KETO CHILI RECIPE

Keto chili? Really? What does that mean? Although a traditional chili recipe is known to be filled with beans, beans are a no-go on the Keto diet. No slow cooker here! This Keto version is done on the stove top.

So can you have a chili without beans? Yes. I think you will be surprised at how much you won’t miss the beans in this. But if you love beans my mom’s white chicken chili has six whopping cans of them. 

This no-bean chili recipe is allowed on a low carb diet.

The leftover chili is almost better the next day because the  flavors all meld.

Yes. Use freezer-safe containers for this chili up to three months.

Keto Chili is packed with protein and flavor. All that chili flavor without beans to make it a low carb chili recipe. Ground beef, Italian sausage, and Andouille sausage make up the main part of this chili.

Cook Time: 20 minutes
Servings: 8 servings

Ingredients

  • 1 lb ground beef
  • 1 (14 ounce) package andouille sausage, (or smoked sausage for less spicy version -see note)
  • 1 lb Italian sausage
  • 1 cup diced yellow onion
  • 2 cups low-sodium beef broth
  • 1 (14 ounce) can Italian diced tomatoes
  • 1 (10 ounce) can Rotel diced tomatoes and chilies
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • OPTIONAL TOPPINGS
  • cheese
  • sour cream
  • chives
  • bacon
  • boiled eggs

Instructions
 

  • Brown the ground beef, Italian sausage and onions together until no longer pink. Add to a large pot with all of the remaining ingredients and bring to a boil.
  • While that begins to boil, chop the andouille sausage and sauté in the pan you just used to brown the beef and sausage, add to pot. Reduce the temperature to low and simmer for 15 min. Top with your favorite toppings. Store leftovers in an airtight container. 

Notes

ANDOUILLE SAUSAGE – This is a highly spiced sausage. If you want something a little milder you can substitute it with any smoked sausage, like kielbasa.
