CROCKPOT POTATO SOUP
I’m not handling this cold weather gracefully.
I know my husband dreams that someday we will move to somewhere colder but I really can’t do cold weather.
Like really. Today it was 39 degrees here in Florida and I wanted to huddle in a ball and do nothing all day. Is that normal?
Or are some people invigorated by the cold weather? I braved the cold during my college years and I don’t think I took off my pea coat the entire four years.
This easy potato soup recipe has a really high taste to effort ratio. Just throw it in the Crock Pot and you have a delicious soup. Sure I have this Creamy Chicken and Potato soup but this one is so easy!
INGREDIENTS
- FROZEN HASH BROWNS POTATOES – you can use shredded or diced potatoes. Some people like to use fresh here. Just use the same amount doesn’t really matter what kind of potatoes as long as you cook them until fork tender.
- CHICKEN STOCK OR BROTH – you could also use vegetable broth here. I like to use low sodium chicken broth so I can control the salt.
- CREAM OF CHICKEN – makes it a thicker soup but has so much flavor.
- CHOPPED ONION – I like to use yellow onions here.
- PEPPER
- CREAM CHEESE – adds that creamy base to the soup. There’s no heavy cream or sour cream so this is the creamy factor.
- TOPPINGS: cheddar cheese, crumbled bacon, sliced green onions
HOW TO MAKE CROCKPOT POTATO SOUP

In a slow cooker, combine potatoes, chicken broth, soup, onion, and pepper.

Cover and cook on low for 5-6 hours. If your potatoes are still in big chunks you need to cook it longer. They will start falling apart when it’s ready. You don’t have to use an immersion blender. In fact, it’s good with a few chunks or however much you want to blend it.

Add the cream cheese and cook 30 minutes or until cream cheese is melted, stirring occasionally, until combined.

Top with cheese, cooked bacon, or sliced green onions if desired.
HOW TO MAKE POTATO SOUP
This is the best potato soup recipe with a creamy texture. Add some extra cheese on top to make it an out of this world cheesy potato soup.
If you’re someone who gets scared from the one cream of chicken soup in this than you can make this Creamy Ham version of Potato Soup. It’s great too.
Then if you’re a mean mom like me you’ll make your kids stir in some steamed broccoli. They actually didn’t mind at all.

FRESH POTATOES
If you don’t want to use frozen potatoes you can use fresh potatoes like Russet potatoes or Yukon Gold potatoes. Dice the potatoes and continue with the directions.

IS THIS GLUTEN-FREE?
No. Cream of chicken soups usually are thickened with flour. You could find a gluten-free version.

Ingredients
- 1 (30 ounce) bag frozen hash-brown potatoes (I used cubed)
- 2 (14 ounce) cans chicken broth, (see Note)
- 1 (10.75 ounce) can cream of chicken soup
- 1/2 cup chopped yellow onions
- 1/4 teaspoon ground black pepper, (more to taste)
- 1 (8 ounce) package cream cheese, (softened)
- Optional Toppings: cheese, bacon, sliced green onions

I have made this many times over but have a question. I am going to be making this for a family after a funeral service. I need to make it for that reason the day before and then just refridgerate in the crockpot overnight. Do you think it will reheat well? Thinking start out on high and keep and eye on it. May also have to add some water/ cream or milk if needed. Thanks

I made this and it was delicious! The last time I made it I didn’t have any cream cheese so I used sour cream. But my biggest change was to replace cream of chicken with cream of bacon! I think the bacon flavor is really good in potato soup.

I liked this receipe! I used the cream of chicken with herbs, I added the spices I wanted & extra pepper and diced ham. My only question is this: when I added the cream cheese, either my soup was maybe too hot (my crock pots all seem to run super hot) or something because it didn’t melt, very small bits but not melted 100%. Otherwise, this was a very flavorful quick and easy soup!
Keep stirring it and the cream cheese will melt.
I used sweet potatoes instead and added celery and a few carrots.. by far the best soup I’ve ever tasted in my life,thanks for the recipe

This soup was the best homemade potato soup I have ever made! I used what I had on hand….a 20 ounce bag of refrigerated bagged hash browns. Since it was short of the 30 ounces called for, I had some baby yellows on hand and added 10 ounces of those chopped in small cubes. (Added some nice fresh texture too!). Added one 32 ounce of chicken brother since I didn’t want to waste 4-6 ounces left in one box. THIS SOUP WAS SUPREME! Thank you for my now go to recipe!!!

Use boullion and cut up your own potatoes to save a little more. Make your “cream of ___” from scratch.

I love the people who are deeming this “unhealthy and expensive”. Um, if you are worried about the calories, then stay away and for the ones who said it was expensive, for about $15 or less you make this depending on whether or not you are adding ingredients or leaving some out. So, if you are feeding a family of four, it comes out to be about $3.75/ serving, about half the price if you went out and ate with your family soooooo, what’s the problem? I think it was delish! I added a bag of frozen peas and carrots and changed the cream of chicken to a condensed cheddar cheese, and changed the chix broth to veggie stock (I’m a veggie, that’s why I had to modify) then added a bit more shredded because I like cheese. That is all the modifications I made and it was super great! I paired it with some nice warm rolls. I originally was going to buy a bag of potatoes and go that route, but, then I saw this and figured why not give myself a break? Glad I did! Thank you for a simple, easy to modify and inexpensive meal idea!

Now, I just made your Creamy Potato Soup for the crock pot on the stove top. I had a rough day and was in dire need of comfort food. I followed the recipe except I used cream of celery soup (what I had on hand). I also used bacon from the beginning. Brought everything to a boil and turned it down to a simmer for 45 minutes. Topped it off with Garlic croutons. YUMMY!! YUMMY!! Thank you for all you do!

It helps to thaw ahead of time but I never have and my potatoes are never hard. Hmmm. Sorry. Looks like thawing might be better for your situation.
This is the creamiest, most delicious potato soup ever! My only question is, can you cook this on the stove top and how? and will it be the same as the slow cooker? We just moved and want to make this for. Friend who just had a baby, however, all our things are still in storage, including the slow cooker!
I was a little skeptical about 5 hours in because the potatoes didn’t look right for a potato soup. I used diced frozen potatoes and frozen chopped onions (I let them both thaw for a few hours first). I added a cup of mild cheddar cheese, extra salt and pepper, and let it cook for about an hour and a half more than the time it stated. I typically don’t take the time to leave reviews, but holy cow! This is the most delicious potato soup I’ve ever tasted and it’s so simple! We ate ours with crackers and microwavable bacon. Definitely saving this recipe for future use. So, so, so good!

Great recipe. Easy and yummy. Wonderful on a cold day when you don’t want to spend a lot of time cooking. Great base for add on’s, too, though we like it just like this. I use the toppings – bacon n, shredded cheese and chopped green onion. Add hot bread and a salad. Fabulous!

This is great! I make it all the time. To keep it vegetarian I use vegetable broth and I use Pacific foods brand Cream of Mushroom. I also like to add fresh parsley and chives towards the end. Thanks!

I made this tonight and my potatoes didn’t cook/soften ☹️ I was so excited after reading all the delicious comments and the smell and taste is amazing, the only problem is that the potatoes still taste raw. Its been cooking for 9 hours now. What could I do to fix or avoid this next time?

Yummy, yummy, yummy. Mine turned out much thicker tha traditional soup but I still loved it. Next time I will cook it only 3 1/2 hrs only though. Funny story. I made it for my Red Hat annual soup supper…its NEXT Sunday, not today. Can you say senior moment lol. My neighbors were the winners here. I absolutely will make it next week.

It is good, very rich and somewhat expensive. Would never make for my family as definitely not a recipe if you are budget minded and looking for a truly healthy meal.

Just ate a bowl of this with a French roll on the side. Good stuff! We added a bunch of ham at the start and it turned out fine. May add a few more seasonings of some sort next time, but the whole family really enjoyed it. Thank you!
Tried this recipe before serving guess next week. The potato base does not have a lot of flavor.Salt definitely needs to be added and other spices- unsure what at this point.. Have not added the toppings yet since I don’t have bacon cooked up. Not a fan of bacon in food. Need to tweak it more. Hope the other soups on this sight

Love this recipe! I’ve been looking for one with cream cheese that doesnt have insane amounts of ingredients and this is perfect! I actually used small diced normal potatoes and the husband insisted we add sautéed bacon and corn and the results were fantastic! Will definitely be making again!
