WHITE CHOCOLATE MACADAMIA COOKIES
We’ve been hitting it hard core over here trying to eat healthy…but today I had enough. I’m not a smoker but I imagine it’s like trying to quit smoking. I just felt so tense and uptight all today.
Seriously after I made these I took a bite and let out a long deep breath…much better. Got of it out of my system until I can’t.
Macadamia nuts were on sale at the grocery store so that’s what inspired this cookie recipe. These are some of my favorite cookies with the best flavor.
Don’t be surprised if you don’t get actual cookies because the cookie dough balls taste unbelievable. Golden brown. Chewy. Moist. Salty. Sweet. Enough said. The best cookies ever with chunks of nuts and white chocolate throughout!
HOW TO MAKE MACADAMIA NUT COOKIES
- Heat oven to 375 degrees F and line a cookie sheet with parchment paper.
- In a large mixing bowl with the paddle attachment, cream butter, white sugar and brown sugar until light and fluffy on medium speed (a hand mixer can also be used). Add the eggs and vanilla. Mix until combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Slowly add the flour mixture to the wet ingredients and mix on low speed until combined. Add the macadamia nuts and white chocolate chips. Stir until combined.
- Using a medium scoop, scoop 2 tablespoons of dough for each cookie and place at least 2 inches apart on the prepared baking sheet. Bake for 8-10 minutes or until the edges of the cookies are just starting to brown.
- Remove from the oven and allow the cookies to sit on the pan for a few minutes before removing to a wire rack. Press additional chocolate chips and nuts on top. Sprinkle with a little bit of sea salt. Store baked cookies in an airtight container.

- 1 cup white granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1 cup macadamia nuts, coarsely chopped
- 1 ½ cups white chocolate chips
Instructions

I was told that these are the best cookies ever eaten, by several of my friends. I could not find a choc chip recipe I liked so I use the same base recipe and put in milk choc chips from Whole Foods and they taste amazing. Melt in your mouth amazing! Now to find an oatmeal/raisin cookie recipe that is similar to this one.

I keep trying to find the perfect recipe and I finally found it. I cooked this and three days later in a sealed container they tasted as fresh as they did the first day. I am going to take this base recipe and just add chocolate chips since I can’t seem to find a recipe I love.

I made these for a neighborhood block party, and my neighbors couldn’t believe I’d made them myself. One woman said that she is now ruined for all other cookies, and another suggested I bake professionally LOL Thanks for this, they’re great!

I followed the recipe as written except I baked cookies at 350 degrees F instead of 375. I shaped the batter into dough balls, covered, and refrigerated for three days before I baked them. I find that method is easier. The most delicious white chocolate chip macadamia cookies I have ever eaten. My husband agreed. Thank you for sharing your excellent recipe!

I swear I make these once a week…husband always asks me to..and they are perfect!!!! Next day just as good….3rd day already gone lol
