Fruit, Avocado, and Feta Salad Recipe

Isn’t it funny how we all kind of are known for certain dishes. In my group of friends we have one that always brings fruit, one a salad, another always brings a veggie tray or a cheese tray, and I usually bring a dessert because hello – dessert is fun. And most of the time my dessert has a slice cut out of it because hello – food blogger.

We have a new friend that moved here and it’s fun to see what kind of recipes she brings to the group, like this salad. She brought it to our church pig roast (don’t ask), and needless to say it was gone in minutes. I could lick the dressing off the plate. The balsamic dressing is Eve. Re. Thing.

Growing up we had the same salad almost every night. Romaine lettuce, cut up bell peppers, onion, and tomato served with Ranch. Like every night of my life. My mom was a creature of habit.

I’m the kind of salad eater that I eat everything in the salad but the lettuce. At the end of eating the salad I look down and think who put all this lettuce on my plate?

So the great thing about this salad is that it remind me of everything but the kitchen sink kind of salad. You can use any fruit, any nut, any cheese you want. It’s really about the balsamic dressing which is the perfect amount of sweet and tang. You could pour it on cardboard and it would taste good.

Fruit, Avocado, and Feta Salad

Salads are great because all measurements are approximate!
Prep Time: 10 minutes
Total Time: 10 minutes
Servings: 4

Ingredients

  • lettuce (I use half romaine, half spinach)
  • apple, peeled and diced, (about 1)
  • strawberries, sliced
  • avocado, diced
  • dried cranberries
  • sliced green onions
  • toasted sliced almonds
  • crumbled feta

Dressing: (makes around 1/2 cup)

  • 3 tablespoons fresh orange juice
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic
  • salt and pepper, (about 1/4 t. salt and fresh cracked pepper)

Instructions
 

  • For the salad: Arrange all ingredients in a bowl. Measurements are up to you and how much you like of everything.
  • For the dressing: Add all ingredients to a blender. Blend until smooth. Dressing can be made ahead of time and stored in the fridge. Toss salad with dressing right before serving to avoid sogginess.
