ARUGULA SALAD RECIPE
Back in Florida, my husband would often come home from work with food.
They had the best food department at his work with super high quality food with fresh ingredients so whenever I got a little taste of it I was thrilled.
This is one of the salads he would come home with and although the ingredients are so simple, the flavor is amazing…if you like arugula.
Of course my husband always adds twice the Parmesan shavings to this.
WHAT IS ARUGULA?
Arugula is a cruciferous vegetable with a peppery flavor and many nutrients.
If you’re not a huge fan of arugula, you could substitute baby spinach or any of your favorite leafy greens.
HOW TO MAKE THIS

In a large bowl, add the arugula and the shaved Parmesan cheese.

In a small bowl, whisk together the dressing ingredients. Toss the salad with the dressing and serve.
OPTIONAL TOPPINGS
Although this simple salad is good on its own. Here are a few toppings you could add to this side dish:
- sunflower seeds
- goat cheese
- red onion
- cherry tomatoes
- toasted pine nuts
- crisp apples
- diced chicken breast
- rotisserie chicken
- pomegranate seeds

Arugula Salad
Ingredients
- 5 ounces arugula, (about 8-10 cups)
- 1/2 cup shaved Parmesan
DRESSING:
- 1/4 cup extra virgin olive oil
- 2 Tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon garlic powder
- salt and pepper to taste, (about 1/2 teaspoon salt and 1/8 teaspoon pepper)
Instructions
- In a large bowl, add the arugula and Parmesan.
- In a small bowl, whisk together the dressing ingredients. Toss the salad with the dressing and serve.
