STRAWBERRY CHEESECAKE BISCUIT WAFFLES
I have the best intentions on Father’s Day and it never pans out. I told you in my last post about ordering family pictures too big for my wall. What I didn’t mention is that I failed on another gift – a tackle box. My husband hinted that he needed a new fishing tackle box and so we Amazon-Primed one. It arrived and was enormous. It is literally the size of a piano bench – I can barely lift it. It will definitely fit his 10 lures along with room for about 458769 more.
A couple of years ago I attempted to make my husband’s favorite dessert, strawberry shortcake, for Father’s Day. It was a disaster. The biscuit tasted like drywall. So were you hoping this recipe was my perfected strawberry shortcake? I wish it was. Unfortunately I’ve completely given up on that one.
These Strawberry Cheesecake Biscuit Waffles are delicious. You would think after making over 150 waffles last week for a church event I would be waffled out. These are more dessert-like than waffle-like. They are their own unique entity. Layers of lemon cream cheese and strawberries inside of warm waffles. And so easy! Watch the video I made at the bottom to see.In a small bowl, mash together strawberries and a little sugar to make your strawberry sauce.The cream cheese mixture has lemon zest, lemon juice, and a little sugar to sweeten it.
The video below shows just how to make these but you basically flatten biscuits with your hand, place some diced strawberries and some of the cream cheese mixture in between two biscuits. Cook in the waffle iron until done. Serve with strawberry sauce and more of the Lemon Cream Cheese mixture.
Strawberry Cheesecake Biscuit Waffles
Ingredients
- 2 cups strawberries, divided, hulled and chopped coarsely
- 1 Tablespoon sugar
Lemon Cream Cheese:
- 1 (8 oz) package cream cheese, softened
- 1/4 cup sugar
- 1 teaspoon lemon zest
- 1 Tablespoon lemon juice
- 1 (7.5 oz) package Pillsbury refrigerated biscuits (10-count)
Instructions
- To make the strawberry sauce, place 1 cup of strawberries and 1 Tablespoon of sugar in a bowl. Mash together until a sauce forms. Chill in the fridge until ready to serve.
- In a separate bowl, add the cream cheese, 1/4 cup sugar, lemon zest, and lemon juice. Mix together well.
- Heat a waffle iron. Flatten biscuits in the palm of your hand. Place about 1 tablespoon of lemon cream cheese and a few strawberries in between two biscuits and lightly seal the edges. Cook in the waffle iron until biscuits are golden brown. You may be able to fit a couple at a time.
- Top with more Lemon Cream Cheese mixture and drizzle with strawberry sauce.
