S’mores Bars
These S’mores Bars have layers of graham cracker dough, gooey marshmallows, and gooey chocolate. One of my favorites!

SMORES BARS
Growing up we had a family reunion up in the Graham Mountains in Arizona every summer with my dad’s side of the family. I have 82 first cousins on my dad’s side alone so we were never bored and definitely made our fair share of mischief around camp.
The best part for me about the reunion is when the whole family would make the hike up to Ladybug Tower. As you get closer to the tower you start seeing ladybugs here and there.
We even would have ladybug fights where we would grab handfuls of ladybugs and throw them at each other (in retrospect…yuck). When we finally reached the tower there were ladybugs everywhere in sight…on all of the surrounding rocks and all over the Ladybug Tower.
Then, all of the uncles would climb up the tower and throw down money and candy to the little kids who would scramble all over the base of the tower to gather the goods.
Sometimes when I’m putting my kids to bed at night I tell my boys about the Ladybug Tower and their eyes get all big with excitement.

S’mores Bars
Ingredients
- 1/2 cup butter, room temperature
- 1/4 cup brown sugar
- 1/2 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/3 cups all purpose flour
- 3/4 cup graham cracker crumbs
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 king-sized Hershey's chocolate bars, (if you want a more subtle chocolate flavor use regular sized chocolate bars; enough to fit)
- 1 1/2 cups marshmallow fluff, (7 1/2 oz jar)
Instructions
- Preheat oven to 350°F. Grease an 8-inch square baking pan.
- In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add the flour mixture to butter mixture and mix at a low speed until combined.
- Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow creme or fluff. Place remaining dough in a single layer on top of the marshmallow creme.. This part can be tricky. I made little disks with the dough and formed them into a sheet on some parchment paper then transferred it over. Spread it around gently. You can also roll the top dough layer in between two sheets of plastic wrap until it's in a square then placed it on top.
- Bake S'mores bars for 25 to 35 minutes, until lightly browned. Cool completely before cutting into bars. Makes 16 cookie bars. These are great warmed up in the microwave for 10-15 seconds. Store leftovers in an airtight container,

Apparently the size of Hershey’s Milk Chocolate bars have changed since this recipe was originally written. I think the XL size (4.4 oz.) is probably more appropriate in 2018. Too bad the recipe didn’t specify the size in ounces, instead. I followed the recipe to the letter and was so disappointed to find that there was so little chocolate. The King size bar is only 2.6 oz. I should have used 2 XL size chocolate bars instead of 2 King size bars.

I haven’t tried it in a 9×13 pan. I would do the same baking time but maybe add 5 minutes if needed.
Hello!! I want to make these but more than just an 8×8 pan of them. Do you think if I double the recipe and did a 9×13 pan, it would work? Do you think I should still try to same degree for baking and time? Just looking for advice to try it….I know you wouldn’t be able to know for certain since you haven’t tried it 🙂
I would maybe add 5-10 minutes to the baking time. I haven’t tried it either thought but you should be able to double it.
These look amazing!!! I have a rather random question – how crispy does the top crust get? I would love to try shipping these to someone and am trying to figure out the best way to do that… any suggestions would be appreciated as I’m not sure of the texture/consistency of the bars.
The top stays soft like a cookie. I’m not sure how to ship them! Wish I had more suggestions.

yums!!!!! just made these. i doubled the recipe and crumbled 9 honey maid graham crackers. i also traced the top of my pan and formed and pressed the dough to that outline. just flip it on top of the fluff and voila you’re done!!!

You could definitely flip the layers. Great idea. I think it was in that order orginally trying to mimic an actual smores. Some readers rolled out the top crust in between saran wrap then layed it on top. Good luck.
You mentioned it was a little tricky to spread the graham cracker crust on top of the marshmallow fluff – would it work if I flipped the chocolate and fluff layers, so that I would be spreading the top layer of graham crust on the chocolate, instead? Could that work? It might be easier to spread, anyway!

Thanks, Christy. I remember taking the kids to Mt. Lemmon around that time of year and accidentally stumbling on the same phenomenom. It was so cool and the kids have been wanting to go again, but I wasn’t sure when we were there! I like Mt. Graham better anyway – not as crowded! We live in Benson.

Oh YEAH! These are really good! I was glad I read the comment about making the top crust on a piece of parchment or waxed paper. Worked perfectly! Thanks for sharing this recipe, it ROCKS!
My family loves this recipe! I found a good way to make the “top” of the bars. Form both “halves” of the dough by pressing them into the pan one at a time. Turn the first one out onto parchment paper before layering back on top of the chocolate and marshmallow. Simply flip it over onto the top before baking. Perfect fit! Works great. Sue

We definitely need to quadruple this recipe. We had it at my baby’s blessing today and it only made an 8×8. With being a family (of 40+) favorite, it had to be cut tiny and kept on the ‘down low’ as to how amazing it was.

So I made these and they were really yummy. I had to subsitute choc chips and actual marshmallows (minis woudl have been better), but it was still yummy…they were even better for breakfast this morning!!!

Oh, My this looks delicious. So fun to hear back from you. It has been so long since I have been into Outback. I left Outback about 4 months after Jeff took over for Noel. We moved to Las Vegas from there and now our back in Southern California where I am from. I can’t take any credit for the photos. My husband takes them all. Seriously Christy…..looks like heaven! My mouth is watering, but I can’t make them!!! I turn 30 in two months and HAVE to make my goal weight….maybe when I get there I will make these to celebrate and do a little happy dance….then not eat for two days!!
