CROCKPOT POTATO SOUP
I’m not handling this cold weather gracefully.
I know my husband dreams that someday we will move to somewhere colder but I really can’t do cold weather.
Like really. Today it was 39 degrees here in Florida and I wanted to huddle in a ball and do nothing all day. Is that normal?
Or are some people invigorated by the cold weather? I braved the cold during my college years and I don’t think I took off my pea coat the entire four years.
This easy potato soup recipe has a really high taste to effort ratio. Just throw it in the Crock Pot and you have a delicious soup. Sure I have this Creamy Chicken and Potato soup but this one is so easy!
INGREDIENTS
- FROZEN HASH BROWNS POTATOES – you can use shredded or diced potatoes. Some people like to use fresh here. Just use the same amount doesn’t really matter what kind of potatoes as long as you cook them until fork tender.
- CHICKEN STOCK OR BROTH – you could also use vegetable broth here. I like to use low sodium chicken broth so I can control the salt.
- CREAM OF CHICKEN – makes it a thicker soup but has so much flavor.
- CHOPPED ONION – I like to use yellow onions here.
- PEPPER
- CREAM CHEESE – adds that creamy base to the soup. There’s no heavy cream or sour cream so this is the creamy factor.
- TOPPINGS: cheddar cheese, crumbled bacon, sliced green onions
HOW TO MAKE CROCKPOT POTATO SOUP

In a slow cooker, combine potatoes, chicken broth, soup, onion, and pepper.

Cover and cook on low for 5-6 hours. If your potatoes are still in big chunks you need to cook it longer. They will start falling apart when it’s ready. You don’t have to use an immersion blender. In fact, it’s good with a few chunks or however much you want to blend it.

Add the cream cheese and cook 30 minutes or until cream cheese is melted, stirring occasionally, until combined.

Top with cheese, cooked bacon, or sliced green onions if desired.
HOW TO MAKE POTATO SOUP
This is the best potato soup recipe with a creamy texture. Add some extra cheese on top to make it an out of this world cheesy potato soup.

Ingredients
- 1 (30 ounce) bag frozen hash-brown potatoes (I used cubed)
- 2 (14 ounce) cans chicken broth, (see Note)
- 1 (10.75 ounce) can cream of chicken soup
- 1/2 cup chopped yellow onions
- 1/4 teaspoon ground black pepper, (more to taste)
- 1 (8 ounce) package cream cheese, (softened)
- Optional Toppings: cheese, bacon, sliced green onions

This soup is so wonderful. My picky husband asks for it. He likes his soups a little soupy so I added an extra can of broth. Then I decided to just double the recipe. Now I have so much that I’d like to freeze it. Can I do that?

This is exactly (or almost exactly) how Ive been making mine for years. But I use cream of celery soup. Instead of bacon, I add diced ham. It’s delicious and a family favorite on a chilly evening.

I made this tonight for the first time. Let me start by saying I was stoked to find a crockpot potato soup recipe that didn’t call for sour cream! (My husband is a Debbie-Downer and despises sour cream!)

So, I accidentally added the cream cheese with everything else in the beginning. Fingers crossed that turns out okay.

I added a packet of ranch seasoning to it! Also added a a couple handfuls of bacon bits when I added the cream cheese. It was delicious!

Am I able to use real chopped potatoes instead of the frozen?
I made it today with fresh potatoes and it was perfect! I sauteed the onion for about 5 minutes, then added the potatoes and a 32 oz box of broth. I let the potatoes and onions simmer in the broth at a low boil for about 12 minutes before adding the rest of the ingredients.

Love this recipe, but have changed a few things up … particularly when I’ve already started it and realize I don’t have all the ingredients. 🙄
I toss sliced red and gold potatoes in olive oil, paprika and black pepper, then roast them skin side up and salted. I semi-mash them before adding them to the broth. I also include 3 or 4 raw potatoes diced up to add a little chunk for texture. We’re not hash brown fans, so this goes over well with the fam.
Condensed/evaporated milk also works well if you don’t have or like yogurt or cream cheese.
Lastly, leftover chicken breast or a roasted chicken from the store can be diced up and added. I tend to overcook chicken all the time, but rather than trash it, I just make a soup with it. May sound odd, but it’s awesome in this soup.

I made this recipe as listed except I used 6 cups of russet potatoes chopped in pieces. When put in bowl I topped with a little bit of shredded cheddar cheese and crumbled bacon pieces.

This is a fantastic soup! So easy to make, and with good flavor. I added some garlic powder, and topped it with shaved parmesan. I think adding ham would make a good variation.

This has been my fav way of makeing potato soup for years but if you wanna really make it taste 300×better Add garlic powder ,onion powder ,& steak seasoning but only Fiesta brand steak seasong it’s literally the only kind I like I generously add these 3 ingredients to almost everything I cook & ittalian seasoning or evin just oregeno i use half & half with both as for this recipe specifically I would add some cooked & drained ground beef & a extra can of cream of something soup fill free to use your favorite reather it’s cream of chicken , potato, celery, vegetable ,mushroom or mix 2 of any & also I like to add onion & bell pepper to alot of recipes but I don’t like chunks so I blend them or puree I guess it’s the term with a little liquid first great for getting kids to eat veggies to & bring the flavor out alot more I do that for soups meatloaf spaghetti enchilada& more if you do thin use less onion powder of course

Idk if tator totts would be as good cuz of the breading but you can and it wont ruin it I have cut up frozen fries and evin cooked forms of instant potatoes like scallops potatoes and turns out great every time I just don’t like tator totts I good way to thicken it is instant mashed potatoes & cheese
I made with real potatoes diced up, and cream of celery soup instead of cream of chicken. I still used chicken broth. It was fabulous.

I was really disappointed in this recipe after making it. Even after 6 hours of cooking the hash brown potatoes never fell apart, I had to mash them up (despite being thawed when I put them in) It doesn’t taste anything like potato soup it tastes like chicken soup with a slight potato after taste. Even after adding cheddar cheese and bacon it still tastes like chicken soup with a slight potato after taste. I’m hoping if I add some sour cream and more potatoes it will taste better.

Maby try it agen but use cream of potato or cream of vegetable soup you can spice it up with garlic & onion powder I also use oregeno Italian seasoning & Fiesta brand steak seasoning don’t use any other brand and any kind of potatoe is fine as long as it’s cooked threw if you do not want any potato chunks thin use instant mashed potato & maby frozen shredded

I usually always end up doing that! I’ll decide last minute I want to do this Slow Cooker soup and put it on high for about 3 hours. Always turns out yummy!

I just gave it a try and yes you can! One difference though: Do not add the cream of chicken soup or cream cheese until you have pressure cooked it.
So add the potatoes (I used frozen hashbowns), onions, chicken stock, pepper and stir. Cook for 7-8 minutes on high pressure. Quick release and then stir to break up the potato shreds. Stir in the cream of chicken soup and cream cheese.
Turns out perfect. I’ve tried it crockpot and instant pot and it’s identical in the instant pot this way.
I use cream of mushroom soup for flavour enhancement.

Simple and quick recipe. I followed the recipe to a T and mine did not come out creamy. I added cheese in the end to give it more flavor and had to mash the potatoes and add some cornstarch to thicken it.
Can you double the batch? And if so how long should it cook?
It’s a pretty full crockpot as is. If you have a big enough crockpot you can double it. Cook time should be the same.

Usually I print off my favorites and save them in my cupboard. But, this was SO GOOD, I had to tell everyone else with a review. This is better than my loaded potato soup that requires chopped bacon, bacon grease, a roux and an hour of prep time. Full disclosure, I made this on the stove top after my errands ran long. Took roughly 45 minutes all together, being cautious to not burn the bottom as I have a bad habit of. I added some green peppers in with my onions and potatoes while boiling, followed the cream cheese step and tasted. Super good! I could have very well stopped right there and had no complaints! But, I then mixed in some diced ham, 1C, and some cheddar cheese, roughly 2C– might as well throw out any other potato soup recipes, because they don’t hold a candle to this!

How many russet potatoes do you need if using fresh potatoes?
I really couldn’t say since every potato varies so much. I would weigh 30 ounces of potatoes at the store since that’s what the recipe calls for.
How does this recipe do for reheating the next day?
This is my FAVORITE soup!!! I literally make it at least 3x a month. I follow the recipe to a T but I always add garlic and onion powder to give it a lil more flavor. I top it with green onions, bacon, cheddar cheese and pepper!! I’ve also made this in my instant pot and it cuts cooking time down to 20 minutes! soooooooooooo good thank you so much!!

It depends on your crockpot but it could be done in 4 to 6 hours.
My youngest is a vegetarian. What can soup do you recommend besides cream of chicken?
I have done several different “cream of…” soups when we were out of cream of chicken and they have all been good.
Oh, it definitely works with other “cream of” soups! My best friend is a pescatarian and I’m making his with vegetable broth and cream of celery this time. I started doing it when he came over while I had some “regular” in the crock pot and he was jealous lol

Tried to make this today and it did not come out at all like the photo. I used frozen breakfast potatoes with peppers and onions, which may have been a mistake. They are still crunchy after 6 hours of being in the crockpot. Soup is bland, no flavor.
The original recipe says to thaw the hashbrowns. This was probably the mistake.
I don’t see anywhere that the recipe calls for thawing the potatoes. Where are you seeing that?
Oh shoot. Well that doesn’t sound right. Every slow cooker is different. You might need longer. Did you add toppings? Potato soup is much better with toppings.

Yes! I add chopped-up ham steak to mine, about 2-1/2 cups diced, or about 1 whole ham steak. Would also be good with smoked pork chops or even the pre-diced ham.
I used jalapeno cream cheese. Gave it a bacon-wrapped popper taste. Delish! Also used cream soup with herbs. 4stars & will definitely make again.

I’ve been making this recipe for years now, it is always a hit! My partner and his son hate potato soup because we both grew up with the milky runny kind from years ago. When I make this they love it. I dont know how many people I’ve given this recipe to after taking it up to our local lodge for a Sunday lunch. It’s in the crock now for dinner tonight!

Just need to add that your calories are almost half off the actual total amount.
I followed the exact recipe (and even used low-cal cream cheese, and chicken soup), and when inputting the ingredients into MyFitnessPal, the whole calorie total of the meal comes to 2930 calories… whereas your calculation stated above is 212 x 8 = 1690 calories
There’s no way the soup is 8 portions unless it’s a small side dish instead of an entrée, as an entrée it’s at most 5 servings which is 586 calories a portion or 732 calories if split into 4 portions.
That being said, I used a whole bag of frozen McCain hashbrowns, the calorie amount would be slightly lower if using the same quantity of fresh potatoes cut into small cubes.

Worst potato soup I have ever had, if I could give this negative stars I would. I made it exactly like the recipe called for and it looked nothing like the picture in this article and tasted absolutely terrible. Do not try this recipe, look elsewhere this recipe is horrible!!!!!!

Awesome recipe and my boys favorite! We use the Instant pot for 35 minutes and it is so quick and easy. We use some of the precooked bacon chopped in before we cook it. Sometimes it doesn’t need the whole package of cream cheese it is so delicious on its own. Yum, yum!

I’ve made this several times and it’s a big hit every time. I double the recipe for leftovers and last time I forgot to get enough chicken broth so I made chicken boullion instead and it was just as good.
