CLOUD BREAD RECIPE
My son came home from school a couple of years ago and announced that he was gluten-free. From there, in order to support him, we starting experimenting and making all the gluten free bread recipes we could in order to find something he would eat that was high protein and not real bread.
Introducing this fluffy cloud bread! He ended up loving this bread substitute to make sandwiches for school. A great recipe!
WHAT IS CLOUD BREAD
This Keto Cloud bread recipe is a high-protein bread alternative made from simple ingredients like eggs, cream cheese, and cream of tartar. It does not have the texture of regular bread. Keto bread is definitely different. It can be used as sandwich bread on a low carb diet.
NUTRITIONAL INFORMATION
The Keto diet is all about low-carbs and each serving of this bread has less than 1 carb.
HOW TO MAKE CLOUD BREAD

Preheat oven to 300 degrees and line a baking sheet with parchment paper.

Separate egg yolks and egg whites into separate bowls. In a stand mixer (or with a hand mixer), beat the egg whites at high speed, cream of tartar, and salt until stiff peaks form.

In a separate bowl, mix the egg yolks and cream cheese with a mixer until fully combined.

Gently fold the egg yolk mixture into the whipped egg whites until completely combined.

Spread 8 even scoops of the batter onto the prepared baking sheets leaving space in between each portion. Flatten batter to desired thickness.

Bake for 20-25 minutes or until golden brown. If adding cheese sprinkle on top for the last couple minutes of baking.
VARIATIONS
You can add a sprinkle of cheddar cheese to the last minute of baking these for a cheesy twist.
STORAGE TIPS
You can store each slice of bread in a freezer bag on the counter at room temperature for a couple of days. For longer storage, keep in the fridge in an airtight container between layers of parchment paper so it doesn’t stick.

Any idea if the batter can be frozen if you only want to bake 1/2 the recipe at a time?
Since it’s egg whites I wouldn’t freeze the batter. I would make them all then freeze them in between sheets of parchment.

Can arrowroot be used instead of cream of tartar?
I’ve never tried it!
More like fried egg sponge… I’m not sure why I expected anything different when the main ingredient is egg though. There are many other keto bread recipes that I prefer over this.

Will it freeze?
This is good, but more like a pancake than bread. I liked it best as a foundation for grilled cheese with ham. Kind of like a Monte cristo. It was way better when first made but didn’t keep very well. If you’re looking for something that feels more like real bread, try the keto biscuits on this site. They are awesome!
