HONEY DIJON SALMON

I think we’re all feeling like we need something lighter for dinner these days.  Cooking salmon doesn’t have to be intimidating and this is a simple recipe.

SIMPLE INGREDIENTS

  • SALMON – I like Atlantic salmon but you can use any frozen or fresh salmon like sockeye salmon.
  • HONEY – This gives a sweet opposition to the tangy Dijon sauce.
  • DIJON MUSTARD – This is the ingredient that adds so much flavor.
  • BUTTER
  • CHOPPED PECANS
    PARSLEY
  • BREADCRUMBS

As you know I love salmon. Like this Rosemary Ranch Salmon, Honey Pecan Salmon, and Chipotle Salmon.

This salmon literally melts in your mouth. For my friends out there that aren’t fish fans, this is super mild. I feel like the salmon fillets from Costco are also really less fishy than most.

And if you’re trying to make it extra healthy, you can totally get away with half the topping. Enjoy!

This Baked Dijon Salmon is salmon topped with honey, dijon mustard, pecans, and breadcrumbs. 
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 4 servings

Ingredients

  • 1/4 cup butter, melted
  • 3 tablespoons Dijon mustard
  • 1 1/2 tablespoons honey
  • 1/4 cup dry bread crumbs
  • 1/4 cup very finely chopped pecans
  • 4 teaspoons chopped fresh parsley
  • 4 (4 ounce) fillets salmon
  • salt and pepper to taste
  • 1 lemon, for garnish

Instructions
 

  • Preheat oven to 400 degrees ℉and line a rimmed baking sheet with parchment paper. Place salmon fillets skin side down on the baking sheet (if they have skin). 
  • In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley.
  • Brush each salmon fillet lightly with honey mustard mixture. Sprinkle with salt and pepper. Next, sprinkle the tops of the fillets with the bread crumb mixture.
  • Bake salmon 12 to 15 minutes in the preheated oven, or until it the thickest part of the salmon flakes easily with a fork. If your fillet is thick baking time may be few minutes longer. Garnish with a wedge of lemon.

Notes

You could easily half the topping. It makes plenty.
