CUCUMBER DILL BITES

This snack came about after we had been eating lots of sugary snacks, chips, and basically all of the unhealthy food.

I wanted something light, cool, and refreshing.

INGREDIENTS

  • CUCUMBERS – I like to use Hothouse or English cucumbers because the seeds are edible and not as noticeable as others.
  • CREAM CHEESE – The richness of the cream cheese balances the light cucumber.
  • SOUR CREAM – This thins out the cream cheese a bit. You could use Greek yogurt as well.
  • GARLIC POWDER – This adds a little flavor and a savory flair.
  • FRESH DILL – Dill was meant to be with cucumber. It goes so well.
  • SALT – If you ever think you’re missing something you usually haven’t seasoned with salt well.
  • OPTIONAL – A sprinkle of diced tomatoes and crumbled feta.

Cucumber Dill Bites

These Cucumber Dill Bites are a light and fresh snack with a creamy dill topping. Great healthy snack for those warm summer days!
Prep Time: 10 minutes
Servings: 36 slices

Ingredients

  • 1 Hothouse or English cucumber
  • 4 ounces cream cheese, softened to room temperature
  • 2 tablespoons sour cream, (Greek yogurt can be substituted)
  • 1 tablespoon fresh dill, finely chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt, plus more to taste

(Optional Toppings: diced tomato and crumbled feta)

Instructions
 

  • Peel cucumber leaving some skin on for color. Slice into 1/4 inch slices.
  • In a small bowl, combine the rest of the ingredients, adding more salt and pepper to taste.
  • Spoon into a small ziploc bag. Snip the corner off with scissors. Pipe a very small amount on top of each slice. Sprinkle with tomatoes and feta if using.
  • Chill until serving.
