CHICKEN SALAD SANDWICHES

I know chicken salad sandwiches aren’t rocket science and that most everyone has their own version. My friend Katie Fields made this version a while ago and it ended up being just what my family liked.

Katie and I both did a cooking segment for our local TV station at my house and Katie made these. They quickly turned into our lunch.

Chicken Salad Sandwiches

POSSIBLE ADD-INS:

Chicken Salad is a blank canvas for whatever you want to add in. This version has cashews, hard boiled eggs, and grapes but here are some other options.

  • NUTS – Cashews, sliced almonds, pecans, or walnuts would be a great addition to this salad.
  • FRUIT – Common fruits to add in are sliced grapes, dried cranberries, or diced apples.
  • SEASONINGS – You can add onion powder, garlic powder, Worchestershire, or Season All.
  • FRESH HERBS – Some chopped fresh parsley or dill would be a great addition.

Chicken Salad will keep in the fridge for 3-5 days.

Ingredients

  • 4 cups cooked chicken breasts, diced, I boiled mine
  • 2 chopped hard boiled eggs
  • ¾ cup miracle whip (or mayonnaise)
  • ½ cup chopped onion
  • ½ cup chopped walnuts, cashews, almonds, or pecans
  • 1 cup halved purple grapes
  • Salt and pepper

Instructions
 

  • Combine all ingredients in a large bowl.
  • Add salt and pepper to taste.
  • Serve on croissants or bread.
