Carrot Cake Truffles
Carrot Cake Truffles are made from just a few ingredients: a cake mix, cream cheese, and almond bark. This dessert is like little bites of carrot cake.

CARROT CAKE BALLS
My kids are obsessed with the cake balls from Starbucks. When I showed them how easy it was to make them at home they were amazed. These are a little twist on those. An Easter version if you will. The kids love these too!
INGREDIENTS
- CARROT CAKE MIX – You can use any carrot cake mix you like. Duncan Hines or Betty Crocker are my favorites.
- CREAM CHEESE – This is what holds the truffles together.
- ALMOND BARK OR VANILLA CANDY COATING – You could use white chocolate with coconut oil as well but in my experience it does not melt as well as almond bark or candy coating like Candiquik.
HOW TO MAKE CARROT CAKE TRUFFLES
INSTRUCTIONS

Make carrot cake according to package instructions. Cool.

Crumble cake into a large bowl. Add the cream cheese and mix with a mixer or by hand until cream cheese is completely combined.

Roll mixture into 1-inch balls and place on a baking sheet. Freeze for at least 30 minutes before dipping.

Melt almond bark or candy coating according to instructions on package. Take a truffle with a fork and dip it, shaking the excess off and returning to the baking sheet until set. Repeat with all the truffles. Drizzle remaining almond bark on top of the truffles and top with carrot cake crumbs if desired. Store in the fridge or freezer.

- 1 (16 ounce) package almond bark or vanilla candy coating like Candiquik
