Easy Chicken à la king recipe

I love having people over for dinner but I started realizing how expensive it was getting every time I ran to the grocery store to get ready for the meal. So I am always trying to come up with easy and inexpensive meals for entertaining.
That’s the first thing that came to mind when I made this recipe. It’s easy, good, and cheap! Serve it over rice, noodles, toast, or a big fat biscuit like I did! My kids think this creamy chicken dish tastes like a crustless chicken pot pie.

INGREDIENTS

This classic recipe is made from simple ingredients.

  • CHICKEN –This is a great way to use up any leftover chicken or rotisserie chicken.
  • BUTTER
  • GREEN BELL PEPPER – Any bell peppers will do but I like to use green.
  • YELLOW ONION
  • PIMENTOS
  • CHICKEN BROTH OR CHICKEN STOCK
  • ALL-PURPOSE FLOUR
  • GARLIC POWDER
  • FRESH MUSHROOMS
  • GREEN PEAS
  • HEAVY CREAM – You can substitute whole milk for a lighter version.

WHAT TO SERVE WITH THIS

You can serve this over rice, egg noodles, toast, or a biscuit.

HOW TO MAKE THIS

  1. Melt butter in a large skillet. Add mushrooms, onion and bell pepper.mushrooms and onionsSaute for a few minutes until veggies are soft and mushrooms are golden brown.

  2. Sprinkle flour over mixture and stir for a few minutes. Slowly whisk in chicken broth into the flour mixture and cook over medium heat until thickened.chicken a la king sauce
  3. Reduce heat to low. Add the chicken, cream, peas, pimentos, and garlic powder. Simmer creamy sauce for a few minutes until heated through. Add salt and black pepper to taste. Store leftovers in an airtight container in the fridge.

Ingredients

  • 1/2 cup butter
  • 1 (8 ounce) package fresh sliced white mushrooms
  • 1 cup finely diced yellow onion
  • 1/2 cup green bell pepper, chopped finely
  • 1/2 cup flour
  • 2 cups low-sodium chicken broth
  • 3 cups cooked chicken, shredded or cubed
  • 1 cup heavy cream
  • 3/4 cup frozen peas
  • 4 ounces canned diced pimentos, drained
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste

Instructions
