GRILLED MEXICAN LIME CHICKEN
It’s summer! I usually embrace summer and love having my kids home with no schedule but for some reason this year my kids seem to be a little more restless, a little more demanding, and a little more on each other’s nerves. I always have an activity planned for the morning but in the afternoon when my baby girls are napping, my three older boys get super restless.
I bought a bunch of materials for DIYs I found on Pinterest and so far I’ve only had one turn out. The first one we did was the one where you put a bar of soap in the microwave for a couple of minutes and it turns into a bunch of foam that your kids can play with.
I didn’t realize that a crucial part of the project was that it had to be a bar of Ivory soap. We used a bar of Irish Spring and you guessed it, it didn’t foam up. It just burnt and made my house smell like a bunch of old men caught on fire. The worst part is that the residual smell in my microwave is overwhelming. Doesn’t matter if you’re heating up pizza or mac n’ cheese, there’s a slight cloud of Irish Spring smell in the air. I’m ruined. It may end up being the best diet ever.
Summer also means a lot of grilling. It’s healthy, it’s easy, and it’s delicious. I love this Mexican Lime Chicken. It marinates in a really simple sauce for a couple of hours and then is grilled for added flavor. Eat it all by itself or in tacos, burritos, or salads. Enjoy!

Grilled Mexican Lime Chicken
Ingredients
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/8 cup oil
- 1/4 cup fresh lime juice
- 2 lbs chicken breasts
Instructions
- Combine first all ingredients for marinade.
- Marinate chicken in mixture for at least 2 hours in a resealable plastic bag or dish.
- Drain chicken well and grill over medium-high heat for 5-6 minutes per side or until done.

This was really good, but i did add cilantro because well, i just love it! Lol
I’ve started going for walks in the morning and my boys ride their bikes (we also stop by a park on the way) they come home so tired that they go downstairs and play happily together or sit down and watch cartoons, long enough for me to get ready. We missed a couple of days and they’ve been so restless and grumpy with each other. I wish I was better at planning some more activities though!

Oh no! The soap smell in the microwave! Take heart though, in the fact that we did it with actual Ivory soap, and it was… meh. The foamed up stuff was cool, but as soon as we started crumbling it up to play, all of us started sneezing uncontrollably from the soap dust. We couldn’t stop!
