Avocado Cucumber Salad
This healthy Avocado Cucumber Salad has a citrus dressing with cilantro and garlic. This salad is a great side dish to any meal!

AVOCADO CUCUMBER SALAD
We’ve joined the masses in the eating healthy movement that always accompanies the New Year. So far we’ve had Spaghetti Squash spaghetti, naked burgers with grilled veggies, and Taco Stuffed Peppers.
Is it bad that I’m over it? We eat pretty dang healthy in general but I don’t mind a treat here and there. So this all or nothing approach has me wanting to rebel and dive face first into a bowl of cookie dough.
You know how they say chocolate is a mood elevator? Well, avocados do the same thing for me.
As long as I can throw some avocado on top of an omelet, toast, or in a salad…I’m happy.
This cucumber salad is light, tangy and a beautiful monochromatic dish.
HOW TO PICK AN AVOCADO

Ingredients
- 2 cucumber, seeded and cubed, (see note)
- 2 firm but ripe avocados, cubed
- 1/4 cup chopped fresh cilantro
- 1 clove garlic, minced
- 2 tablespoons minced green onion , or sliced red onion
- 1/4 teaspoon salt
- pepper to taste
- 1 tablespoon lemon juice
- 2 tablespoons lime juice
Instructions
- In a large bowl, combine cucumbers, avocados, and cilantro.
- In a small bowl, whisk together garlic, salt, pepper, lemon and lime juice. Pour over cucumbers and avocados.
- Chill for 30 minutes before serving.
This was delicious! Used a bit of garlic powder and onion powder instead and it came out so tasty. Thanks for a great little recipe!

What about the onions? Do they go with the cucumbers or in the dressing?
They go with the cucumbers.
After cucumber it says “see note.” Where is the note??

Sidenote: Another way that I tell if avocados are ripe without gently squeezing them is to pick off the stem. If it comes off and the inside is light green, you’re good to go! If it doesn’t come off, the avo is unripe and if it’s all shriveled or dried up looking, definitely overripe.

How far in advance can you make this? I was concerned about the avocados turning….
You definitely don’t want to make it too far in advance. Avocados brown less with citrus on them which helps but I still would make within a couple hours of serving.
It says “see note” about the cucumbers. In the ingredients but I didn’t see the note.
