EASY BLACKENED CHICKEN RECIPE
Here’s a blackened chicken recipe that has a little bit of a kick but not so much that your mouth is on fire.
INGREDIENTS
- BONELESS SKINLESS CHICKEN BREASTS – I like to buy organic chicken breasts from Costco because I feel like the texture is the best but you can use any boneless skinless chicken breast you like.
- SPICE BLEND – A blend of spices in a small bowl to rub on the chicken. The spice mixture consists of paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne pepper, salt, and black pepper. To increase your heat level add more cayenne.
EQUIPMENT
It helps to have a cast-iron skillet to get that nice crust but any heavy skillet will work too. You may want you use your exhaust fan on your stove range because it can get smoky!
WHAT TO SERVE WITH THIS
This is a versatile chicken recipe that can be used for meal prep or just by itself. One of my favorite ways to serve this is over this Alfredo Pasta. Serve with a green veggie like green beans, asparagus, or a garden salad.
HOW TO MAKE THIS

Slice each chicken breast lengthwise. Take the four chicken breasts and pat them dry with paper towels.

Mix all the spices together and rub the chicken breasts and the sides of the chicken with the blackening spices.

Add the olive oil to a cast iron skillet or heavy bottomed pan and heat to medium-high heat. You want a hot skillet for best results.
Once pan is very hot, add the chicken and cook 4-5 minutes per side or until the thickest part of the chicken’s internal temperature reads 165℉ on an instant-read thermometer. Cooking time will depend on the thickness of your chicken.
Let chicken rest for a few minutes before slicing.

- 2 tablespoons olive oil
