CHICKEN PARM PASTA RECIPE

Whenever I’m trying to make one of those meals that makes my family so happy I lean towards anything like the classic Chicken Parmesan.

Chicken recipes are popular with my kids so I seriously have over ten versions of Chicken Parmesan on my blog because the flavors are just so good!

CRUNCHY TOPPING

Chicken Parmesan is known for its crunchy coating but this pasta doesn’t have it on purpose. I was trying to keep it simple. If you’re missing that crunch, cook 1/2 cup of Panko breadcrumbs with a tablespoon of butter on a stove top until golden brown and sprinkle on top after the pasta is finished.

HOW TO MAKE

INSTRUCTIONS

  1. Preheat oven to 400 degrees. Boil pasta in a large pot according to package directions.
  2. While pasta is cooking, add the olive olive to a large skillet over medium-high heat.
  3. Add the onions and garlic and cook for 1-2 minutes. Add the chicken and cook until done.
  4. Stir in the cooked pasta, marinara sauce, red pepper flakes, and Parmesan. Season with salt and pepper.
  5. Sprinkle with mozzarella and bake for 5-10 minutes until cheese melts. If you don’t want to turn on the oven just cover the skillet with a lid. Garnish with fresh basil or parsley if desired and serve. Store leftovers in an airtight container in the refrigerator.

WHAT KIND OF PASTA SHOULD I USE?

You can use any small or medium pasta shape. Ziti, penne pasta, rigatoni, shells, or elbows all work here.

WHAT KIND OF TOMATO SAUCE SHOULD I USE?

I like Rao’s marinara sauce. It’s the closest to homemade.

Ingredients

  • 12 ounces small or medium pasta (ziti, penne, etc.)
  • 2 tablespoons olive oil
  • 1/2 cup diced white onion
  • 4 garlic cloves
  • 1 lb ground chicken, (you can also you diced boneless skinless chicken breasts)
  • 24 ounces marinara sauce , (I like Rao's)
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • (optional) basil for topping
