EASY CHICKEN SPAGHETTI RECIPE

My husband’s favorite meal dating back to his childhood is spaghetti. Although this chicken spaghetti recipe is definitely not as common, it’s a lighter twist on the classic dish and is the ultimate comfort food.

INGREDIENTS

  • SPAGHETTI – Use any thin spaghetti or even angel hair pasta.
  • CHICKEN BROTH
  • ROTEL TOMATOES – These have green chilies in them and give the dish a spicy kick. You could also use fresh tomatoes.
  • CREAM CHEESE –A lot of recipes call for cream of chicken soup, cream of mushroom soup, or Velveeta cheese but I’m not a fan. The cream sauce is made with cream cheese and makes all the cheesy goodness.
  • MEXICAN CHEDDAR CHEESE
  • ROTISSERIE CHICKEN –You could also use cooked and shredded boneless skinless chicken breasts. Any leftover cooked chicken will do.

VARIATIONS

  • Add green bell pepper or red peppers.
  • ​Spice it up with red pepper flakes.
  • Lighten up the dish with sour cream instead of cream cheese.

HOW TO MAKE THIS

  1. In a large pot or Dutch oven, add the spaghetti noodles, chicken broth, salt, garlic powder, onion powder, and bring to a boil. Reduce heat to medium and cook spaghetti 12-15 minutes or until al dente according to package directions. Most of the liquid will be gone.One-Pot Chicken Spaghetti
  2. Add the chicken, Rotel tomatoes, cream cheese, and Mexican cheese. Stir cheese sauce well. Add salt and pepper to taste. Garnish with cilantro, parsley, or fresh basil if desired. You can save leftover chicken spaghetti in an airtight container. To make the creamy sauce consistency thinner add some chicken broth.
