Easy Beef Burrito Skillet
This Easy Beef Burrito Skillet has beef, black beans, salsa, and tortillas all cooked in one skillet. The tortillas turn soft and almost like a dumpling. This tasty Mexican one-pan dish is done in less than 20 minutes and dishes are done in less than one!

EASY BEEF BURRITO SKILLET
Are you guys a fan of chicken and dumplings? Well, think of this as the Mexican version of that. This Easy Beef Burrito Skillet has all of your burrito fixings tossed together in one pan!
You know I love one-pan meals like this One-Pan Chicken Fajita Rice!
Start with taco seasoned meat and add your black beans, salsa, and some water. Make sure you use a salsa you love and if you’re making it for kids use a mild one.
Cut your 6-inch tortillas into 1-inch slices. Use a pizza cutter and you can even stack them up and do it in one step.
Stir the tortilla strips into the mixture. This is where the magic happens.
The tortillas soften and turn into wonderful dumpling like bites.
You’re almost done.
Sprinkle with cheese and let it melt.
Top with a good dollop of sour cream in the center and with green onions. Add some pico de gallo if you want.
When you serve it you can scoop a little sour cream from the center with each portion.

Easy Beef Burrito Skillet
Ingredients
- 1 lb ground beef
- 1 (1 oz) package Old El Paso taco seasoning
- 1 cup water
- 1 cup chunky salsa
- 1 (15 oz) can black beans, rinsed and drained
- 4 (6 inch) Old El Paso flour tortillas, sliced into 1-inch strips
- 1 cup shredded Mexican blend cheese
- 1/2 cup sour cream
- 1/4 cup sliced green onions
Instructions
- In a large skillet, brown beef until no longer pink. Drain. Add taco seasoning, water, salsa, and beans. Cook over medium heat for 3-5 minutes or until the sauce thickens. Reduce heat to low.
- Stir in the tortilla strips and then top with cheese. Remove skillet from heat and let cheese melt.
- Top with sour cream in the center and sprinkle with green onions. Serve immediately.

Great dish! This recipe usually lasts me for two nights’ dinner if I am making it by myself. It’s a great way to maximize my budget while still getting the calories I need. I also make it with 1-1.5tsp each of cholula and sriracha hot sauce.

Holy smokes this is good! I used pinto instead of black beans because I don’t do black beans anymore and I used ground Turkey because it’s cheaper than beef and this was such an easy, economical, delicious dish! The tortillas do taste like dumplings; they are just delightful! My picky 13 year old proclaimed it the best thing she’s ever eaten!

Very simple and fast recipe for a rushed night – basically soft shell tacos without the mess. I subbed corn for black beans and an undrained can of rotel for salsa based on what I hand on hand, and used ~2/3 cup water. I also used ground turkey vs beef due to dietary restrictions. It was on the bland side, but that’s my fault not the recipes’s since I used turkey. In my rush, I forgot to add the extra spices ground turkey always needs to be flavorful (I usually double all but salt). If you sub turkey – don’t make my mistake! I added Tajin and a little cayenne pepper after we dished up and that gave it some good zip.
Is there anything to sub for the Salsa or leave it out, my husband doesn’t like it
It adds flavor but you could leave it out.
I have recently started seasoning diced tomatoes or I will use a jar of pasta sauce when needing a substitute for salsa!

Really good dinner for any of those (like me) who have to accommodate picky husbands/kids. I topped it with Fritos corn chips to balance the texture. It also makes a great taco salad base if you want to leave out the tortilla strips!

So refried beans will change the consistency of the dish but it can be done.

I just made this tonight and wow! My son and I loved it! It was soooo easy to make, and I LOVE one-skillet meals. I didn’t have a packet of taco seasoning, so I just threw in about 2 T chili powder, 1 tsp onion salt, 1 tsp garlic powder and 1 tsp Tony Chachere’s (and I’m just guessing because I never measure anything). I think the sour cream and green onions were really the “icing on the top”. My son even commented how much he liked the green onions! 🙂 Thank you so much for your site and your delicious recipes! I didn’t have any whole black beans she. Used black refried and they worked fine! Just creamier!

Just going to be honest…i tried this and mine looked like dog scraps. I was a little worried because it wasn’t visually appealing. But it tastes heavenly! This is a favorite at my house. Even my 2 year old loves it!

I have found an amazing taco seasoning recipe online. I completely omit the salt. I have to watch my salt as well and was so happy when I found a delicious seasoning that I could control the salt content with. The tortillas are high in salt though.

The easy beef burrito skillet dinner was awesome. Supper good lots of Flavor. I used chicken taco mix added spaggetti sauce touch of sugar. Can of Rotel tomatoes. Has a bite hot flavor but good. If you like spicy this is good. Retried beans on the side.

Would it be possible to substitute refried beans for the black beans?
They have very different textures. I’m sure you could do it but it won’t taste the same.
Greetings from Mexico, Great little dish, though for me it took more like 15 min or so for the sauce to thicken, I suspect i may not have put enough meat in there but it was good non the less. If you having a hard time finding taco seasoning, you can put a tablespoon of Cumin, Salt and pepper to taste, some paprika and a little salted garlic powder and it will come out great.
Have you tried this with corn tortillas? I have some that don’t hold up very well so I’ve been using them for enchilada casseroles and such. Thanks!
