CONFETTI BACON HASHBROWN CASSEROLE
My husband and I are last second people. We buy our airplane tickets a few weeks before, we study for tests the night before, and we pack our suitcases an hour before we leave.
This year we decided we wanted to be ahead of the Christmas game so we ordered our Christmas cards in November. We usually give our friends that live far away treats so my husband jumped online on Black Friday and got that taken care of.
And guess what? It has totally backfired. The day after Black Friday the company we used for the our Christmas cookies announced Free Shipping for all orders which when you’re sending to 15 people adds up super quickly. The day after that they announced a sale on all orders.
What really made us mad is when our “Christmas Cookies” showed up on our friends doorsteps and were actually leftover dried out Thanksgiving cookies with sugar cookie turkeys and all. So yeah, so far…the being ahead of thing hasn’t worked out for us.
The thing is we do always get a good deal on flights, we usually do well on our tests because it’s fresh in our minds and we don’t own enough clothes to pack far in advance anyway.
We’ll just do us from now on…
HASHBROWN CASSEROLE RECIPE
I’m really excited to share this cheesy potato casserole. I know that’s quite the name but there are so many breakfast casseroles out there that it needs distinction.
I’m very picky about breakfast casseroles. The egg to potato ration has to be right. We love Martha’s Breakfast Casserole but this one is a little more dressed up and has bacon instead of sausage. It has become a family favorite!
I added a can of chopped green chiles for a little spice but not too much (my kids will still eat this). The cottage cheese completely disappears in this. I say that because I am not a fan of cottage cheese and would never eat this if I saw it hanging out.
The best part about this side dish is that it can totally be made ahead of time which is a major bonus. Look how beautiful those colors are. I’ve already planned this for my Christmas morning breakfast.
HOW TO MAKE THIS HASHBROWN CASSEROLE:

Preheat the oven to 350 degrees and grease a 9×13 baking dish.

In a large bowl, add the hash browns, cottage cheese, eggs, cheddar and Swiss cheese, green chiles, 1/2 of the bacon, 1/2 of the red bell pepper, and 1/2 of the green onions (reserve the rest for the top). Stir together well and pour into the prepared casserole dish.

Sprinkle with remaining bacon and bell pepper. Cover with foil and bake for 60 minutes. Uncover and bake for an additional 10 minutes or until potatoes are done. Remove from oven and sprinkle with remaining green onions. Cut into squares and serve.

Ingredients
- 4 cups frozen shredded hash browns, thawed
- 1 1/2 cups ( 4%) cottage cheese
- 6 eggs, beaten
- 2 cups shredded cheddar cheese
- 1 1/4 cups (5 ounces) shredded Swiss cheese
- 1 (4 ounce) can diced green chiles
- 12 ounces bacon, cooked and crumbled, (about 12 slices)
- 1 small red bell pepper, seeded and diced
- 3 green onions, chopped
Instructions
- Preheat the oven to 350 and grease a 9x13 baking dish.

You could reheat at 350 for 30 minutes
So much flavor!!! Yum. Plus, I love how easy it was to throw together in the morning before work and school. When I got home I cooked up the bacon, tossed it into the 13×9, and cooked the dish to perfection. Everyone begged for more.

I loved this when I saw. I used a little less cottage cheese. Added some longhorn cheese because it’s gooey. I used a green bell pepper and subbed salsa instead of the chilies. I also baked it in a Bundt cake pan!

Yes, I’ve found it’s best to freeze up to three months. It’s good in the fridge for about 3-5 days.
I WISH I could post a picture! My family loved it! The only difference I made (more like mistake 😅) was that I used crumble eggs (then added cottage cheese bc, why not?) instead of only whole eggs. Still loving it!

Bake it longer! It will disappear.
This was scrumptious. I would add more potatoes next time. I added a Serrano pepper and substituted very small orange and red peppers. I used thick bacon which seemed more like ham. Will use thin next time. Very attractive and would be a total hit for brunch or pot luck.

No! If you cook it long enough it should absolutely not be crunchy.
Just saw this recipe while browsing. I see “cook time is 50 minutes “. The instruction number 3 says “bake covered for 60 minutes….uncover & bake for additional 10 minutes or golden brown”. It should be 1 hour & 10 minutes, not 50 minutes. Is this a typo error or not? Just wanted to make sure about this baking time. This recipe sounds fabulous and easy which I’ll make it soon!! Please let me know.

Looking for a hash brown recipe to have the family tomorrow for a Father’s Day brunch. I came upon yours and decided to try it. To make it ahead, I guess you would cook it and then heat it up when you want to serve it OR make it and leave uncooked until ready to serve? Just wondering which way to go. Thanks so much, Janet
You can do it either way. I usually make it ahead of time and then cook when ready.
Can I double this recipe and it fit into a 9/13 In. tin pan?
You would need another 9×13 pan if doubled.
I love this dish, it’s my 3rd time to use it. I’m having friends for breakfast at 7.30 am so I can prepare it the night before . It’s cheerful on the table and everyone loves it.

I used a bag of hash browns , 2 cups of chopped ham, 3 1/2 cups of Monterey Jack, a chopped onion, a chopped bell pepper, a can of Green chili and tomatos. A dozen eggs mixed with a cup of milk, salt and pepper poured over potatoes and veggies in a 9x 13 greased dish covered with aluminum foil for 1 1/2 hrs. at 350 degrees or until middle of casserole is firm, remove foil, top with pepper jack cheese slices until melted. add salsa on the side. It’s delicious.

This is my “go to” breakfast casserole. It is especially great for Christmas morning. It is so festive looking and can be prepped the night before (adding the reserved bacon and red pepper right before popping in the oven). It bubbles away while the presents are opened and then the family has a delicious breakfast. Thank you!

Yes, absolutely!
What other cheese do you recommend besides cottage cheese?
It disappears I promise. If you must sub something ricotta or greek yogurt are a common substitute for cottage cheese but I have no idea what the final result would be.
Do you think it would get gross if I prepared it the night before but stuck it in the fridge and baked it the next morning?
Not at all. I’ve totally done that.
