CREAMY TOMATO BASIL CHICKEN
It’s the week after Thanksgiving and the last thing I want to do is cook since that’s all I did last week. We literally just threw the last of our leftovers out and now I have no other choice but to cook for my family.
In effort to make things as easy as possible I examined what I had in my fridge and what my family would actually eat. My family loves anything tomato basil flavored. Slow cooker meals have been my lifesavers lately.
Just throw the chicken, crushed tomatoes, garlic powder, and some seasonings in the slow cooker and you’re good to go. I have a lot of readers that work all day so if you want you can throw the cream cheese in at the beginning or the end, whichever one works better for you.
My mother-in-law actually introduced me to slow cooker liners years ago. The clean up is so easy, it’s amazing.
After the chicken has been cooking for 3-4 hours, take it out and shred it. It will be nice and moist after cooking away in the sauce. Return it to the pot and stir it until it’s nice an creamy.
As with any slow cooker dish, it’s nice to add some fresh flavor at the end to brighten it all up. Don’t be shy with the basil as it plays so well with anything tomato based.
I know it’s not pretty but believe me it’s delicious!

Creamy Tomato Basil Chicken (Slow Cooker)
Ingredients
- 1 1/2 lbs chicken breasts
- 1 teaspoon garlic powder
- 1/2 teaspoon Italian seasonings
- 1 (28 ounce) can crushed tomatoes
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 3 tablespoons chopped fresh basil leaves
- 1 teaspoon sugar, (cuts the acidity of the tomatoes)
- Reynolds slow cooker liners
Instructions
- Place chicken in a 6-8 quart slow cooker lined with a Reynolds slow cooker liner. Sprinkle with garlic powder and Italian seasonings. Pour crushed tomatoes on top. Cook for 3-4 hours on low or until chicken is done.
- Remove chicken from the slow cooker and shred with two forks. Return chicken to slow cooker and stir in the cream cheese. Cook for an additional 30 minutes or until cream cheese is combined. Stir in Parmesan, basil, and sugar.
- Serve chicken over cooked pasta or rice.

I did it on low but my crockpot cooks really fast.

Nope it’s different.
I threw this together yesterday since we had all the ingredients. It looks brand, but tastes better, and was super simple. Leftovers are good the next day too. Thanks.
