BAKED EGGS RECIPE
We just got back from our cruise and I’m feeling the jiggle if you know what I mean. Unfortunately, the food was just meh. Not the worst food I’ve ever eaten but not the best either.
When your cooking for 8,000 people I know I can’t expect it to be top notch but I think they error on the side of bland to accommodate more palettes.
We ate more eggs on our cruise than anything else because how can you screw up a fresh omelette or fried eggs? They had the fake scrambled egg thingy at the buffet which wasn’t doing it for any of us at our morning breakfasts.
OVEN BAKED EGGS
No joke we eat so many eggs at our house. Boiled Eggs, Deviled, Egg Omelets, Eggs in Cookies…what???? (that totally counts)
When I have company over I don’t like slaving over a skillet as people trickle downstairs. These Cheesy Baked Eggs are the perfect breakfast recipe or weekend brunch dish.
WHAT ARE BAKED EGGS
The ingredients in the egg mixture are simple: Eggs, cottage cheese, a little flour, salt, and Pepper Jack Cheese. The cottage cheese completely disappears in these baked eggs. Trust me! Because I’m not a cottage cheese fan when it’s plain.
The great thing about these is that you can totally half it in an 8×8 or 9×9 inch pan.
EGG BAKE RECIPE
The first time I made this simple baked eggs recipe my husband ate them for lunch and dinner. Me like protein.
One time I left the pan of these eggs cooling on the counter when we were headed out for a date. My babysitter texted me, “What is that in the pan on the counter?”
“Why? Did you have some?” “You totally can have some, ” I said.
“Oh yes,” she said. “It was delicious. Can I get the recipe? My boys would love it.”
HOW TO MAKE BAKED EGGS

Preheat oven to 350 degrees and brush a 9×13 baking pan with melted butter.

Whisk together the eggs, pepperjack cheese (or any other cheese you like), cottage cheese, flour, and salt in a large bowl. Pour the mixture into the prepared baking dish.

Bake in the preheated oven until eggs are completely set about 50-60 minutes. Start checking it around 45 minutes. Cut into squares and serve with salsa, sour cream, guacamole, tomatoes, onions, fresh herbs or Parmesan cheese. Store leftovers in the fridge.
VARIATIONS:
- Add a chopped cherry tomato or sun-dried tomatoes.
- Add a handful of spinach.
- Finish it with a sprinkle of Parmesan or feta cheese.
- Spice it up with red pepper flakes.
- Add some bacon bits on top.
- Add some chopped veggies.
- Top with some herbs like chopped parsley, chives, or basil.
- Spice it up with some hot sauce.
FREEZER FRIENDLY
Freeze for up to 3 months.

Great recipe! So fluffy! Added scallions, cherry tomatoes, red pepper flakes, 1/2 the amount of cheese and a sprinkle of sautéed kielbasa.
I have made this so many times and in so many variations. We are leaving for a long vacation and I made this with ham, red pepper, chives, feta and pepper jack with about 1/2 the cottage cheese so it will be our supper tonight with an early plane ride in the am. I made this with my mom on a Sunday morning for brunch! Super delish.
Things I added:
A tablespoon or so black pepper, large dash of tumeric and smoked paprika, a generous sprinkle of onion powder, 3 small cloves of garlic – minced, and a good cup…cup and a half…or so of kale, minced finely.
Things I changed:
I used pink salt, and I added only about half a teaspoon (I use a grinder). The cheeses and cottage cheese all add salt and I didn’t want to over salt the dish.
I switched the 16 ounces of pepper Jack to a mixture of shredded cheeses – 6 oz pepper jack, 10 oz of a “Mexican blend” that has 5 different cheeses. Similar blends would be “taco” cheese blends.
Things I want to try:
I ran out and got the cottage cheese but I considered switching it for mashed soft tofu or using my ricotta, or cream cheese. I’ll have to try these variations later. I am sadly lactose intolerant and have to take a dairy pill when I eat delicious things like this so anyway to cut down on the dairy and add proteins like tofu I love to try to do.

My go to when I bring breakfast for colleagues or for a weekend meal. I throw in spinach and use Cajun seasoning and smoked paprika for a complex flavor and it is a hit! Love love!

Yes, absolutely. You can even bake the night before. It reheats well.
If baking the night before, do you think I could just heat the whole casserole in the oven in the morning? I have too many things going into the oven and not enough oven space!

Delicious! I made these changes: Omitted the flour completely for keto (and it was still fluffy!). Used Pam spray instead of butter, 8 oz pepper Jack, 8 oz cheddar, and only 1/2 t salt…everything else the same. Thank you so much!

I make this recipe often to meal prep breakfasts. It tastes delicious as is or with some sauted peppers and fresh spinach thrown in! It also tastes good even without the cheese if you need a lower calorie option.

Great recipe. I’ve made it twice now. First time I did a half batch and followed the recipe exactly except using cheddar cheese and PAM vs butter. It was very good but a bit too cheesy for me. FYI – the half batch only took 36 min to cook in an 8×8 glass dish. The second time I only added 10 oz shredded cheese, and threw in some black pepper, dill and 4 oz diced ham for personal preference. That combo was a big winner in our house and cuts some calories if that matters to you. This recipe is perfect to prep the night before because it is a thick mixture – so no worries of sloshing egg mix in your fridge or on the floor. I just gave it a quick stir in the morning and let it sit out on the counter for the time it took the oven to warm up. This will definitely be a repeat!

Soooo delicious! I too needed a simple breakfast for guests getting up at different times. I had all the ingredients so thought I’d try it and so glad I did! I just reheated a slice in a little butter and the bottom got golden brown and crispy even better! I used Parmesan cheese and garlic salt and diced onions plus a little red pepper flake and chili powder since I didn’t have pepper jack cheese – outrageously yummy! I’ll add diced tomatoes with green chili next time. Diced tomatoes on top adds that freshness too. My husband added sour cream on top but it’s already so good I don’t think it’s needed.

No, I’ve done it without flour. It’s definitely a little flatter but still good.

Modified as I didn’t have Pepperjack and instead added 1.5 cups gruyere and 0.5 cups sharp cheddar. Added one can diced mild green chiles and 5 green onions and 1 heaping teaspoon Dijon mustard. Also about 3/4 teaspoon cracked black pepper. Baked for 52 minutes. It was perfection! Never thought to add cottage cheese before – great recipe!

I discovered I had a lot more eggs than I thought, so I was looking for a recipe that used quite a few of them, and found this.
It looked tasty, so I gave it a go – omitting the cottage cheese partly because I don’t have any in stock and partly because I intensely dislike cottage cheese.
As you said in response to somebody else’s question, leaving that ingredient out did probably affect the texture – I’m guessing what I made was firmer than intended, but that’s fine by me.
I was only going to eat half of it, but it was so tasty I ended up eating three quarters of it in one meal, leaving the remaining quarter for my three dogs, who also enjoyed it.

I saw comments where you said to just leave the flour out. Do you think I could add some baking powder to try to get some fluffiness? If so, how much do you think I should add?

Excellent recipe, made it this morning for the first time, definitely not last. And let me attribute to the discussion: consider cutting down drastically on amount of salt (cottage cheese already got a lot of it), and if your hard cheese is of a spicy/aged variety, do yourself a favor and skip salt completely. I used only 5oz asiago cheese (for halved recipe), and with only 0.25 tsp salt eggs were definitely way too salty.
Good but next time I will add sausage and peppers and mushrooms. Lots of cheese- tastes nice and buttery!

Will spray the pan vice using the butter as it stuck to the glass pan; I added some onion and pepper for flavor, was a hit with everyone in the house my first time using this recipe. I used daisy cottage cheese and no one could tell it was in the food since only my husband and I eat cottage cheese.

I’m looking for a recipe for a dish called Eggs Moscovitch. It’s an Eggs Benedict derivative with black caviar in place of canadian bacon. The experience is eggs, hollandaise and cool fireworks that lights up your eyes. The proportions are critical.

Just so everyone is fully aware of my situation, I was looking for a quick delicious meal & BOY did I ever get LUCKY tonight!! I have NEVER IN MY LIFE BAKED AN EGG, Thank You CHRISTY DENNEY, for the AMAZING recipe!!
I am NOT big on recipes, due to the NEED to measure ingredients…so, needless to say I “eyeballed” ALL of the measurements!!
As for the original recipe; It looked delicious “AS IS”, however NO ONE in my family has a taste for cottage cheese, even though it is said to “disappear” in the egg bake & I, myself, suffer from SEVERE acid reflux, so I had to pass on the pepper jack cheese too…so I made some simple substitutions to suit OUR palettes.
To begin, I added a handful of flour to the egg, cream cheese & shredded cheese mixture while still in the mixing bowl!
I then substituted 16oz cream cheese for the cottage cheese. Since cream cheese is SO heavy & rich, I cut the shredded cheese down to 8oz, & I switched mild cheddar cheese for the pepper jack. I kept the salt, but ADDED fresh ground black pepper & Everglades Seasoning, as well as minced garlic. I also added 1 extra egg-I had one more in my 18 pack, so I figured “why not”. Finally I added a dash of skim milk to make the cream cheese more creamy (like cottage cheese is).
I kept the cooking temperature at 350 for the recommended 50 minutes…(it took ONLY 38 minutes & was firm to the touch & 100% cooked through…it looks & smells ABSOLUTELY AMAZING!!!!
Pics WILL be posted if possible, but this is definitely one of the SIMPLEST, most protein packed-nutritious, delicious. & EASY meals I’ve Made for my family in YEARS!! It’s MOST DEFINITELY going to be added to our brunch/dinner menu!
**Note: after serving to my picky son & discerning husband…WHO BOTH RAVED & went back for 3rds…this is my NEW go to dish for brunch parties!! What a HIT with EVERYONE! LOVE IT!! ❤️❤️
Next time I’m going to try adding shredded air fried potatoes & some meat…turkey sausage, pork sausage, crumbles of bacon, diced ham or Canadian bacon for sure, & most likely some baby Bella mushrooms, asparagus, fresh baby spinach leaves,etc… & OF COURSE a side of either corn muffins, whole grain toast, or biscuits!! YUM!!

You can add.an alternative flour. I had a friend visiting and used almond flour. There are others too. The texture might be slightly different but it works.
