CREAMY SHRIMP AND MUSHROOM PASTA
As Mother Day approaches I’ve been thinking about my mom and what I would make her for Mother’s day if I lived by her. Whenever we go to a restaurant together and the waiter takes our order, my mom always pretends she’s still looking and tells me to order first. I go ahead and order then the waiter turns to my mom and asks, “What will you have tonight?”
“I’ll have what she’s having,” she says with a smirk and motions my way.
Every. Single. Time.
She’s the little sister I never had. (Love you mom!)
My mother-in-law, on the other hand, is easy. I could look at any menu and guarantee I know what she will order. If there’s a creamy seafood dish on the menu…bam…that’s it.
This Creamy Shrimp and Mushroom Pasta is just what Sheri would like. Except she might like double the sauce but it tasted great this way as well.
This came together really fast so if by chance you are cooking for your mom tomorrow and have no idea what to cook, here you go. It’s looks gourmet and impressive even though it’s easy.

Creamy Shrimp and Mushroom Pasta
Ingredients
- 6 ounces fettuccine or linguine
- 8 Tablespoons butter, divided
- 8 ounces fresh, sliced mushrooms
- 2 garlic cloves, minced
- 4 ounces cream cheese, cubed
- 1 pound cooked medium shrimp, tail off
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh basil, chopped (you can substitute 1 teaspoon dried basil if that's all you have)
- 1/2 cup boiling water, (reserved from your noodle pot)
Instructions
- Boil and generously salt a large pot of water and cook your pasta according to the package directions. Make sure to save 1/2 cup of pasta water for later in the recipe.
- In a large skillet melt 2 tablespoons of butter over medium heat and saute mushrooms until soft and brown. Season with salt and pepper.
- Reserve cooked mushrooms and melt remaining butter in the skillet. Add minced garlic, cream cheese, and herbs. At this point, the cream cheese will look scary and lumpy. Don't worry, it will smooth out later when we add the water.
- Simmer cream cheese mixture until well blended. Get a scoop (1/2 cup) of boiling pasta water from your noodle pot and mix it in, stirring and whisking quickly until sauce is smooth.
- Keep sauce hot and add shrimp and mushrooms, mix well and simmer (stirring often) until everything is hot and thickened, about 5-6 minutes.
- Toss sauce with cooked noodles and serve.
Notes
Do I cook the shrimp in butter or dry?
I use cooked shrimp but if yours aren’t cooked, cook them in a little olive oil or butter for a few minutes.

It was so good I didn’t have raw shrimp so I added a bag of cooked shrimp and put in the sauce after it thickened…next time I’ll top it with some grated parmesan..Will definitely make this again…

Made this. It’s good but next time I’m going to add more garlic, salt, pepper, and top with fresh grated parmesan cheese. Maybe double the sauce to make the noodles more saucy.

For the creamy mushroom and shrimp recipe, how may does it serve?
It says at the top of the recipe 4 servings.
When making the Creamy Shrimp and
Pasta dish do you cook the shrimp in
water or something else like butter or
oil etc. I assume it was water.
The shrimp cooks in the sauce mixture. No need to cook it before.
I’m confused. In your instructions the second step is to cook the shrimp for a couple of minutes in a pan until pink and later add the shrimp to the sauce. Do or don’t cook the shrimp before you put it into the sauce?
You semi cook them. They finish in the sauce
Again, how to semi cook them? In butter or what?
This was delicious. My husband and sons devoured it and my oldest son’s college girlfriend texted me asking for the recipe. Easy and yummy!

This dish is now on my favorites list. My significant other said it’s good enough for a 5-star restaurant, and he’s always honest about any new recipe I try. I did add asparagus and toasted pine nuts. Next time I think I’ll add some lemon as someone else suggested.

Have you ever thought of using 2/3 cup dry white wine after sauteing the mushrooms instead of hot boiling water to thin out the cream cheese.
I’m sure that would be wonderful. I haven’t tried it though.

You can never go wrong with garlic herb butter in my opinion.
Will the taste be affected if I didn’t put the basil and parsley? And will it also affect if I add other kinds of vegetables like broccoli in it?
Yes it will be a little less flavorful. I think broccoli would be good in it.
Does white wine or chicken broth work in place of the water?
Of course. I think that would be a great addition.
I made this last night and it lacks dimension. I think maybe adding some sun dried tomatoes or spinach or both would add to the flavor profile. It looks beautiful but just tasted okay.

Just made this recipe and WOW! it’s delicious. You can easily substitute any pasta (I used tortelloni) or any protein. I don’t care to know the calorie content, but all things in moderation, right?! Thanks for a great meal!

I always try to really salt the pasta. I’m talking about a 1/2 tablespoon of salt. That really helps flavor the pasta.
