After flying over 13 hours both to and from Hawaii, I decided that I am surprisingly normal and low maintenance.
Spending that long with people you aren’t familiar with causes you to quickly pick up on their odd habits and quirks and there were a lot of them.
My husband and I weren’t sitting next to each other on the way home and although I’m a big girl and can handle being alone, it would have been nice to have him next to me in case I started drooling.
After asking several people if they would mind switching seats without result, we resided to the fact that we weren’t sitting together and worse things could happen.
Keep in mind that it wasn’t like we were asking someone in a window seat to sit in a middle. They were fair trades. Aisle to aisle. Window to window. No go.
The guy I was stuck next to had already said he would NOT switch so now I was stuck next to this guy for 8 hours with a blanket of awkwardness covering us the whole time.
He was fervently wiping down everything around him with antibacterial wipes but at the same time didn’t mind hacking on me every three minutes.
The obviously very germ conscious man blew my mind when in the middle of the flight he went to the bathroom BAREFOOT!
Seriously. Who are these people?

After eating everything in sight in Hawaii, I felt like something on the lighter side was in order.
As you know I love salmon. Like this Rosemary Ranch Salmon, Honey Pecan Salmon, and Chipotle Salmon.
This salmon literally melts in your mouth. For my friends out there that aren’t fish fans, this is super mild. I feel like the salmon fillets from Costco are also really less fishy than most.
And if you’re trying to make it extra healthy, you can totally get away with half the topping. Enjoy!

Baked Dijon Salmon
Ingredients
- 1/4 cup butter, melted
- 3 tablespoons Dijon mustard
- 1 1/2 tablespoons honey
- 1/4 cup dry bread crumbs
- 1/4 cup very finely chopped pecans
- 4 teaspoons chopped fresh parsley
- 4 (4 ounce) fillets salmon
- salt and pepper to taste
- 1 lemon, for garnish
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.
- Brush each salmon fillet lightly with honey mustard mixture. Sprinkle with salt and pepper. Next, sprinkle the tops of the fillets with the bread crumb mixture.
- Bake salmon 12 to 15 minutes in the preheated oven, or until it flakes easily with a fork. If your fillet is thick you may need to cook a few minutes longer. Garnish with a wedge of lemon.
I made this salmon for my partners birthday dinner, it was so easy and and a really nice light yet tasty meal. I bought some really good quality wild salmon from Whole Foods, and served it with some fresh cut green beans and fingerling potatoes that I boiled and then fried in butter and thyme. Soo good! But you’re right in that this recipe makes a lot of topping, and could definitely be great with half.
So I used to regularly take a particular flight from Manchester to London while living in the UK. It’s less than 30 minutes in the air, and the late flights can sometimes be almost totally empty. Honestly, it’s a bizarre experience being on an empty flight. However, since they still serve a complementary snacks and drinks service, despite the minuscule flight time (bless you British Airways!), to liven up the oddly quiet journey my travelling friends and I used to see how many free brownies and glasses of wine could be consumed before landing. Flying through Gatwick still brings me fond memories of rolling out of arrivals tipsy and full of chocolate.
The salmon looks amazing…..I’m definitely going to try it!
Our last flight back from Hawaii was pure torture! 14 hour red eye to Chicago, and 2 rows behind us was a woman with a 3 year old with night terrors! Seriously!?! Who takes a redeye with a kid with night terrors!?! Sheesh! We were up all night listening to this kid screaming for dear life every 3 minutes! She would scream for 6 minutes, then fall asleep, only to wake up in another 3!……ALL NIGHT LONG! No one could sleep! The morning crew (I guess were asleep waaaay in the back somewhere) were unaware of this kid, so the first thing the perky morning crew said was “Oh what a sweet little girl!” Of course, by this time, the kid was all happy and ready for the day! The rest of us where seriously ready to kill her! And we have vowed never to take a redeye again! lol
I don’t like salmon or mustard or pecans (haha) but my husband does. He could probably eat salmon everyday and not tire of it. I’m going to make this for him to try. I think he would really like it.
On a flight from Japan to CA I sat next to a lady who had a box of wine, several bags of chips and a handy dandy grocery bag to vomit in that she hung on the back of the seat in front of her. The WHOLE entire flight she kept drinking, throwing up and offering the guy on the other side of her chips even though he said no each time. I wanted so bad to sleep but she wouldn’t shut up and all I could smell was vomit. Needless to say, that was the longest, worst flight I have ever been on!
Ok. That is awful. So awful.
first of all… know that i am a very shy, passive person. with strangers.
two kids, one a 2-month-old non-bottle nurser, the other a rambunctious 3-year-old boy who wouldn’t sit still flying utah to hawaii… son in window seat, me in middle seat. man in aisle seat, who got on the plain while i was nursing. the flight attendant tried to get him to move to an empty seat, and there were plenty of empty single seats. he refused. i had to nurse twice more that flight… i didn’t know what to say. or do.
the other was a flight from tennessee to utah, and it was very turbulent. the man next to me had brought his cat on the plain with him. every time the plane lurched, the cat in the carrier on the floor next to me expelled it’s anal gland stuff… being nauseated from turbulence is bad enough. but that was like sitting on the plain next to a skunk… worst. flight. ever!!!

I was flying by myself with a lap baby. I had the window seat. I had one seatmate in my row- only one. He chose to sit in his assigned seat, the middle seat, even though the aisle was open and would have given room for my lap baby to move a little. He had missed his shower that day and he wasn’t a small man either. It was very uncomfortable but, more than that so unnecessary! Who doesn’t leave a seat of space between strangers if they have the option?
The salmon looks awesome. I am not a fish person but I do like salmon generally. Sometimes I even love salmon! I eyed some at Costco recently but I couldn’t justify the cost since I think I would be the only one to eat it in my family. I may just have to go for it anyway though and hope my kids will try it. 🙂 And if not, then more for me!

I am so excited to try this. I live in the great old Pacific Northwest, Seattle to be specific, so of course with all this super fresh salmon I am always looking for new recipes to try. Yum! As for flying horror stories, I may have a silly one. When I was 18- I got on the plane and sat down next to a seemingly quiet polite older gentleman (he was probably early 70’s). We made idle chit-chat and then went on to do our own thing. Once beverage service came by, I got my drink and immediately took out my chewing gourmand stuck it on the side of my cup. The man looked at me horrified then proceeded to take the gum off the side of my cup with his bare hands and shake it in my face saying “WE DON’T DO THIS”. Needless to say, 18 year old me was embarrassed beyond all belief and could only respond with a squeaky “ok”. He didn’t say another word to me the remainder of the flight. I will never forget that angry old man nor will I ever put gum on the side of my cup again 🙂

I like to buy Salmon from Costco too! I buy the Salmon from the freezer department. It is less fishy than any other Salmon out there. This recipe inspired me to try it this week. It looks amazing! I very rarely fly thank goodness, it is getting crazier by the minute! I’ll bet you were so focused on getting back to the children.
I love the topping in this recipe! I’m sure this salmon dish is full of flavor and nutty texture! It looks really delicious! You airplane stilorybis something else! There’s always some strange behavior on planes!

We go to Hawaii every year and you get ALL kinds. My biggest pet peeve is people who take off their shoes and/or socks and stick their grubby feet on the wall in the first row. Don’t even get me started about people who don’t control their kids. I can’t believe no one would switch with you guys. Our plan to get around that is to say that I hope they don’t mind vomit because I throw up quite a bit on flights especially take off and landing (aka-I wouldn’t be able to go to the bathroom to do it) I haven’t had to use it yet but I will totally go there if forced.
On a side note, the salmon looks pretty good!
