted butter, see Note
  • 1 14 ounce can sweetened condensed milk
  • 3/4 cups old fashioned oats
  • 1/2 cup peanut butter chips
  • 1/2 chocolate chips
  • 1/2 cup mini M&Ms, or regular

Instructions
 

  • Note: You can use unsalted butter here but with all the sweetness in the recipe it really is good to have to salt to counteract it. So if you use unsalted butter, you can either add 1/4 teaspoon salt to the graham cracker crumbs or sprinkle salt on top after the bars have baked.
  • Preheat oven to 350 degrees. Place butter in a microwave safe bowl and heat up for about 30-60 seconds or until melted.
  • Combine butter and graham cracker crumbs in a medium bowl and then press the graham cracker crumbs into a parchment lined 9x13 baking dish that has been sprayed with cooking spray.
  • Evenly pour the sweetened condensed milk over the graham cracker layer. Sprinkle the oats, peanut butter chips, chocolate chips, and M&Ms evenly over the sweetened condensed milk and gently press in a little. Remember that all of the toppings are approximate so add more or less depending on what you like.
  • Bake at 350º for 20-25 minutes or until brown. Cool and slice into squares to serve.
