If you name her, she will come. That’s my theory. I’m in the final countdown until this baby joins our family. Hopefully this week.
I so graciously gave my husband the rights to naming this baby girl but as the big day comes closer, I’m second guessing my decision.
He’s in no rush to come up with a name. We usually decide after a couple days in the hospital with the birth record people breathing down our neck and I don’t want to do that this time.
I just don’t love any names yet. We’ve both made lists and only have one name that matched and we both weren’t ecstatic about it. So…any ideas?
I like names that are not too crazy but not too common. I already have a daughter named Gracie Belle (after my grandma) so it can’t be anything like that.
It’s no secret that I’ve been all about meat this pregnancy. This Cuban shredded beef is moist and tender with a crispy flavorful outside.
The meat is infused with garlic and onion flavor (like this Korean beef) and brightened with fresh orange and lime juice just like this Mojo Pork Tenderlion.
Eat it with a side of rice and beans or roll it up in a tortilla for a savory meal. I’m in the heart of Cuban cuisine here in south Florida and I would take this over any Cuban restaurant version I’ve tried.
HOW TO MAKE VACA FRITA
Start with cutting your beef roast into chunks. Simmer for about 1 hour and 45 minutes.
After you’ve cooked the meat, cover it in foil and pound it with a meat mallet. If you don’t have a meat mallet, use a large saucepan and get some aggression out.
I felt a little like a Stepford wife gone psycho here. You can even see my son in the background doing his homework – probably thinking I had lost it as I splattered him with shredded meat.
TRADITIONAL CUBAN DISH
After you’ve beaten it into submission, crisp it up in a saucepan and add garlic, cumin, orange juice, and lime to brighten up the flavor. If you’ve made these Pork Carnitas, you’ll find these are a very similar crispy beef version. The perfect Vaca Frita has crispy edges. Vaca Frita literally means fried cow.

Vaca Frita
Ingredients
- 2 pounds boneless beef chuck-eye roast, pulled apart at seams, trimmed, and cut into 1 1/2-inch cubes
- Kosher salt and pepper
- 3 garlic cloves, minced
- 1 teaspoon vegetable oil
- 1/4 teaspoon ground cumin
- 2 tablespoons orange juice
- 1 1/2 teaspoons grated lime zest plus 1 tablespoon juice, plus lime wedges for serving
- 1 onion, halved and sliced thin
- 2 tablespoons chicken broth or vinegar
Instructions
- Bring beef, 2 cups water, and 1 1/4 teaspoons salt to boil in 12-inch nonstick skillet over medium high heat. Reduce heat to low, cover, and gently simmer until beef is very tender, about 1 hour 45 minutes. (Check beef every 30 minutes, adding enough water so that bottom third of beef is submerged.) Remove lid from skillet, increase heat to medium, and simmer until water evaporates and beef starts to sizzle, 3 to 8 minutes.
- Using slotted spoon, transfer beef to rimmed baking sheet. Pour off and reserve fat from skillet. Rinse skillet clean and dry with paper towels. Place sheet of aluminum foil over beef and, using meat pounder or heavy sauté pan, pound to flatten beef into 1/8-inch-thick pieces, discarding any large pieces of fat. Some of beef should separate into shreds. Larger pieces that do not separate can be torn in half.
- Combine garlic, oil, and cumin in a small bowl. Combine orange juice and lime zest and juice in a second bowl.
- Heat 1 1/2 teaspoons reserved fat in now-empty large skillet over high heat (don't discard the rest yet). When fat begins to sizzle, add sliced onions and 1/4 teaspoon salt. Cook, stirring occasionally, until onion slices are golden brown. Add chicken broth or vinegar and cook until liquid evaporates. Remove onions from the pan. Return skillet to high heat, add 1 1/2 teaspoons reserved fat, and heat until it begins to sizzle. Add beef and cook, stirring frequently, until dark golden brown and crusty, 2 to 4 minutes. It's important to get it nice and crisp.
- Reduce heat to low and push beef to sides of skillet. Add garlic mixture to center and cook, stirring frequently, until fragrant and golden brown, about 30 seconds. Remove pan from heat, add orange juice mixture and onion, and toss to combine. Season with pepper to taste. Serve immediately with lime wedges. Can be used as taco filling or just plain.

Please give her a name that is gender specific. I hate it when I have an appointment with a person whose name could either be male or female and I’m waiting for the surprise because I don’t even know who it could be in the waiting room! Also, please stay away with those “one of a kind” spelling fiascos as the child will spend a lifetime spelling the name correctly for others. My choice would be Laura for her first name.
I have three girls…Manning, Evie (short for Evelyn, short E sound), and Mary Frances. All family names. You probably couldn’t get away with naming your girl Manning since your husband plays football! (We did NOT name her after the football Mannings:)!)
I know. I like the name Payton but I think people would think it’s after Peyton Manning.

I make Ropa Vieja (Spanish name of this dish) all the time and I use flank steak meat and can cook it in the pressure cooker. It will be tender and healthier.

After having my 6th child (4th boy) in January, I was certain I was done and (no joke), the night he was born I had a dream and I was laying in a hospital bed holding a baby girl and and it came into my head, “and you shall call her Ava Ellason (Ella)”. Never in a million years would have thought of that name. Guess Heavenly Father was trying to tell me something about my plans to be finished! :/
My other girls are named Caitlin Reagan and Phalin (like Fallon) Elise. My husband and I never agreed on a name and he named both of our girls!

Love the names! That’s so funny about the beef. I’m sure you could just shred the meat. That’s the whole purpose of the pounding is to separate and tenderize the meat while keeping the moisture.

Never had to when there’s a Cuban Cafe around every corner and even inside the grocery stores down here, right?! You make it look so fun! Have a happy and blessed “labor” day (couldn’t resist!)

How about the name Rose? It is not popular and I think it is a very beautiful old name (it is also my daughters name)! I am pregnant with my 4th and it is a girl, so I am actually looking for a name too…one that goes with Rose. I agree with you, I don’t like a name that is too crazy but not too common either. You named one daughter after your grandmother. Why not name this little one after his grandmother? Even if the name is a very much used name, like Jane, that could be a middle name. You could also use alternate spellings of names … ie Meridith (Meredith), Emelia (Amelia or Emilia)

I love the name Julia. It is traditional, and feminine without being strange or too old fashioned. I am not a fan of children with hard to spell or pronounce names. I also don’t think there should be 3 Emmas in every class.
Naming cute kids is hard…especially when you have already used some really good names on your 1st few kids, haha! We just celebrated my baby’s 1st birthday (she was born last August!) and we named her Isla (“i-la”). We love it and the most common response is “oh, that’s such a pretty name”. So, if you love it, great! If not…she’s our 5th(!) daughter…so you can also use:

my parents couldn’t agree on a girl’s name, so my paternal grandfather got to pick my name and i ended up a pamela. i don’t think i encountered another pam in school until junior high.
the special little one in my world is a katelyn. as a writer, i’m always having to come up with names for characters of all ages. some of my favorites have been sarah margaret, audrey grace, emma claire, charlotte grace, katherine elizabeth, jessica rose. back in the days when i thought babies would be part of my future world, i swore i’d name a girl emma leigh and if there were twins, they’d be gillian elizabeth and genevieve rose.

While working at my local newspaper, I had a customer named ‘Avinelle’. She was in her 80’s and quite pleasant. When I commented on how lovely I thought her name was, she replied that in her day it was as common as ‘Mary’. Although she and I disagree, I find it very unique and have always wished I could pass the name on.

My daughter’s name is Emerson. I loved it because it’s a real name, but not very common. Her middle name is Grace, I wanted something very feminine since Emerson could be a boy or girl. We call her Emmy, or Em.

I love the classic names for girls – but not the UBER recently-popular ones like Emily and Emma unless you want her last initial added to her name all the time. I am a fan of Mary, Beverly, and Joy
My hubby and I could not agree on a girl’s name either…so we used boys names…We have a Spencer Reed (Reed is Irish for red and we sooooo wanted her to have red hair). She is strong, independent and no one messes with her!
How about Sophia or Claire. My oldest is Gracie and my youngest is Sophia. They sound so great together, and so many people comment about how pretty the names are. Claire was our second choice for our Sophia.
Forgot to mention…Grace means “Gift of God” and Sophia means “Wisdom of God.”

Sorry if it was confusing. I changed the note so it’s clearer. I was trying to say that you could cook the meat in a slow cooker rather than on the stovetop in step 1 as an alternative method of cooking if desired. Hopefully that helps.

I would suggest going over to http://www.community.babycenter.com . You will have to create an account (which is great because they tell you what your little one will be learning week to week), and then go over to the baby names board (forum). They are quick to reply to offer suggestions.
If it were me I would give them a list of just “okay” names that you sort of like…they should be able to suggest many new names for you based on those names.

Cora it’s simple, old fashioned and pretty. It’s not too common. My daughter is Cora Elizabeth and she loves being the only one with that name. She’s a beautiful, strong and independent girl.

Yes! I totally think you could cook the meat initially in the slow cooker for 6-8 hours on low and then finish it off in the saucepan according to the directions.
