Lasagna Soup
This easy Lasagna Soup recipe is one of my favorite soups! Imagine a soup with beef, garlic, onion, and tomato sauce with tender lasagna noodles throughout. The ricotta cheese topping is what makes this soup taste exactly like lasagna. Stir it in for lasagna in a bowl! Healthy too. Only 322 calories per serving…

LASAGNA SOUP RECIPE
It’s not that often that I get really excited to share soup (except this one).
Of course the chocolate and peanut butter desserts always get all of the attention and if I could feed my family on those desserts alone I would.
But apparently that’s frowned upon so I’m always searching for dinner ideas.
I’ve made this easy soup three times to get it just right. I’m telling you my kids licked their bowls. Even my 2-year-old. The whole family loves it.
The base of this delicious lasagna soup is made from tomato paste, diced tomatoes, and tomato sauce in a large pot. You could use crushed tomatoes if that’s what you have.
The coolest part about this lasagna soup is that you boil it all in one pot! I’m all about making your life easier.
Take regular lasagna noodles and break them into pieces. You want to break it into smaller pieces, about 1-1.5 inch pieces and toss them in the soup pot.
Remember they will expand when you cook them. To be honest, you could use any type of pasta.
Then dump them in and cook over medium heat.
Ten minutes later, it’s time to eat.
But you must top it with this ricotta/Parmesan mixture. It’s the lasagna in this Lasagna Soup.
Y’all. Pictures don’t do this bowl of soup justice. It’s sooooo good with rich tomato broth and tender noodles. It’s like traditional lasagna but in soup form.
Top with fresh parsley or basil. Serve with garlic bread.
WHY USE A DUTCH OVEN FOR LASAGNA SOUP
I prefer to use a Dutch oven over a stock pot when making Lasagna Soup because it’s deep enough to hold all of my ingredients without feeling too high and the ceramic material ensures there’s even heating throughout.
You can also use a Dutch oven in the oven for other recipes, making it super versatile! I like this one from Calphalon because it’s high quality and less expensive than Staub or Le Creuset.

Lasagna Soup
Ingredients
- 1 pound lean ground beef, (Italian sausage can be used)
- 1 cup diced onion
- 3 garlic cloves, minced
- 2 (14.5 ounce) cans diced tomatoes, undrained
- 1 (8 ounce) can tomato sauce
- 1/4 cup tomato paste
- 4 cups (32 ounces) low sodium beef broth , (chicken broth can be substituted)
- 2 teaspoons Italian seasoning
- 6 uncooked lasagna noodles, broken into 1 1/2 inch pieces (about 6-8 ounces; see Note)
Cheese Topping:
- 8 ounces 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
Equipment
Instructions
- In a large Dutch oven or saucepan, brown beef and onion over medium-high heat. Add the garlic and cook for about 30-60 seconds. Drain.
- Stir in the diced tomatoes, tomato sauce, tomato paste, beef broth, and Italian seasonings. Bring mixture to a boil and stir in lasagna pieces. Reduce heat slightly and cook for about 10 minutes or until noodles are tender. Season with salt and pepper to taste.
- For the Cheese Topping: In a small bowl, mixture together the ricotta, Parmesan, and salt.
- To serve, spoon soup in a bowl and top with a dollop of the cheese mixture. Garnish with chopped parsley or fresh basil if desired. To eat, stir in cheese mixtures and enjoy! Store leftovers in an airtight container in the fridge.
Notes
Also, if you are making ahead of time it would be a good idea to boil the lasagna noodles separately and then add them before eating. The lasagna noodles really soak up the liquid if they sit in the soup for a while. You can add some beef broth if you need to thin it out.
This is my second time making this and I am improvising. I’ve blended ground beef and turkey sausage. Omitted the tomato paste and used jarred marinara. We like chunky, so we added mushrooms and tomatoes from our garden. 6 cheese Italian blend with the ricotta. Simmered in my crock pot for 4 hours and then added precooked noodles. So YUMMY!!!
Thank you!
What a fabulous recipe! Made it wit ground turkey and turned out perfectly…husband from the other room “this is awesome..make it part of the rotation!” – thanks for a keeper!!
Thank you!
Could I make the sauce ahead, then before serving bring it to a boil and cook the noodles in the sauce?
YEs!
Used veggie broth, left the meat out and added julliened carrots (at the beginning) and chopped fresh spinach (at the end). Kids liked it, will make again. Possible word of caution… my husband bought the oven ready lasagna and I feel like it took a lot longer to cook than anticipated? I have no idea if that made a difference or not. I have never quite understood how the oven ready stuff is supposed to work but both times I have tried using it in actual lagasna it seemed like it didn’t get soft enough. But I didn’t think to tell my husband to try to get normal lasagna if they had it. I will have to try again with regular lasagana next time and see if it makes a difference. Very flexible recipe, depending on if you like meat or veggies.
My friend and I just loved it! So easy and so delicious! Thank you!
Thank you!
Great recipe! I loved that it was quick & easy to make.
My variation used turkey meat & chicken broth. I didn’t have a can of tomato sauce, but did use one 6 0z can of tomato paste and it tasted delicious! I’m vege conscious so I slipped in some cauliflower while using only 4 lasagna noodles. One of those nights where I was just making do with what I had available and it worked out well.
Thanks for sharing!
Thank you!
I am certainly going to try this recipe soon. It looks delicious. I think I’ll put the servings in ovenproof bowls, put the cheese on top, and run them under the broiler for a minute or so. I’ll take a picture!
Thank you!
Excellent recipe! Love the chunky tomatoes! I used lasagna casserole noodles I found at Winco which worked just as well. I also added a side of steamed broccoli. I have so much leftover, I now have meal prep for the week. Thank you for sharing!
Yum!
How about posting the recipe????? Why wouldn’t you put that in the post???????????? Worthless
It’s there. Read the post before trolling comment sections.
It’s literally in the article. 😒🤦🏽♂️
Maybe i missed it. Why not put the ricotta and parm in when making the soup?
It kind of disappears. If you add it in the end it’s better trust me
I was lucky enough to stumble across this recipe. We are making it tonight for the second time, due to my son’s request! First time, I omitted the tomato paste and added extra tomato sauce. Also, I forgot to get beef broth and used chicken broth instead. Tonight, we are making it as written. However, I am allowing the soup to simmer for 40 min, with a bay leaf, before I turn up the heat and add the noodles. I just know it will be even more delicious than the first time. Thank you for this recipe!
You’re welcome!
Delicious! The topping takes it over the top!
Thanks!
Simply delicious. I added Italian Pork Sausages, & by accident I opened the Chicken Broth, instead of the Beef, but then I noticed you said either would be fine. Thank you for sharing your recipe. I wish I could’ve uploaded a picture of the finished product for you to see.
Thank you!
Found this recipe via some IG reels of similar recipes and this one didn’t disappoint.
I followed the recipe with only a few substitutions– my sister doesn’t like onion so I used leek, I didn’t have tomato paste so I omitted, and I added the ricotta and parm directly to the finished soup and pre-made it for the week (the noodles didn’t absorb the sauce/broth that much). This is hearty and rich, but delicious!
Thank you!
Epic. Great recipe. Batch #2 coming tonight.
Thank you!
This looks so good! Could you substitute Italian sausage for the ground beef? I do that in a lot of my recipes as I have a picky daughter who despises ground beef and ground Turkey. Thanks!
that would be amazing!
Hi!! Would these be good with ground chicken (we don’t eat red meat). Thanks! I love all of your recipes and have made them for years!
Yes, that would work!
This soup was amazing, easy to make, and the one pot made clean up a breeze. Will be saving this recipe for future use. Thanks for the recipe 🙂
I saw someone on IG make lasagna soup about a month ago and have been wanting to try it. I found this recipe and like how easy it appeared. I made it for dinner tonight and it was a hit! My very picky 6 year, that eats 3 bites and is done, ate 2 bowls. I was shocked. The store didn’t have regular lasagna noodles so I had to use the ready to bake ones. They worked out just fine. I honestly wouldn’t change a thing about this recipe. My 12 year old asked me to make sure I printed it and put it in my recipe book, which I did! Thank you for such a great and easy new family favorite.
I overlooked the rating so I’m giving it the 5 stars it deserves in the reply
Thank you!
A great compliment. Thank you!
HI, I’m new to your sight. I did not see a Nutrition chart. I need to know the sodium level per serving. On a restricted diet.
Your recipe looks and sounds wonderful. Had a dear friend in Minnesota who prepared a Lasagna Soup. Unfortunately, never got her recipe. It was delicious! Thanks for sharing.
It’s at the bottom of the recipe card. It says SODIUM: 964mg but that will vary greatly with the brands you use so I would suggest using MyFitnessPal.
If you are still looking for ways to keep your sodium low, try making your own chicken stock. Mark Bittman’s quick chicken stock recipe is super quick and easy. I make mine without salt then salt portions to taste as needed when cooking. Muir Glen also makes no salt added diced tomatoes and tomato sauce, unsure about the tomato paste. I also like to cook with Diamond Crystal Brand Kosher Salt as it is super flavorful, but contains less sodium then table salt. I find myself needing less salt.
is there a way to make this without the chunky tomatoes? maybe add more sauce or paste? got alot of picky eaters (myself included)
I used a jar of pasta sauce in place of the canned tomatoes and blended it first so there are no tomato chunks, we have the same problem in our house!
I’m not a fan of big tomato chunks myself although I have gotten less adverse to them as I have gotten older. I like my spaghetti sauce to be smooth and will blenderize it if needed (although I prefer del grosso brand for lack of chunks). In other things, I usually I use petite diced or crushed and that’s smooth enough for me… if all I have are big chunk tomotoes I throw them in the blender.
I feel like subbing sauce or paste for the chunks would result in too thick of a broth but whizzing the tomatoes smaller works great.
How much is a serving?
It’s hard to tell. I just divide the whole recipe by 6. About 1.25 cups.
This was delicious and perfect for our cold bitter nights dinner. It was super easy to make. I did add fresh basil to the top of the cheese topping which was pretty but also an addition I wouldn’t do without. It added a great fresh flavor. Also- I used ground turkey instead of ground beef and my hubby never knew! Add a salad and/or calzone and it would make a perfect meal to bring to someone!
So good to hear!
Omg delicious and now I make it twice a week ty
SO good!! I was going to make lasagna and stumbled across this recipe and gave it a try! It was delicious and fast – so much faster than traditional lasagna with all the same amazing flavors! Adding to our recipe rotation!! Thank you so much, Christy!
This soup was delicious. The cheese really set it off. I will be recommending this to my friends.
Thanks!
Is there anything i can use to substitute for ricotta cheese? The kids do not like it and I would love to make this recipe
Ricotta is kind of an essential to lasagna but you could use cream cheese or sour cream.
Fresh mozzarella or Barrotta cheese I think could be a great substitute!
Cottage cheese can be used i place of Ricotta 😊
The easiest best soup ever! Will be enjoying it frequently.
Thank you!
Easy to make. Delicious! Family of picky eaters want it added to our recipe list.
Awesome to hear that!
Christy! This is so good!
I used ground turkey so I threw in some extra garlic cloves (I don’t really like turkey). Even my non soup eating family loved it.
Every recipe of yours I make is always a hit and always delicious! Thank you!
Thank you Janie. That means a lot to me!
I was really disappointed in this soup 🙁
I saw this recipe and couldn’t wait to try it. It looks so good and sounds good but we did not think it tasted good at all. It was edible but far from good. I wasted a lot of food unfortunately.
Well that is unfortunate to hear. We we love it.
This soup is so amazing that I’ll probably never go back to the baked lasagna. The reader who did not like it must have left something out. Thanks
Brilliant soup! <3 Absolutely delicious!
Thank you!
This stuff is great!!
Thank you!
Passionate!!
How could you adapt this to a slow cooker?
I’m sure you could but I have not tried it.
Yummy recipe, and really easy to make! Next time I’ll add veggies like zucchini, peas, or spinach. I love veggie lasagna so it makes sense I’d like veggie lasagna soup 🙂
That would be great!
I won’t be making a mistake by telling you how surprise i was visiting this blog of such cool info plus quality photos backup. This must have taken much of your time putting together!
Thank you!
That’s looks like so Yummy !
Thank you!
Thanks for sharing the recipe! My kids love Lasagna so I think they will love this lasagna soup as well! Gotta try it at home.
I think they’ll love it.
Hello, this looks really good and since you said we must use the BelGioioso ricotta cheese I wanted to ask where you buy it. I didn’t see anywhere on their website indicating a “where to buy” section. I am in San Diego
You’re totally right. They don’t sell it online. I would check your local grocery store. You can use other ricotta but I do prefer BelGioioso.
Could I sub cottage cheese for ricotta?
Sure! Ricotta has a distinct lasagna taste so I definitely prefer it.
Single dad, I made this soup for me and my daughter. Dope! She was really impressed. Thank you so much.
You’re welcome Tommy!! Glad you loved it!
look like beef curry….. amazing soup i ever seen i my life :v
Thank you!
hey girl this looks awesome!
Thanks Shawnna!
I am definitely making this soup. It is lower in sodium than most I have seen. Thanks for adding the
nutrition it really helps when you have certain restrictions.
You’re welcome!
Okay I have seen (and made) quite a few lasagna soup but this one totally wins. Ricotta parmesan topping??? YUS.
Yes! It makes the soup!
