I’ve been obsessed over chocolate lately. More than normal. There is some force of nature drawing me to anything chocolate. My husband and I were at Burger-Fi on a date and as we sat down I said, “I smell chocolate.” In a burger joint the smell seemed out of place but sure enough WAY across the room a boy was unwrapping a chocolate bar.

I swear this nose of mine is my downfall. I have an insane sense of smell that gets me in trouble.

Which leads to me these Almond Roca Bars. I first spotted them at The Food Charlatan. Her picture got me. Check it out. It’s been taunting me ever since I saw it. Then I saw her Nutella Stuffed Browned Butter Blondies and licked my computer screen. Which actually might have some residual chocolate on it so it wasn’t completely in vain.

I know some people don’t like almond flavoring. We might have to reevaluate our friendships if that’s the case. The dough for these bars taste just like sugar cookie dough with a strong almond flavor. The bars are soft, buttery and topped with chocolate and sliced almonds. With just a few ingredients, I had these in the oven in under 5 minutes. I only put almonds on half of the pan because the kids aren’t crazy about nuts.
I think I may have been a little zealous in sprinkling chocolate chips on top. I used semi-sweet but I really love the taste of milk chocolate chips too. You can definitely use more or less depending on your PMS level…I mean…preference.

These Almond Roca Bars are soft, almond flavored cookie bars topped with rich chocolate and almonds.

  • Preheat oven to 350 degrees and grease a 9x13 baking dish. In a large bowl, beat the butter with the white and brown sugar until fluffy. Add egg, almond extract, and salt and mix until combined. Add the flour and mix thoroughly. Spread mixture into the prepared pan.
  • Bake for 13-15 minutes or until edges are golden brown. Sprinkle bars generously with chocolate chips immediately after baking and let them sit to melt. You can stick the pan back into the oven for a couple of minutes to speed this up. Once chips have melted, spread the chocolate evenly on top and sprinkle with sliced almonds.
