I’m not particular about much but I am when it comes to my bed sheets. We have amazingly soft sheets made from Bamboo that we bought while we were in Key West for our ten year anniversary.
Every night I have a ritual of checking my sheets before I go to bed. They have to be tightly tucked in and proportionate to my side versus my husband’s.
If they happened to come untucked in the middle of the night I immediately hop out of bed and make the adjustments.
The other night my husband came in to bed right after me and was startled to see that the sheets were untucked, sideways, and completely disheveled.
“Uh…what’s going on here?” he said in astonishment. “Do you realize the sheets are…”
“I don’t even care“, I mumbled. “I’m so tired.”
And then my husband tried to find a corner of the sheet he could call his for the night.
Have you ever been so exhausted the room was spinning? The lack of sleep was catching up to me.
But then the most amazing thing happened. My newborn baby slept for seven hours. Seven.
I had dreams. Crazy, nonsensical dreams. Oh, how I had missed dreaming. I couldn’t remember the last time I had a dream.
There’s light at the end of the tunnel.
To top it off my boys came down with a bug. I’ll save you the gritty details but it hasn’t been pretty. I’ve been feeding them a lot of chicken noodle soup and made these biscuits to go with it.
There are only 3 ingredients in these biscuits which made me skeptical but the taste surprisingly good. You know I love these Cheddar Bay Biscuits but I literally had them in the oven in under 5 minutes. So easy and will be my go-to in the future.
They have a soft buttery inside and the sour cream gives them such a unique flavor. They are wonderful warm.
Just pop them in the microwave for 10 seconds if you don’t eat them right away. I think they would be great with any add ins like cheese and bacon.
Sour Cream Mini Biscuits

Ingredients
- 1 cup butter, softened
- 1 cup sour cream
- 2 cups self-rising flour, (see Notes for substitute)
Instructions
- Preheat oven to 450 degrees and grease a miniature muffin pan.
- With a mixer, blend the butter, sour cream, and flour until well combined. The dough may seem dry but will come together after mixed well.
- Roll a rounded tablespoon of dough into a ball and then place it in the muffin tin.
- Bake for 10-12 minutes or until golden brown.

Made these last night! Recipe I had was 1/2 therefore only made 6 nice sized biscuits. Very, very good fast and easy! Didn’t have sour cream so used plain Greek yogurt. All I know they were excellent with honey. Will definitely make again very soon.

Try tossing them in grated Parmesan cheese while still warm. Marvelous !

Yesterday I tried 2 batches… 1 sour cream 14% & 1 Blueberry Pomagranite (sp) Yogurt 1.5% they both turned out excellent and both we distinctively different.
My husband described the sour cream one as slightly salty but very pleasant, the Yogurt as a little sweet but equally delicious; then he put the together like a sandwich and said they went neutral…lol
if yogurt works…(to which I think it would) your limits are endless…. Vanilla, Blueberry, strawberry, mixed Berry mango…..oh wow….Cottage Cheese & Pineapple!

These look so good! I’m a sucker for any kind of biscuit and can easily eat 20 (okay, maybe not THAT many but a lot). And, I came across bamboo sheets for the first time a few months ago on vacation and I fell in love with them. I could not believe how soft they are!

oh girl…I SO feel you on the sleep. Lucy and I were up last night from 3 -5 am …and then I could never get back to sleep, so here I am. Makes you feel like a crazy person!! These biscuits are exactly what i need right now…simple and full of carbs 🙂

I’m a little weird with my sheets too. When I get in bed, they have to be absolutely flat (no wrinkles under me) and the edge of the sheet folded perfectly over the comforter so I don’t feel it on my chin. I’t good to hear that someone else has a quirk like me. 🙂 Looking at those biscuits, I’d guess that they got the boys back on their feet right away. I do hope they’re better!

Oh my gosh!!! I am the exact same way about my bed sheets (and I can’t believe I am admitting this). It drives my husband absolutely bonkers!! I can’t sleep if the sheets are not just right so like you I have gotten out of bed at like 2 in the morning to fix the sheets so I can fall back to sleep. I hear you on the whole losing sleep after a newborn. I always feel like a walking zombie for the first three months! Congrats on getting her to sleep for 7 hours, that is truly amazing!!!!!!
So, did you wake up panicked that she didn’t wake up earlier?! I spent a night sleeping on the floor next to the crib the first night mine went more than 4 hours. She slept beautifully though 🙂
Biscuits look yummy. Do you think yogurt could be subbed successfully? I have no issues with sour cream…but I always have Greek yogurt on hand.

Yes. I thought she wasn’t okay so I kept checking on her. I definitely think yogurt could be substituted for the sour cream. Yogurt has a little bit more of a bitter taste.
