BUTTERMILK SYRUP RECIPE
This is the most amazing syrup recipe that you never knew you needed. Remember how I was telling you how my sister cooked her five boys a hot breakfast every day of their lives? Well this is her homemade buttermilk syrup recipe.
Why do you need this recipe when you can just use bottled maple syrup? Trust me. It’s 100% better. Like roll your eyes back in your head better than store-bought syrup.
The only thing I can compare it to is Garrett’s Popcorn. I know that’s a little weird to compare syrup to popcorn but here’s the story.
I was visiting Chicago a couple of years ago and was bringing Garrett’s famous popcorn home to my family and friends. While waiting for my flight I was on the phone talking to my sister “sampling” the popcorn as I talked.
I literally looked down and it was gone. Gonzos. So then it turned into me just bringing home popcorn for my family and my friends would never know it was a thought.
When you make this buttermilk syrup it’s pretty straight forward.
Here’s how you make homemade buttermilk syrup:
- Start by melting the butter, white sugar, and buttermilk over low heat.
- Bring mixture to a boil and boil for one minute.
- Remove the mixture from the medium heat and add the baking soda and vanilla. The mixture will foam up! Don’t be scared. It’s just a chemical reaction.
- Pour over a buttermilk pancake or waffles.
I obviously couldn’t let you go through the weekend without having this perfect topping for pancakes in your life. The best part is that it has a slight caramel flavor to it.
BUTTERMILK SUBSTITUTE
If you don’t have buttermilk you can add 1 tablespoon of vinegar or lemon juice to each cup of milk and let it sit for a couple of minutes.

Homemade Buttermilk Syrup
Ingredients
- 1/2 cup butter
- 1 cup granulated sugar
- 1/2 cup buttermilk, (see note for substitute)
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Instructions
- Melt butter, sugar, and buttermilk in a medium saucepan until the butter is melted. The mixture will boil up high so you need a pan with room for it to do this. Next, bring the mixture to a boil and boil for one minute.
- Remove from heat and whisk in the vanilla and baking soda. The mixture will foam! Serve warm on pancakes or waffles. Store leftover buttermilk syrup in an airtight container in the fridge.
My go-to recipe! Easy, simple, and turns out every time. I’ve probably made it 10 times so far. I hate shelf store bought syrup like mrs butterworths so this is a necessity when I make pancakes! Thanks!

I thought it was a little “salty” but that didn’t stop us from eating it! I used Splenda instead of sugar (diabetic) so maybe that had something to do with it. It was so different and so good! I will be making this again!
Maybe try unsalted butter in the recipe.
My syrup didn’t boil up as high as I expected from the description. I let it come to a full rolling boil. Anyway, it’s good. 😊

Do I have to use baking soda ?
It gives it its texture but you could try it without.
