Mini Italian Meatloaves
These Mini Italian Meatloaves are little Italian meatloaves made in a muffin tin for conveniece. Eat them as an appetizer or for dinner!
Doc says I’m borderline anemic despite all of the prenatal vitamins I’m taking. It makes sense because all I pin on Pinterest these days is meat and it’s a rare moment that you see me without a cup of ice in my hand, crunching away.
I’ve become somewhat of an ice connoisseur. I know which restaurants carry the good stuff. You know it’s serious when I would take a cup of stellar ice over a warm chocolate chip cookie.
And it also explains why I’m posting meatloaves in the middle of a blazing hot summer.
My friend Marty sent me this meatloaf recipe and it’s super simple and just what I was craving. We actually didn’t eat meatloaf growing up but I loved these!

MINI ITALIAN MEATLOAVES
These mini Italian meatloaves are moist and full of flavor. Sorry I hate that word – moist. They bake up nice and neatly in a muffin pan.
If those weren’t mini enough for you, I made an even smaller version in a mini muffin pan. My kids went gaga for these and they were small enough for me to commit to at least four of them.
I made the Italian version here but you could definitely make them plain with a dollop of ketchup on top. If you love these, you’ll love this meatloaf recipe.

Mini Italian Meatloaves
Ingredients
- 1 pound lean ground beef
- 1 pkg., 6 oz. STOVE TOP Stuffing Mix
- 1 Tablespoon Worcestershire sauce
- 1 teaspoon Italian seasonings
- 1 cup water
- 3/4 cup spaghetti sauce
- 3/4 cup mozzarella cheese
Instructions
- Preheat oven to 375 degrees. Mix meat, stuffing mix, Worcestershire, Italian seasoning, and water and until well blended. Press into 12 muffin cups (or 24 mini muffin cups) sprayed with cooking spray.
- Make an indentation in center of each meatloaf with the back of a spoon; fill evenly with the spaghetti sauce.
- Bake for 30 minutes (around 15 minutes if using a mini muffin pan) or until meatloaves are done. Top evenly with the mozzarella cheese. Bake 3-5 more minutes or until cheese is melted. Let meatloaves sit a couple of minutes before removing.

I love this idea, but I’m trying to avoid processed foods. Do you have any ideas about a copycat stovetop stuffing recipe, or could I possibly just substitute seasoned bread crumbs?

I was searching for a dinner idea for a house full of men and children and stumbled on your site. 🙂 This was a hit all around. I doubled the recipe so I’d be sure to have leftovers for another meal later. But that’s not gonna happen. The guys keep grabbing them cold out of the fridge!

Those look so delicious- and I’m *not* a fan of meatloaf! As for your Anemia- have you tried Green Smoothies? Just grab your blender, throw a cup or two of spinach/kale, apple, blueberries, and ice in (and whatever else sounds good to you), grind until smooth, and enjoy! It cools me off, and helps keep anemia at bay! I’m pregnant with #8, and I try to have one daily. It has helped so much! Plus, it’s a quick and easy way to get in some leafy greens and fruit, when all I’m craving is French fries and ice cream. 🙂

When I was pregnant with my youngest I was borderline anemic and chewed on ice constantly. I would go through the drive through and order a cheeseburger and a cup of ice. Now my baby is 18 and I am still chomping ice. It has become an addiction and like you, I know where to go to get the best ice. I’m glad to see I’m not the only ice craver out there! 😉

I love mini everything. These looks so easy to put together. It is summer but I will take a quick meal any day.
Those look so good! I’m not usually a meatloaf fan, but these little ones look great! I especially like the idea of spaghetti or marinara sauce instead of the grossness that is ketchup.

You have pica which you may already know. You might consider speaking with your doctor, he/she may want to increase your iron. Pica is hard to explain to other people if you have never experienced it. Not only did I constantly chew ice when pregnant I actually salivated from the smell of Comet. Which is totally bizarre , and no I never actually ate the Comet or put it in my mouth. Just one of the weird side effects of being pregnant.
I totally crave Lemon Lysol wipes with every pregnancy. Yep. It’s pica alright.
