Graham Streusel Coffee Cake
This Graham Streusel Coffee Cake is an unbelievably easy coffee cake with lots of brown sugar, graham crackers, and cinnamon. Although it’s considered a breakfast food, it’s really a treat for any time of the day.

I’ve lived in Florida so long that I’m not really sure if this is just a Florida thing or if all grocery stores have a mammoth sized scales right up front next to the empty grocery carts.
So when does self consciousness kick in? At what age do we stop weighing ourselves in public?
You couldn’t pay me to get up there. Even when I go to the doctor now I kick off my flip-flops and take off my sunglasses before I’m weighed.
Because you know those weigh sooo much. I’ve been married 14 years and my husband doesn’t know what I weigh.
This Graham Streusel Coffee cake has layers of cake and streusel all throughout. It’s so easy.
I never really understood why we all pretend that coffee cake is a breakfast food when it is in fact just cake.
I’m not arguing – but who are we kidding? We’ll we’re not trying that hard to pretend that THIS version isn’t just cake because this coffee cake starts with a cake mix. Start by layering half of your prepared cake mix and then layer half of the streusel on top. Pour the remaining half of the cake mix on top (that’s what’s pictured above) and the rest of the streusel. So easy right? Look at that streusel baby. The graham crackers in the streusel gives it that extra crunch. This makes a full 9×13 pan. I made it and was kind of wondering who I should give it away to since there’s no way my family could eat all of that. Wrong. Two days later, we had eaten the whole thing.
Graham Streusel Coffee Cake
Ingredients
- 1-1/2 cups graham cracker crumbs, (see Note)
- 3/4 cup packed brown sugar
- 3/4 cup chopped pecans
- 2 teaspoons ground cinnamon
- 2/3 cup butter, melted
- 1 (15.25-oz) package yellow cake mix (and ingredients called for on the package such as eggs and oil)
- 1 cup powdered sugar
- 1 tablespoon milk
Instructions
- Preheat the oven to 350 degrees and grease a 9x13 baking pan.
- In a small bowl, combine the graham cracker crumbs, brown sugar, pecans and cinnamon. Stir in butter; set aside.
- Prepare cake mix according to package directions.
- Pour half of the batter into a greased 13-in. x 9-in. baking pan. Bake for 5 minutes so that the streusel doesn't sink to the bottom. Remove from the oven and sprinkle with half of the graham cracker mixture.
- Carefully spoon the remaining batter on top. This is tricky but it's very forgiving. Sprinkle with the remaining graham cracker mixture.
- Bake at 350° for 25-35 more minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
- For the glaze: combine powdered sugar and milk; add more milk 1 tablespoon at a time to desired consistency. Drizzle over cooled coffee cake.

My cake just came out of the oven . Followed the recipe exactly. Mine also looks nothing like this photo. Mine also bubbled up around the strudel. Its cooling now. Hoping once its glazed and ready to eat, the taste will be delicious. Fingers crossed

I’m not embarrassed to serve this as one reviewer commented, but it sure doesn’t look like the photo. I know cake mixes have gotten smaller, but my batter (made exactly as directed on the box) was thinner than yours, and there was not nearly as much crumb topping on top of my cake. Maybe next time I’ll not layer it and put all the crumbs on top or make extra crumb topping. Very easy recipe though.

I made this often when my boys were younger and they loved it. Not long ago one of my sons (grown now) asked me to make that great coffee cake I used to make. Lol….that’s a large category for me…so I said to describe it. He said, “You know ….it was your Gram’s recipe!” (Another large category!) It took a lot of questions, but I figured out that what he was hearing all those years was “Gram’s Streusel Coffee Cake”. Either way – it’s still a favorite!

This cake looked really good and fairly simple… It was definitely simple to make but it turned out nothing like the picture… I followed the recipe to a T and somehow my cake bubbled over the streusel topping… Honestly Im embarrassed to serve this to my guests for brunch tomorrow… The picture that accompanies this recipe must be from another source… Very disappointing:( Hopefully it will taste good even if it does look awful.

Same thing happened to me. I will double the streusel topping recipe if I make this again.
I just pulled this out of the oven and cut a slice hoping I was victorious as I love to cook but don’t bake very often and let me just rave at how delicious this is. I used all gluten free products and this is a keeper! Five star recipe.

This is so good. Since I printed the recipe I’ve made it three times. Including for a potluck at church. They raved about this.
Crumb Cakes always remind me of camping when I was a little girl, we always had them from the little local store. Graham crackers also remind me of camping … this is a great combination! I might have to get my mom to send me some graham crackers just so I can give this cake a go!!!

Looks perfect. I’m the same way at the Dr.’s office. Although I’m always heavier there than when I weigh myself at home which is really obnoxious because then I’m pleading with my doctor to change the number, lol!

I think the scales thing has got to be regional. I have never seen that in OK! What are the scales even there for?
That being said, I don’t really see why we would limit this cake with restricting labels like “breakfast” or “dessert.” It just seems unfair to the cake. I don’t know where my coffee cake obsession comes from, but it is fierce and makes me want to eat this cake for dinner. And lunch. And… Yes. I want to eat this cake.
