Chicken Enchilada Roll Ups
Chicken Enchilada Roll Ups are a great Mexican appetizer recipe for parties! Easy to make ahead and easy to serve. These are filled with cream cheese, chicken, tomatoes, onions, and cheese.

There are just a few more days until the kids go back to school and I think we’re both ready for it.
They could eat the same thing every day but I’ve been brainstorming ways to keep their lunches more interesting.
These Chicken Enchilada Roll Ups passed the taste test and will most likely appear in their lunches next week (I froze some for later).
What I love about these is that they can totally be made ahead of time and they are great for parties because you can make a ton in about 15 minutes.
Start by flavoring your cream cheese with some Old El Paso taco seasoning.
Add a can ofdiced tomatoes and green chilies, some cilantro, chicken, cheese, and green onions.
Spread the mixture on a tortilla making sure to get to the very edges and roll it up tight.
At this point you can slice them up and serve or chill them until ready to serve and then slice them up.

Chicken Enchilada Roll Ups
Ingredients
- 2 (8-oz) packages cream cheese, softened
- 1 1/2 cups shredded Mexican cheese
- 2 tablespoons Old El Paso taco seasoning
- 2 cups shredded chicken, (rotisserie chicken works well)
- 1 (10-oz) can drained diced tomatoes with green chilies, well
- 1 teaspoon minced garlic
- 4 green onions sliced
- 1/2 cup chopped cilantro
- 8 burrito sized tortillas
Instructions
- In a large bowl, combine all of the ingredients (except tortillas) until well blended.
- Spread about ½ cup of the mixture over the entire surface of a tortilla. Roll up tightly. Repeat with remaining tortillas.
- Refrigerate until firm, at least 30 minutes. Also, if you chill longer they will be easier to cut.
- Slice into 1/2 inch slices with a serrated knife to prevent crushing and serve.
I make these every time we tailgate. They are the best and everyone devours them.

Hi, any tips on how to make these ahead of time without them getting soggy? How would you suggest to do them possibly the night before for lunch the next day?
They should be fine made the day before and won’t get soggy. just drain the tomatoes well
I make these. Put in 9×13 pan. Add salsa and cheese on top. Cover with foil and put in 325 degree oven for about 40 minutes. So good!!! And leftovers microwave well!

It’s the fourth ingredient. You can use rotisserie chicken or any cooked chicken you have.
This recipe was simply devoured!!! Everyone loved it and kept asking for more. I made some tweaks to accommodate the ingredients I had (used already marinated chicken and skipped the taco spices + used mild salsa instead of tomatoes and chillis). Kept everything else as is and was delicious. Also tastes very fresh and light despite the cheeses. Would definitely repeat

I cam across this recipe and I’d like to make them with corn tortillas. I prefer corn to flour, but uncooked I am no sure. What do you think? I’ll refrigerate them and hope that will soften them enough.
Corn is just harder to roll. A lot harder.
Could you used canned chicken breasts?
Yes. Not ideal but can be used in a pinch.
Yes! I’ve made them the past few years for Christmas Eve, super bowls, etc. & that’s all I ever use. My family devours them! 😁
I’ve made these lots of times, and I think freshly cooked chicken is best. If you want to save time, a rotisserie chicken would probably work.

I made these the day before my Grand Daughters first birthday party and they were a big hit. I made and froze them the night before and the next day I packed them in my insulated bag and drove an hour and ten minutes away (96+and humid) and sliced them up when we were ready to put the food out. I don’t like a lot of spice so I used mild Rotel but next time I will try the original ones also I did not use the cilantro as I don’t care for it.

The green chilies give it spice so I would do the diced tomatoes with added green chiles.

I made these, and just wanted to say….. They are awesome!!! My teens and my hubby thought they were great, and I have some picky eaters.
Yours look so big in the picture, and rolling mine ended up so small. Only about 1 inch by one inch. I figured it out though…. overlap two tortillas together and roll up and they are a perfect size and look just like the pic! We’re having them for dinner, but I’m going to make them as appetizers for Christmas, New Years, Super Bowl, etc, etc, etc. Thanks for the yummy recipe!

Im getting excited about making these for my ladies bible study tonight!! Im going to tweak it just a but bc they were out of Cilantro..in the Mexican food isle they have dried cilantro..would this work? Yes! But any cheddar cheese would work too.
I have made something like this with a package of ranch dressing, chilies, pimentos on burrito tortillas.. Will be nice to have a change with the chicken. Taking them to my family reunion.. They eat anything , so they should go fast

I love this recipe! So delicious and great for parties. I’m just wondering about freezing them. I can see from other comments that it’s best to freeze them as a whole roll up. My question revolves more around thawing them. How long do they take to thaw? And do you thaw them in the fridge or on just out on the counter? Yes, it’s better to freeze in a roll. Thaw in the fridge or counter depending on what time allows. Good luck! Hard to say how long to thaw – 30=60 minutes?

I made some roll-ups for the week ahead and they got soggy…the tortillas were wettish and mushy. How do I prevent that from happening?
Not these roll-ups but another recipe.
If you’re making these that far ahead of time then you should definitely freeze them until the day of.
These are so easy to make, and so tasty! We are still 2 hours before the start of the Super bowl and they are already getting devoured. What’s the the best way to slice these without smashing and disfiguring them
Definitely use a serrated knife and it really helps if they are super chilled in the fridge or even freezer for a bit.
I make several different versions using ham or imitation crab. I always use an electric fillet knife to slice.

I think canned chicken would work fine! Tuna – that’s probably a preference thing.

If the cream cheese is at room temperature you can easily mix it up with a spatula. That’s how I do it.

Just have to tell you that I made these for a family get together and they were a HUGE hit!!! My 10-year-old grandson called me about 2 weeks later asking me for the recipe! Has anyone tried freezing these? They are filed under freezer meals but I’m concerned that the cilantro and tomato will turn slimy after freezing. If anyone has done this successfully please let me know. Planning a big graduation party and the more I can do in advance the better!!

The diced tomatoes add some moisture to the rolls. You’ll definitely have a different flavor if you substitute but it could work.

I would freeze them in the rolls before you slice them. Put them in a resealable plastic bag.
