Bacon Cheeseburger Mini Boats
These tacos are party food at its best! I know what you’re thinking. Bacon cheeseburger in a taco?
The possibilities are endless with these two bite wonders. Don’t knock it until you try it.
My family was completely skeptical and they gobbled them up.
The meat mixture has beef, onion, a little Worchestershire, and some ketchup and mayo in it.
Can we talk about the mini boats?!! I can’t tell you how excited I am about these.
Fill your mini boats with the meat mixture.
Sprinkle them with cheese and pop them in the oven just until the cheese melts.

Top with crumbled bacon, lettuce, tomato, and mustard. Delish!

Bacon Cheeseburger Mini Boats
Ingredients
- 4 strips of bacon
- 3/4 lb ground beef
- 1/2 small onion, diced
- 2 teaspoons Worchestershire
- 1 tablespoon ketchup
- 1 tablespoon mayonnaise
- 12 Old el Paso Taco Boats mini soft flour tortillas
- 3/4 cup shredded cheddar cheese
- Toppings: lettuce, tomato, mustard, ketchup
Instructions
- Preheat oven to 350 degrees. Cook bacon in a skillet until done and drain on a paper towel.
- In a skillet, brown the beef and onion until done. Drain. Add salt and pepper to taste. Remove from heat. Stir in the Worchestershire, ketchup, and mayonnaise.
- Place the mini soft flour tortillas on a baking sheet. Divide meat mixture evenly into the boats and sprinkle with the cheese.
- Bake for just a couple minutes or until cheese melts.
- Remove from oven and top with crumbled bacon, lettuce, tomato, and mustard (or whatever toppings you like).

Wow. That’s embarassing. Really you could pop them in the microwave since you just need to melt the cheese. Or you can bake at 350 for a couple of minutes.
I like to spread some refried beans on the bottom of the boat, and then top. I’ve also learned to make refried beans in the slow cooker, the dry beans are cheap, let the cooker do the work, and cut the sodium
Sounds like I need to learn how to do that.

I started buying these taco boats since seeing them on your blog for my 3 1/2 and 5 years olds. They are so much more manageable for Taco Tuesday than regular taco shells, plus my girls think they are getting something really special when eating their taco. I would recommend them for anyone with little ones to avoid everything falling all over the plate with the first bite. I never would have tried them without seeing them here! Yep, used the mini ones for the girls tonight. My 5 year old saw them and told me they were “cute.” After eating my two tacos in the regular sized boats, I felt a little less guilty having a third one… in the tiny boat! 🙂 What can I say? I’m a sucker for tacos!
