Bacon, Egg, and Potato Breakfast Skillet
I’ll be totally honest, I’m not a huge breakfast person probably because I’m not a morning person. My nephew Sam and his wife came to visit this weekend and I knew I had to up my breakfast game.
My sister cooked a hot breakfast for her five boys every…single…day…of their childhood. Cold cereal wasn’t an option. I keep telling her she has set up all of their future wives for failure. No one can live up to those expectations.
I found myself frantically brainstorming breakfast ideas for Sam and Miranda’s visit. Things I could actually make for them while trying to get my other kids off to school. I ended up making these Fluffy Pancakes with homemade buttermilk syrup (recipe to come), these Soft Cinnamon Rolls (made these the night before), and these Jelly Roll Pancakes over the weekend.
This Bacon, Egg, and Potato Breakfast Skillet was supposed to be on the menu but I didn’t quite get to it. This recipe is so easy though! It’s a breakfast skillet made all in one-pan!
SHREDDED vs COUNTRY STYLE (CUBED) HASH BROWNS
It really comes down to personal preference whether you like your potatoes shredded or cubed.
What I do know is that for both type of hash browns the key to cooking is this. Try not to flip them. The best way to get that nice brown crispy exterior is to let them sit on the pan and get that nice brown crust.
CAN I USE FRESH POTATOES IN THIS BREAKFAST SKILLET?
Absolutely. If you want to use fresh potatoes, peel and dice the potatoes and cook according to the recipe instructions. I usually love fresh potatoes but the frozen cubed hash browns are very convenient and all uniform in size.
DO I HAVE TO ADD GARLIC?
No! I mean garlic doesn’t really seem like a breakfast ingredient. I can’t help myself. I love the flavor. If you’re making it for breakfast you can totally leave it out. But since I make this more for brunch or even dinner, I love the added flavor.

Bacon, Egg, and Potato Breakfast Skillet
Ingredients
- 4 strips bacon cut into 1-inch pieces
- 6 cups frozen cubed southern style hash browns, fresh potatoes can also be used, (about 3/4 of 30 ounce bag)
- 1/2 cup white onion
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup water
- 1 clove minced garlic, (this is optional)
- 4 large eggs
- 1 cup shredded cheddar cheese
- 2 tablespoons sliced green onions, (optional)

Instructions
- In a large skillet, cook bacon over medium-high heat until crisp. Remove bacon and drain on paper towels, leaving about 2 tablespoons of drippings in the skillet.
- Add onion and potatoes to the pan stirring to coat in bacon drippings and cook for a couple of minutes. Add water and cover skillet. Cook for 15 minutes or until soft, only flipping once or twice. When you let the potatoes sit without flipping, they get nice and brown. Stir in garlic and cook for a minute. Add more salt and pepper to taste.
- Make four wells in the potatoes, exposing the skillet underneath. Carefully, crack the egg in each spot. Cover skillet and let eggs cook over low heat until egg whites are set, about 8-10 minutes. Sprinkle cheese and bacon on top during the last couple minutes of cooking. Sprinkle with green onions and serve.
It turned out good! but if im being honest, I had to mess around with the recipe a lot. My potatoes kept burning so I had to continuously stir every 5 minutes or so and the whole dish had little to no flavor in the end so I had to add extra seasoning. I would recommend baking everything separately. Especially the potatoes. I would also suggest baking them at 400 for about 30 minutes and you can also just throw the bacon in as well . I scrambled the eggs into the mixture and I think it just made everything too mushy. I would probably scramble them seperate next time! But other wise great recipe.

Works well WITHOUT THE WATER. I don’t know WHY you would add this to frozen potatoes.

Probably because the recipe calls for water and onions before the potatoes would be crispy. Potatoes absorb water. Just found this out the hard way lol good try though
I have made a variation of this for years.
It’s a great breakfast and people love it.
First par cook some white potatoes
(5-7)
Nuke one-two minute each or par boil about 10 minutes.
Peal potatoes or not.
Shred
Place one half in a well oiled (canola) medium hot cast iron skillet. No cover.
The potatoes should sizzle not scream.
While the potatoes fry top with diced onions, capsicum, and maybe mushrooms, anything you have.
It’s important that the potatoes go first and then the veggies
(otherwise they burn)
Top the potato/ veggies with the other half of grated potatoes.
Let the potatoes simmer on low heat for 15 minutes. Check with spatula if the bottom is nice and brown and lose on the skillet then it’s time to flip.
Take an appropriate plate, and set on top of skillet and carefully turn the whole thing over.
Then maybe oil the skillet more and slowly slide back into the skillet.
Let it continue to fry at low temperature.(10-25 minutes)
After turning.
crack 4-6 eggs on top and any cheese you want, maybe chilies (maybe not)
Cover till eggs are set and cheese is melted.
That’s how I make this skillet recipe.
Always a pleaser.

We make this multiple times a week and it is our favorite. Its been three months or so since we started making it and we are definitely not tired of it!!
Would like to add that it took a couple times to perfect the potatoes without burning.
I honestly did not know garlic was not a breakfast type item, that really blew my mind away LOL, if you come to my house it’s for breakfast lunch or dinner or dessert depending what were eating, you can never have too much garlic

I WISH I could post a picture! My family loved it! The only difference I made (more like mistake 😅) was that I used crumble eggs (then added cottage cheese bc, why not?) instead of only whole eggs. Still loving it!

Great recipe for my tired morning mom brain fog that can’t think of anything to make on a whim. Added more bacon, and left it in while potatoes cooked, also used cubed red potatoes and a bit more water. Turned out great! May add some chopped red bell pepper next time with potatoes!

Thank God for mothers who still make breakfast for their kids. I really do not think it is setting anything but laziness and vanity up for failure? Maybe they should think about that? Not whine so much. Kids are worth and become what is put into them and many prioritize that.
I do more bacon, use hash brown, scramble eggs, then top with sausage gravy. Later it meat, potatoes, eggs, gravy. Wonderful p

My child is five and she’s never been big into breakfast, she’s happy with a yogurt and sometimes a cereal bar and even then she usually doesn’t like to eat it till like 9 o’clock, but also be in home health sometimes as parents have to go to work early in the morning and don’t have time to cook a full five course breakfast for anybody, but trust me my child loves to cook dinner with me and will eat a ton and make up for not eating breakfast, and honestly breakfast is the worst meal of the day is tons of carbs that you really don’t need

I made a few changes because of what I had on hand. I substituted sweet potatoes for the hash browns and I added diced jalapenos and serreano peppers (I like i spicy). I slightly overcooked the egg but it still was delicous (I’ll turn down the heat and cook egg for a shorter period of next time). I also used queso fresco and poured some homeade green salsa over it. It was so good ! , I was so hungry that I forgot to season it too lol but the flavors blended so well that I did not even notice.

I made a few modifications: cooked the onions on their own first, then added garlic and cooked for a minute before adding the hashbrowns. Did 3 cups of hashbrowns instead of 6 and mixed every 5 minutes. Cooked the eggs for 8 minutes which resulted in a hard yolk….will try doing 6-7 minuted next time. The whole family enjoyed this! Yes!
Do not cover the hash browns. It turns to mush.
Simple, easy, and delicious. I am no master chef but I found this recipe to be easy, clear, and simple to prepare. I will be making this next time I go camping.

Wow! I can’t imagine making my kid a hot breakfast every morning. I mean I normally make muffins once a week and then we do big breakfasts on the weekend but your sister is something else! I’m also not a morning person lol. And I’d totally keep the garlic because yum.
