Chewy Coconut Lime Sugar Cookies
Chewy Coconut Lime Sugar Cookies are super soft and chewy rolled in sugar for a slightly crispy edge. This dessert is a tropical cookie and smells amazing while baking.

CHEWY COCONUT LIME SUGAR COOKIES
Our most recent leg of our vacation was to Las Vegas for the Garth Brooks charity in which we are involved. We were able to meet some of the kids that the foundation helped out which was awesome.
We were put up in style at the Wynn hotel. All I have are 2 words for you: hospitality suite.
The hospitality suite was a suite that had access to computers, snacks (not mention the drawers of candy bars), and drinks for anyone that was part of the charity for the down time between meetings and events.
As you know I have a hard time saying no to free treats so every time I left the hospitality suite I had at least two of their freshly baked pancake-sized cookies.
I had good intentions of saving them for later up in my room but they never quite made it past the elevator ride.
That happened more times than I would like to mention. I’m not sure at what point my husband started calling me me the Cookie Monster but I can’t deny that it was a name that I earned. What happens in Vegas…stays in Vegas.
Since I can’t share with you the cookies I had in Vegas…and believe me I wish I could share some of those calories I consumed…I wanted to share one of my favorite cookies of the summer.
These Chewy Coconut Lime Sugar Cookies! This cookie dough is the bomb.
The toasted coconut adds a great texture and flavor. These are unbelievably chewy and melt in your mouth. The lime flavor is so refreshing!

Chewy Coconut Lime Sugar Cookies
Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup butter, , softened
- 1 ½ cups white sugar
- 1 egg
- ½ teaspoon vanilla extract
- ½ teaspoon coconut extract, (optional)
- zest of one large lime, finely minced
- 3 tablespoons lime juice
- ½ cup unsweetened toasted coconut
- ½ cup sugar for rolling cookies
Instructions
- Preheat oven to 350 degrees. Line cookie sheets with parchment paper. If you haven't already toasted your coconut just put a layer of coconut on a cookie sheet and bake it at 350 degrees for 5-7 minutes. Watch out. It goes from white to burnt really quick if you aren't watching closely.
- In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
- Using a mixer, beat together the butter and sugar until smooth and very fluffy.
- Beat in egg, vanilla extract (and coconut extract if using), lime juice and lime zest.
- Gradually blend in the dry ingredients and toasted coconut.
- Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart. I made mine too big and they ran together. These do spread quite a bit. Bake 8 to 10 minutes in the preheated oven, or until lightly browned.
- Let stand on cookie sheet two minutes before removing to cool on wire racks
Notes
This recipe consistently gets people to ask the recipe. They are so different. Do not skimp on the zest. I never use the coconut extract, but it’d probably be great!

If I only have sweetened coconut, would you suggest cutting down on the 1 1/2 cups sugar in the recipe? I can’t wait to make these!!
Honestly I’ve made it with both and it doesn’t make it too sweet. should be fine.

My oven tends to run hot so I baked them at 325° for 12 minutes and they were perfectly, lightly browned and chewy. ♡

What do you mean by minced lime? Pith, rind and all? Or just the pulp?
these remind me of snickerdoodles but coconut & lime flavored rather than cinnamon. I love snickerdoodles, sugar cookies, chewy cookies, limes, and anything coconut, so I absolutely love, love, love these! thanks so much for the amazing recipe!

The recipe is not kidding…they spread out a LOT. I didn’t taste much lime, and I even added an extra tablespoon of juice. Also, pay attention to the “parchment paper” part of the directions. I didn’t use any, and my pans are destroyed. These cookies stick worse than anything I have ever made. The stuff I could save tasted ok, but not the refreshing lime I was hoping for. I don’t think I will make these again.
Shoot Shannon. Parchment paper is a must otherwise they will stick and spread.
I’m no expert – but you said that you added an extra tablespoon of lime juice and then complained that the cookies spread…. Did you also add extra flour to compensate for the additional liquid??? If not, that could be YOUR problem – not the problem of the recipe.

These are the best cookies, bar none, that I have ever made or tasted. Also received rave reviews from my SO.
I followed the recipe exactly (except I didn’t toast the coconut, since I like plain, unsweetened coconut), and it produced 7 dozen 2 1/2-inch cookies.
Can you omit the coconut? Do I need to add anything if I do?
Ooh. The coconut adds a ton to the flavor of these. You could omit it. I wouldn’t add anything in its place.
I made these to take to a bonfire and they were a huge hit! I did cut the sugar back in the cookies from 1 1/2 cups of sugar to 3/4 cup though, especially since they were rolled in it. I’ve gotten out of the habit of eating and baking with tons of sugar and really wanted to prevent the sugar from overpowering the lime and coconut flavors. Everyone loved them (even my boyfriend’s mother who hates lime!) and they may have actually been better the second day (I thought they were still a tad too sweet the first day for my taste, but it mellowed out a little). The hostess even asked for the recipe. 🙂

It makes about 24-30 cookies depending how big you make them.

These cookies are delicious! My family loves them. I stopped by our local bakery today, and they had lime cookies that had been rolled in chia seeds then baked. They were yummy! The seeds gave them a crunchy outside. So all I have been thinking about today is how I want to try your recipe with the chia seeds. I will have to let you know how they turn out. Just made these…couple modifications. Used spelt flour,earth balance,coconut oil, only 1c. coconut sugar. Chilled cookie dough for better shaped cookies. Never rolled them in sugar …for health sake. Found the flavor too mild, so added 1 tsp.coconut flavor and 1/8tsp. lime oil. Excellent cookie!

just made these….but added a little something….I pre-made a lime sugar mixture for rolling the cookies. I zested a whole lime over the sugar and then squeezed the juice from the lime into the sugar (just enough to add flavor but still have a sugary texture). I then stirred with a fork and let it sit for a bit. I then rolled the cookie dough in the lime-sugar! Added a little more lime flavor and the specs of lime zest looked really fun!
