GREEN SAUCE RECIPE
I love when people send me recipes. As unhealthy as it may sound, food really does make me happy. Really good food puts me in a really good mood. So when people send me their stellar recipes, it makes my day.
I got an email from a reader, Amanda M., who said this Green Sauce was the bomb. I was a little confused at first. A sauce? Do I drizzle it over a burrito or eat it like a dip? Yes and yes. She said that there’s a restaurant in Texas, Casa Ole, that is known for the green sauce. Yet one more reason I was meant to be a Texan. It might look plain to the eye but it’s packed with flavor and makes a ton.

Green Sauce
Ingredients
- 4 ripe avocados
- 16 ounces sour cream
- 1 (10 ounce can) Rotel diced tomatoes, undrained
- 1 (4 ounce can) green chiles, undrained
- 3 ounces cream cheese
- 1 Tablespoon of garlic powder
- 2 teaspoons salt
- 1 teaspoon lemon juice
Instructions
- Place all of the ingredients in the blender and process until smooth. Chill in the refrigerator until serving.
- Serve with chips. This is also a great topping for burritos, tacos, and enchiladas.
I have made this recipe & similar for 30 years but they never turn out the pretty green of Casa Ole. Today more orangey than usual but tastes great!
I lived in Pasadena, Texas for 39 years. There is a Mexican restaurant there called Donkeys on spencer. I have been trying to get the recipe for their green sauce for years. If anyone knows it please shareÂ
It was called “The Don-Key” and I would pay to have the recipe for that sauce. I can still feel the uneven floor beneath my feet.
There is also a East Texas restaurant that has an even better version of this. Jalapeno tree is a chain around Tyler and Kilgore, Tx that has become very popular mostly because the Casa Ole chains have all closed here. It is a thinner tomatillo based sauce

You forgot about the cilantro
Nope. There isn’t any in this recipe.
This is a different kind of sauce than cheuys. No cilantro, but its better i swear!!
How long will this dip stay good in the frig?
As long as you keep it airtight it is good for a couple of days at least.
I make this green sauce, or similar, all the time. Along with my killer salsa. My question is, can green sauce be frozen? It doesn’t last as Long as the red, due to the avocados.Â
I haven’t tried to freeze it so unfortunately I don’t know.
I was taught a recipe from a 80 year old mexican friend and you came the closest. The I ingredients. Are 4 avocado 2 bunches green onions lemon juice from 1 lemon garlic powder. Crushed red peppers. 1 pkg cream cheese all done in blender until creamy and water added to make smooth. Has to sit in refrigerator at least a hour to determined the heat. This recipe is over 75 years old from Mexico and was done in a mourter. This recipe was used to support her family and making her own cream cheese it it is as authentic as it gets. This recipe is well over 100 being I am now over 60 and learned it when I was about 10 years old. It was also sent for the solders to make in Vietnam. It has quite a history.

Yes what Candace has is the recipe. I have the casa ole tinted out paper if this. I had to move to az 18 yrs ago and was a regular so the manager gave me the recipe😊. Does definitely need to be broke down to smaller portion.
She’s missing onion powder and lime juice
Candace I tried your recipe a few days ago and it was close, but something is missing. It was bland. I even only put 6oz of sour cream. I’m thinking maybe green chili’s, or onion powder, or maybe pickled jalapenos?
I used to work at casa ole about 16 years ago and I had to make this sauce in 5 gallon buckets, trust me this is not even close it’s actually much easier than this…I can downsize the recipe for you

Texas born and raised in South Texas in the Lower Rio Grande Valley – now living in Lubbock, Texas for the last 25 years! Other than authentic Mexican Food (namely our own), Casa Ole is our go-to spot for Mexican Food.

Sooo tasty. It was kind of difficult to get the indegriends here in germany (at least for my hometown) but in the end this sauce was lovely to some chips. Used it for some potatoes the other day, too 🙂

When we moved to Mississippi from Texas 16 years ago we had to find a recipe. This is the one we found and it has hung on our refrigerator ever since then. We like to make it when we have company and serve a burrito/taco buffet. It is always a big hit.
I’m pretty sure I would put this on all the things.
In this part of the world, Phils., we utilize & serve avocados with milk, sugar & crushed ice. Some sort of dessert. Weird? Had seen lots of food makers use avocados for salad etc. but I just glanced and pass mind.

As someone who was an assistant manager at the original case ole in good ole Pasadena tx , this is close. Only modification I would noted for this size batch add 4 pickled jalepenos and a table spoon onion powder. Have to let it chill at least 4 hours for the favors to melt together, casa ole never used green sauce the same day unless they were completely out because the longer you leave it the better it taste. Also have to use daisy sour cream as others don’t taste quiet right.

I live in Texas and our family likes to eat at Casa Ole. When asked, we were told that the green sauce was NOT made of avocado at all but something else completely. They wouldn’t elaborate of course :/
Some add tomatillo. I have made a lot of versions with tomatillo and never came close to casa ole flavor. I am going to try this today and am guessing it will be on point.

I do live in TX and ate at Casa Ole last Sunday. My 18 month old tried it for the first time, and liked it so much she dunked her paci in it! I’m anxious to see if this really tastes the same.
