Cheesecake Stuffed Strawberries
Cheesecake Stuffed Strawberries recipe is fresh strawberries stuffed with a cream cheese filling and sprinkled with graham crackers. We like to make these for an easy dessert after any meal. They are a crowd favorite!

CHEESECAKE STUFFED STRAWBERRIES
I always have mixed emotions on Mother’s Day. It’s a beautiful day to celebrate and recognize all that moms do.
I’m so grateful to be a mother but always feel like there’s room for improvement on my part. My own mother is amazing and I can only hope to be half the mom she is.
HOLLOW OUT THE STRAWBERRIES
To hollow out the strawberries use a small pairing knife. This makes a hole for the filling to go into.
CHEESECAKE FILLING
The cheesecake filling is very simple. The ingredients are cream cheese, powdered sugar, and vanilla.
HOW TO MAKE CHEESECAKE STUFFED STRAWBERRIES

Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary.

In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until creamy. Add cream cheese mix to a piping bag or Ziploc with the corner snipped off. Fill the strawberries with cheesecake mixture.

Once strawberries are filled, sprinkle or dip the tops with graham cracker crumbs.

Ingredients
- 1 lb large strawberries
- 1 (8 ounce) package cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup graham cracker crumbs
Instructions
- Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out with a paring knife, if necessary.. Prep all of the strawberries and set aside.
- In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until fluffy and creamy. Add cream cheese mix to a piping bag or Ziploc with the corner snipped off. Fill the strawberries with cheesecake mixture.
- Once strawberries are filled, sprinkle or dip the tops with graham cracker crumbs. If not serving immediately, refrigerate until serving.
My daughter and her girlfriend love making these! So far we have had them with vanilla extract, almond extract, and lemon juice with lemon zest. We’ve drizzled them with white and dark chocolate and love it all! My favorite is the lemon with lemon zest, though. Totally amazing!!!
We have found that it is better to make them the morning of the day you will be serving them. They tend to get a bit soggy if left longer than that.

I made these and they looked great- I put them in the frig until my event the following g day. They were very soggy. What did I do incorrectly?
They are best day of. If you wash the strawberries make sure you dry them well.
Super easy and very tasty. Instead of graham cracker crumbs, I melted a little bit of chocolate and dipped the end of the strawberry and it was well worth the calories. Thank you.

These were amazing! I dipped half in mini chocolate chips and my family went crazy.
I found that if you make them the day before, put each one on a cupcake liner and then on a plate to store. They look extra cute, and the paper soaks up some moisture so they don’t get mushy.

I used to make specialty cheese stuffed strawberries for the Hershey Chocolate Festival. After hulling the berries, I’d turn them upside down on paper towels, while heating up the chocolate and preparing the filling. No soggy berries.

I made the filling as the recipe said filling was a little soft it ran out of the strawberries should I have refrigerated the filling for awhile before putting into the strawberries?
Shoot yes it sounds like your ingredients were too warm.
This is incredible added a little almond extract to it also and instead of graham cracker sliced almonds.

they will last for up to 24 hours. then they get mushy!!
They would be fine a day ahead.
They did not hold up for 24 hours for me- I made them the night before around midnight and served them at 5pm and they were really soggy, not good.

Can you freeze left over ? Cheesecake filling or refrigerated?
You could freeze leftover filling and it stays in the fridge for up to two weeks.

I made these for my wife on Mothers Day but added a twist. I took the stuffed strawberries and dipped the bottoms in semi sweet dark chocolate. Definitely a hit…

My first thought was to dip the strawberries in chocolate sprinkles rather than buy a whole box of graham crackers.
Guess I’ll have to try my hand at these, though I think they’ll happen to fall into a little melted chocolate before being served. Always seems to be some chocolate causing a happy mishap around my place…

If you use 1/3 cup of icing sugar, they work out to less than a gram of sugar per strawberry (that’s when I use two containers of strawberries and a few end up being tossed for being in rough shape).

I followed a link here to read the cheesecake recipe. I was touched by your opening words – as one of those “want to be moms” (we’ve been trying for six years), Mother’s Day is one of the most painful times of the year for me. My husband and I both have rockstar supermom mothers, and I enjoy celebrating them, but it takes all of my energy to not cry all day. It’s nice to know that someone cares and thinks about people like me on that day. I hope it doesn’t diminish your celebration too much, though. As a person who thinks about others so deeply, I bet you’re a fabulous, caring mother who deserves to be celebrated. 🙂

I just made them for my fiance for her birthday, I used the already made cheesecake mix from Philadelphia cream cheese, and drizzaling chocolate over top of them too.
I made something similar for Christmas eve instead of making cheesecake filling i used white chocolate cream cheese. It was delicious!

I made these strawberries for a potluck gathering today and they were a huge hit!! I transported them in a lidded plastic container for deviled eggs, which kept them nice and neat since they didn’t move. This recipe is a real winner!!

Of course it depends on the size of the strawberries but I would say around 25 strawberries.

FYI — You can cut the bottom of the strawberry to make a flat surface and they will stand upright on a serving try. Don’t slice so much that the filling will come out when you pipe it. A small flat surface is all they need.

I made these for a party and everyone loved them. I also dipped them in white chocolate then added blue sugar sprinkles for Memorial Day. One comment I have is to not make them ahead of time. Eat them the same day. I noticed that the next day they had a liquor taste to them and they were pretty soft.
Why not take these one step further – and make them chocolate dipped, cheesecake stuffed strawberries . . . . evil.

I made the strawberries with my daughter with her using creamy white frosting from a can. Colored some frosting blue…left some white and piped it into berries for Memorial Day…looked and tasted great!

I agree Mothers Day is mixed emotion wise. I miss my Granny and my Grandma and my Mother-In-Law. My Mom is in the USA and I am here in Greece. Anyway! I enjoyed your pictures and how you spent your day. Your strawberries look very good!

These are stunning and we use them liberally in our family. We use this recipe also as a snack for our dieting group and it really works with weight loss. Strawberries are great for the body and when used in a science based diet it causes great fat loss of the belly.
