GREEK CHICKEN RECIPE
Whenever I’m craving something healthy I always lean to Greek food. It’s quick, easy, and a healthy meal with fresh flavors.
I may have burned out my family though because I tried so many different versions to get it perfect for you.
In Greek cooking, coriander, cumin, and even cinnamon are common in seasonings. However, every time I made that version my family thought it was too herby. So here’s the classic version that everyone will like.
The Greek marinade ingredients are simple which makes it easier for busy weeknights.
INGREDIENTS
- BONELESS SKINLESS CHICKEN BREASTS - I like to use breasts when cooking on the stove and chicken thighs when roasting chicken so breasts are better here.
- GREEK PLAIN YOGURT – The Greek chicken marinade has yogurt in it which makes for super tender chicken.
- DRIED OREGANO – This is the classic herb in Mediterranean cooking. We use dried herbs here but if using fresh herbs use 2 Tablespoons. Great additions would be fresh dill.
- LEMON JUICE – This gives the chicken a bright flavor.
- OLIVE OIL
- RED WINE VINEGAR – This adds a little tang.
- MINCED GARLIC – I don’t know how to make anything without garlic.
- KOSHER SALT AND PEPPER
- TOPPINGS: Diced cucumbers, tomatoes, red onions, feta cheese, and tzatziki sauce.
HOW TO MAKE GREEK CHICKEN
INSTRUCTIONS

In a large bowl, add all of the ingredients except for the toppings and stir well. Cover with plastic wrap and marinate in the fridge for 30 minutes, up to 24 hours.
Remove from fridge when ready to cook to take the chill off. -
In a large skillet, heat some olive oil (about 2 tablespoons) to medium high heat. Add the chicken and cook 3-4 minutes per side until chicken is no longer pink in the center. Cooking time with vary with the size of your chicken bites. Serve with chopped cucumber, tomatoes, red onion, feta, Kalamata olives, and tzatziki sauce. The best part is that this can be served hot or cold. keep chicken pieces and toppings separate in an airtight container in the fridge.

Ingredients
- 2 lbs boneless skinless chicken breasts, cubed
- 1/4 cup plain Greek yogurt
- 2 tablespoons lemon juice
- 2 tablespoons olive oil, (more for cooking)
- 1 tablespoon red wine vinegar
- 2 teaspoons dried oregano
- 2 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon ground pepper
TOPPINGS:
- 1 cup English cucumber, diced
- 1 cup grape or cherry tomatoes, diced
- 3/4 cup feta crumbles
- 3/4 cup tzatziki sauce, (I like Cedar's brand)
- 1/2 cup red onion, diced
- 1/2 cup Kalamata olives

Diane, all the ingredients are listed directly below the “2lb chicken breasts” it’s the yogurt, lemon juice, oil etc. It’s delicious too! I just made it.

This was really delicious! I marinated small, sliced chicken breast for 24 hours and it rendered a chicken that sauteed up tender and incredibly flavorful! It went so deliciously with some Israeli salad. I’ll definitely be making this again! Thanks for sharing!
