Toasted Coconut Cookie Dough Bites
These Toasted Coconut Cookie Dough Bites are delicious and super easy! The cookie dough balls have mini chocolate chips and toffee bits inside and are rolled in toasted coconut.

When I was little (around 6) my sister Susan, who was 10 years older, would use me as an accessory to everything she did. If she wanted to deliver treats to a guy she liked, guess who walked them up to his front door? Me. If she needed someone to go shopping with? Me. If she needed someone to demonstrate a haircut on for school, the lucky hair model? Me.
It worked out for both of us. She needed me and I felt needed.
And good thing I was a sport because she wasn’t even a hairdresser. She was just kind of winging it. Maybe I can blame her for my hideous hair in my elementary school pictures.
You NEED these Toasted Coconut Cookie Dough bites. My 3-year-old daughter has been extremely needy and whiny lately. I’m new to this girl thing so I’m hoping it’s a phase but part of me is terrified that it’s not. Please send help. Anyway, she really, really (insert whiny voice here) wanted to make a treat before her nap and luckily I had everything to throw these together. They are amazing.I know coconut is polarizing to some but seriously…I love these.
Toasted Coconut Cookie Dough Bites
Ingredients
- 1/2 cup butter, softened
- 3/4 cup firmly packed brown sugar
- 1 (14-ounce) can sweetened condensed milk
- 1 teaspoon vanilla extract
- 2 cups flour
- 1/2 cup miniature semisweet chocolate morsels
- 3/4 cup toffee bits
- 3 cups toasted shredded coconut, (see Note for how to toast coconut)
Instructions
- Line a rimmed baking tray with parchment paper or foil.
- Beat butter and brown sugar at medium speed until fluffy in a large bowl. Add in the condensed milk and vanilla. Beat until smooth. Gradually incorporate the flour, continuing to beat until combined. Stir in the mini chocolate chips and toffee bits.
- Shape the dough into 1-inch balls. You can chill the dough for a couple of minutes to make this easier or coat your hands with cooking spray so they don't stick to the dough. Roll balls in toasted coconut and place on prepared baking sheet.
- Chill for at least 2 hours. Keep stored in an airtight container in the refrigerator.
You can always use coconut flour or almond meal flour if you are worried about the regular flour.

Makes about 3 dozen and can be kept in an airtight container for 3 days.

Sweet Moses, these look amazing! I’m picturing a platter of them, each stuck with a toothpick, at the next party I go to. Like a cheese plate but way better 🙂 do you think that would work, or are they too heavy for toothpicks?
Just roll them on the smaller side and toothpicks will totally work!

These look so good, way better than the plain cookie dough bites. As for your three year old being whiny it will hopefully lighten up! I have 5 girls and 1 boy (poor soul) and they all have their moments but they do go through a stage when they whine almost non stop it feels like! My almost 3 year old is going through it right now and I feel she has been the worst so far. It can be sorta trying some days!! Great Job!!

You’re not alone! After 3 boys we had our daughter. All my boys were pretty mellow at 3 but my daughter has been really needy and whiny. I just have to remind myself it might all change once she’s a teenager. She is also my only kid who I almost wish I could put s bell on because she gets out of bed like a ninja. Recipe looks great as always.

I thought this too, about the uncooked flour. I’m not so sure, although they look delicious!! And I’ve never made a bad recipe from Christy. They have all been delicious. Even when they had ingredients I wasn’t used to eating. : ) Since it’s from her, I probably will try it. My hub loves coconut. : )

Uncooked flour is totally a personal thing. It’s personal taste and I have several recipes that have it in it as well as other bloggers. If you feel like it’s not for you that’s okay.
I just thought of this. You know, one of my personal favorites is chocolate chip cookie dough, unbaked. This may be similar but with toffee bits and lovely coconut. I’m thinking this will be a winner!!
