Frito Corn Salad
This Frito Corn Salad recipe is filled with corn, peppers, onion, and crushed Fritos. The perfect side dish for BBQs and potlucks that screams splurge and game time! Use Chili Cheese Fritos for some extra spice.

FRITO CORN SALAD
I made this Frito Corn Salad years ago but couldn’t bring myself to post it because I felt like I would get hate mail.
I get angry emails for using a can of condensed soup so making a “salad” out of Fritos – yeah, I didn’t think that would go over to well.
But guess what? It’s good and if you’re not a fan, I’ll have a healthy recipe for you tomorrow. Or you can try this Corn, Tomato, and Avocado Salad.
Oh wait. Maybe next week? Umm…nevermind. Maybe this isn’t the site for you. Now that we’ve cleared the air, let’s get to the Frito Corn Salad.
This salad is pretty simple: corn, peppers, onion, and mayo. I used canned corn here but you could definitely used frozen corn thawed or fresh. If you want to add some color use red and green pepper.
It’s very important to not add the crushed Fritos until right before serving because you want them nice and crunchy. Eat this with a spoon or use it as a dip!

Frito Corn Salad
Ingredients
- 2 (15 ounce) cans whole kernel corn, drained
- 2 cups grated cheddar cheese
- 1 cup mayonnaise
- 1 cup green pepper, chopped
- 1/2 cup red onion, diced finely
- 1 (10 1/2 ounce) bag coarsely crushed regular Fritos corn chips , or Fritos chili cheese corn chips
- Fritos Scoops for serving
Instructions
- Mix first 5 ingredients and chill. Stir in corn chips just before serving. You may not want to add all of the corn chips. Add a little at a time. Some people prefer to just serve the Fritos on the side or crumbled on top. You can eat this with a spoon or as a dip with Fritos Scoops for serving.
Notes
How long can this be stored for in the refrigerator before it goes bad?
I would say 3 days.
Mayo and corn, with anything else, is always good. Fritos for the crunch is good too. I’ve made the deconstructed Mexican street corn salad many times. I like to grill the corn and when it’s available and cheap, extra ears on the barbecue can be converted to a wonderful salad like the one above.

Who cares about healthy when it is this good 😊. Best chilled for a while and put the Frito crumbs on right before serving! One of the family said it was for the children and I said oh hell no 😁.

Don’t walk, RUN to the store now to but these ingredients. It is absolutely delicious and a hit every time it is served. Wonderful as is it spice it up or add things to make it more your own. So delicious and thank you does hating this and so many wonderful recipes

I LOVED how you “apologized” practically through the entire recipe. And I would have done the same. But two Sundays ago, someone brought this to our church Potluck, and the bowl was cleaned-out! She had apparently made this dish several times, and apologized herself! I will tell her secret; regular fritoes and taco seasoning. Personally I cannot wait to make this with chili fritoes (and Dukes!)

YEs. It’s definitely very tart with that substitution though.

I made this for my sister’s birthday party, but I grilled whole ears of corn and scraped it off the cob for another layer of flavor. I also made a separate batch with chopped jalapeno peppers for a more spicy version for my bro in law who is Mexican. It was a huge hit!

I don’t do much cooking, so this might be mentioned somewhere and I overlooked it. How man servings does this recipe make? Taking it to a work potluck so I’m trying to gauge how much to make.

I made this a few weeks ago and thought it was pretty good. Husband and daughter liked it but I thought it was a little bland. I made it again today and added about a half cup of salsa in with the mayonnaise. The salsa gave it a little zip and made it a really flavorful delicious salad!

Yes, you are right. “Gifted” classes are made for parents, not kids. Better schools don’t even use that designation but rather depend on amazing classroom teachers to meet their students’ needs where they are. Differentiation in the classroom setting with rich and rigorous curriculum, opportunities for teamwork and collaboration, plus project-based learning will give your “gifted” baby a better education.

I had to comment (I usually don’t but LOVE your recipes- and your sense of humor!) when I read this- your child recognized as gifted, but out in la-la land… yes!! Mine too!! I always thought the definition of a “gifted” child was one of those kids you see playing a concerto on a piano without music, or a violin virtuoso at age 4. Certainly not MY kid, who couldn’t even be bribed monetarily to finish his homework!! And yet, that’s what they said. Fast forward to now- he’s 38, one of my greatest joys, and a true pleasure to be around! Funny, articulate, passionate, and yeah okay, smart too. Who’d have thought it??? Not me!!

I love this salad! Had to tell you that I, literally laughed out loud at two of your comments in this post. The first was about the lady trying to beg extra homework for her child. Give me a break! And the second was your comment about getting “hate” mail for using canned soup. I know, right? I mean, come on. We all make the Campbell’s Soup casseroles on a busy night now and again. Anyone who doesn’t should just let their cook or housekeeper read blogs for recipes. Geesh!

I am so totally in love with salads made with corn! I’ve taken to putting grilled corn in my regular green salads too- just love that little burst/crunch you get when you bite a corn kernel! So, yes, I’m going to make this and revel in the crunchy sweetness! And scooping it up with Fritos? Um, yes please!! Thank you for sharing this one!
As far as those competitive parents go? Holy cow, don’t they amaze you?!! Just have to make sure everyone knows THEIR child is the only gift mankind will need in the future!! I was like you back in that day, try and smother a laugh and make sure they don’t see the big eye-roll going on!! sounds terrific, I like the idea of a little crunch with the corn – I think any kind of tortilla/ corn/ whatever-chip would work. If someone has a nice crisp chip they think is healthier than the Frito, then use it and stop complaining. I like someone’s suggestion of a little BBQ with it. Thanks for a great website.

Since the first time I tried this “salad” many years ago, it has been on my mind almost constantly. Especially at this time of year when the corn is still so good. It’s yummy if you mix a little BBQ sauce with the mayo. I use the chili cheese variety of Fritos or nacho cheese flavored Doritos. Drooling just thinking about it. Yum!

I just can’t get my head around that thought process… “I don’t think I’ll personally like this recipe that someone has created and posted online for free so I can make it at my leisure, so I should probably email the author something rude to let her know how I feel…”
Weird people aside, I think this salad looks amazing. I love “salads” like this. They go along with the strawberry/pretzel variety, and the snickers/apple kind too. Mmm, salad.
